What’s on the menu this week? I’m definitely giving this divine pie another whirl before the cooler weather is gone for good. Recipe below 💛 Chicken + Leek Pie 💛 1 whole Chicken approx 1.8kg OR 1 BBQ chook (don’t add salt if using this!) 30 grams of butter 1 brown onion finely diced 1/4 teaspoon of salt 300gms washed sliced leek (2 small/1 large) 2 -3 garlic cloves 1 cup of salt reduced chicken stock 2 tablespoons of plain flour 1 tablespoon of Dijon mustard 1 loosely packed cup of parsley leaves 1/3 cup Parmesan 300 mls of thickened cream • Season chicken with salt and pepper. Drizzle with olive oil. Place in an oven preheated to 190 degrees for 1 hour. (180 if a fan oven) • Sauté the onion and salt in half of the butter until soft. Add the rest of the butter, the garlic and leek. Sauté for one minute before adding the stock. Pop a lid on and cook on medium for five minutes or until leek is soft • Sprinkle the flour over the leek mixture stirring quickly. This will help thicken the sauce. Add the mustard, cream, Parmesan and some pepper. Next add finely chopped parsley • Once the chicken is cooked ( allow for rest for 10 minutes once it’s out of the oven) remove the skin and shred the meat into the leek mix • Pop in a pie tin, top with a sheet of puff pastry and brush with lightly beaten egg. Bake at 200 for 35 minutes or till brown. We all fight over the pastry so I always cook a spare sheet or two on a separate tray to share at the table • The chicken can be roasted in advance and stored in the fridge. If I’m doing roast chook I often roast an extra one to have spare for lunches or a pie like this. Certainly saves time! • If you are not into pastry top with mashed potato or sweet potato. For sweet potato mash I pop whole unpeeled ones in the oven at 190/200 for about 1hr20. They steam inside their skins and make a delicious mash. Much less watery than when steamed or boiled • This pie freezes really well so make double and pop one away for later • I often add lightly steamed broccoli to the mixture to bulk up the veggies. Otherwise serve with peas, beans or a green salad.

If you have conifers in your garden and notice a few random dead branches, break one or two of them off (it will look better if you break them off anyway 😊) and have a look if you can see a borer hole in the middle of the branch. After doing some research, I'm still unsure of the exact name of the bug❓Some call it Conifer borer, others Cypress Bark Weevil/Beetle. But I do know they can really destroy a tree over time. The adult lays it's eggs under the branches and once the larvae emerge, they feed on the soft wood beneath the bark right in the middle of the branch, yummy! What I have found in my research is 2 interesting things! 1️⃣. You can try to kill the bugs by inserting wire down the affected branch and squishing them! 2️⃣. This one is the most interesting... If you have them, it's a sign you tree/trees are under stress. If your tree is healthy and has enough water and nutrients, the tree covers the bug in its natural resin as part of its defense. But if the tree is lacking nutrients and water, the larvae keep feeding and destroying your tree one branch at a time. So prevention is the key 🔑. Give your trees regular deep watering and supply them with mulch and fertiliser to give them nutrients and help retain the moisture. Hopefully you won't see these little buggers!!

Our Gold Dust Plant (Aucuba Japonica) lives in our lounge room and is great both indoors and outdoors. It's a hardy plant with dark green foliage and bright yellow speckles, hence the name. It's very drought tolerant and slow growing so great for people who forget to water their plants! 😄 Our house is quickly becoming an indoor jungle with over 25 plants! 😍

Happy to see our Jalapenos are growing well now. We didn't get a great chilli crop last year so we decided to leave them in. I gave them a small prune and an organic feed and here they are at the beginning of Spring making a comeback. Let's hope our Bangladeshi deadly hot chillies follow suit. We're very lucky to have many gorgeous gardens and lawns that we maintain regularly. The Wisteria at this property today looked amazing, my picture doesn't do it justice. 2 weeks ago there wasn't a flower in sight! Wisteria are perfect for arches, walkways, fences and porches. We also gave it and all the other plants a boost with Neutrog Rapid Raiser fertiliser @neutrogaustralia.
