Quick, easy, delicious 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 ▫️Spring Salad Mix ▫️Baby Spinach ▫️Roasted Veggies (deets below) ▫️Tahini Dressing (deets below) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Roasted Brussels Sprouts: ▫️12 oz bag Brussels Sprouts ▫️Avocado Oil ▫️Salt & Pepper ▫️Balsamic Vinaigrette ▫️Honey ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Roasted Cauliflower: ▫️1/4 Cauliflower Head ▫️Avocado Oil ▫️Salt & Pepper ▫️Seasonings - Onion Powder, Garlic Powder, Chili Powder, Cumin, Turmeric, Curry Powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Roasted Squash: ▫️1/2 Acorn Squash ▫️Avocado Oil ▫️Salt & Pepper ▫️Seasonings - Onion Powder, Garlic Powder, Chili Powder, Cumin ▫️Soy Sauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tahini Dressing: ▫️2 1/2 tbsp Tahini ▫️1 1/2 tsp Apple Cider Vinegar ▫️1 1/2 tsp Honey ▫️2 tsp Water ▫️Salt & Pepper ▫️Splash of Lime Juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 400*. Start off by prepping your veggies. Peel & dice half an acorn squash. Remove cauliflower florets from the head using your hands. In a parchment lined sheet pan, lay out the brussels sprouts, cauliflower, & squash. Sprinkle them with avocado oil, salt & pepper. Roasted Brussels Sprouts: drizzle both the balsamic vinaigrette & honey evenly. Roasted Cauliflower: sprinkle all the seasonings, to taste. Roasted Squash: sprinkle all the seasonings, to taste, as well as the soy sauce. Using your hands, mix each of the veggies so they are evenly coated. Pop them in the oven for 30 mins. OMG PROTEIN ✅⁣ ⁣ People always ask me how I get my protein if I eat a plant-based diet🥦 ➡️ it is a misconception that you can only get protein from animal products. This plant powered dinner I made was packed with #protein. I don’t normally count macros or calories but just for educational purposes, this meal had about 35 grams of protein! My boyfriend are more than me so he probably had over 50 grams of protein. Lunch bowl assembly - look how easy when everything is already pre-baked. I love baking a bunch of stuff in advance as “meal prep” and using them to construct easy bowls like these when I’m in a rush. Salmon was already pre-baked (miso salmon bought on good eggs) and covered it with lemon slices bc it was kind of fug. . BAKED everything at the same time at 400sh (in separate pans obv): - sweet potato & japenese sweet potato thin slices (no oil/spices) - peppers (after roasting, covered with ceran wrap for 10 min then removed skin and dress with olive oil + balsamic + salt) - mushrooms (sauce: oil + balsamic + soy sauce + garlic + salt) - chickpeas (rinsed / drained + lots of spices: cumin, paprika, cayenne, turmeric, garam masala . I had “massaged” kale with olive oil and salt before this video - this makes it softer and more enjoyable to eat. . NUTRITION: Lots of nutrients from all the diff veggies, protein from salmon (and a bit from chickpeas), fat from salon and olive oil, carbs from sweet potatoes / chickpeas. check check checkkkkk

It’s a new day. A fresh start with new opportunities. Did you take advantage of them today? 🌱 . I am ending this day with some greens, roasted delicata squash, roasted tofu and steamed cauliflower and kale. All high fiber and super yummy. Quite full now and looking forward to the extras I know get to play around with tomorrow. All recipes are listed below. 😊 . Cauliflower: Cur cauliflower into golf ball size pieces. Steam 10 minutes in a steam basket above boiling water. Season as desired. ✨ . Kale: Roughly chop kale into bite size pieces. Steam 5 minutes in a steam basket above boiling water. Season as desired. ✨ . Delicata Squash & Tofu: Make sure you press water out of tofu before beginning. Cut tofu into 1inch cubes. Cut squash in half and remove seeds. Cut squash into 1/2 inch thick strips. Toss both squash and tofu with 2 tbsp soy sauce, 1 tbsp nutritional yeast, 2 tsp hot sauce, 2 tsp dry basil, 2 tsp smoked paprika. Spread out coated squash and tofu on a baking sheet. Place in oven at 400F for about 15 to 20 minutes. 🌱 . Tips to make this meal fast. Steam your kale and cauliflower in the same basket. I also cooked the squash and tofu at the same time. 🤗

This fall festive dish may be one of the easiest meal to prep, so save this for your next prep sesh. // TO DO • I cut spaghetti squash in half, drizzled cut-side-up with olive oil and sea salt and baked at 400 degrees for 45 minutes. I tossed a whole bunch of chopped carrots, broccoli, zucchini, yellow squash, and sliced red onion with 1 tbsp each avocado oil, coconut aminos, and coconut vinegar (can swap for tamari or low sodium soy sauce and any cider vinegar), sea salt and cumin. I baked the veggies in a shallow glass baking dish at 400 degrees for 45 minutes (simultaneously with the squash). You’ll have extra veggies for the rest of the week! The Vegan Cilantro yogurt sauce recipe was posted yesterday. How to make Monday better >> these easy fall buddha bowls with garlic-tahini sauce 🌿🥕 (and maybe a glass of organic red wine). Recipe from the Loveleaf Fall Cleanse (link in profile for all the details!). Make it happen (makes 2 servings) 👊🏼: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ROAST THE VEGETABLES. Preheat the oven to 425 degrees F. Cut 1 red onion, 1 apple, and 1 medium sweet potato into wedges and add to a rimmed baking sheet. Toss with olive oil, salt, and pepper. Sprinkle 1 tablespoon (total) chopped rosemary and thyme over the onion, apple, and sweet potato. Roast for 25 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ MEANWHILE, MAKE THE SAUCE. To a small bowl, add 3 tablespoons tahini paste, juice from 1/2 a lemon, 1 minced garlic clove, and 2 tablespoons of warm water. Stir until well combined. Add more warm water, 1 tablespoon at a time, if necessary to reach a pourable consistency. Season with sea salt. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ PACK AND SERVE. For lunch tomorrow, add 1/3 cup pre-cooked wild rice to an air-tight container. Top with half of veggie mixture and drizzle with garlic-tahini sauce. Mexican bowl 🙌 The other day I was craving something spicy, healthy and delicious so I thought I could make some Mexican food. I made this buddha bowl using chopped tomatoes 🍅, brown rice, pinto beans, fresh parsley, corn and the most delicious hummus/ pesto made with 1 cup of cooked chickpeas, 1/2 cup of fresh basil 🌿,lemon juice, garlic powder, onion powder, salt and pepper. I got the recipe from @ninanelson and @randanelson .You can also add sriracha to make it spicy, I think it would be really good with tomato sauce as well😉. So how was your day? I think that one of the most important things we need to do to in order to feel good is to stay away from the victim mentality. Remember that you are the only one who is in control of your life, you are your own boss. Therefore you are the only one who is responsible for your actions and your attitude. Blaming yourself or other people is a waste of time and energy, it will not help you to move forward.
