This was my second visit in three months. I fell in love immediately after having dinner here last Christmas. L’equateur is truly truly an incredible hidden gem in Tokyo. The food is just phenomenal and the wine pairing is of excellent choice. Fresh Firefly squid in foie gras sauce with bamboo root and Japanese vegetable called Kogomi. The foie gras taste works unexpectedly well with the squid. The kogomi and bamboo root not only added the refreshing vegetable flavour but their tissue structure also helped in improving the chewing texture of the dish. The dining experience at Florilege is theatrical. You sit at a monolithic u-shape counter running three sides of a huge open kitchen. I was lucky enough to be seated right across the centre of the stage, where I got to see Chef Kawate and his crew’s every performance, visually and sensationally. The foods are amazing, each course is uniquely designed and beautifully presented, every one of them leaves an impression. As an architect, I especially admire Chef Kawate’s respect of ingredients and his efforts towards sustainability. Every individual should play a part in making our world a better place. One thing I do regret is that I didn’t go with the Juice pairing because apparently I didn’t do my homework before I went. The main dish was roasted duck and was shared with every guest in the room. It was first shown to us in middle of the course before it was carved up. At the end, everyone was served with a slice of it topped with some sticky rice. Sustainability : Beef Beef carpaccio served with potato mash, parsley oil and vegetable consommé. Using 13-year-old breeder cattle from Miyazaki, the concept behind is admirable. General practice never use senior cattle meat as they are considered too tough and unusable for high end dining. However, Chef Kawate believes in sustainability and was able to elevate the tenderness and flavour and transform it into this delicious beef carpaccio and the consommé is yet another effort in sustainability as it was made from vegetable scraps. It’s fascinating to watch the chef skilfully deconstructing the fresh live crabs in front of you. He then started serving the limbs from sashimi to shabu shabu and grilled, from rare to done. Golden crab course Japanese golden crab is different from the golden crab that I used to have from the western countries. It is a natural cross between the matsuba crab and red snow crab and is considered a rare crab species.
