Plant-based Caesar Salad 🍃it may not look the prettiest despite my best styling attempts, but this was so delicious. Fresh cos, toms, green olives and toasted sourdough coated liberally in olive oil and crushed garlic. The dressing was a blend of soaked cashews with olive oil, apple cider, onion powder, dulse and karengo, mustard and a few other things. Will deff be posting on the blog at some point as it was quick, satisfying and YUM. The sourdough was for my man - sadly not something I can eat as it aggravates autoimmune symptoms. ya uh so i'm sorry for being dead on this account but today was an interesting day to say the least. got up and walked to the starbucks across campus to get some light exercise in before i took my psych final. got my walk done and starbucks in hand when i was sitting outside the classroom, didn't recognize anyone there from my class, checked the syllabus, and realized my final is tomorrow and not today!!!! nice. then i walked over to the house and studied chem for literally 8 hours😵couldn't have gotten thru it all without this brain food: salad + blackened chicken + melon + pasta salad. tbh i didn't rly eat the pasta bc the sauce was too heavy and i HATE olives and there were so many!!! buuuu i had a 🍌 for a snack later and lasagna for dinner (peep my story) so today was a goood day. alright gtg get some rest hopefully ill have time to post tomorrow when i'm not writing electron configurations #rip

It’s #nationalcocoaday 🎉 I actually did my thesis over cocoa powder a couple years ago🤓. Did you know it’s a great source or fiber and minerals like magnesium? It is one of the highest sources of antioxidants and can actually decrease risk of cardiovascular and some cancers. "Master my headstand". This was on my goal sheet for what feels like eternity. 😅🤷🏻‍♀️ A year ago, I remember being in a hot yoga class and watching a fellow yogi get into her headstand. I remembered being SO amazed and awe stuck because I thought it was something that I could NEVER achieve. But yoga taught me that there are no limits to what I can do. It's a matter of being brave, consistent and determined. And most importantly it's about showing up every time and practicing. And now, I’m proud to say that I actually got my headstand down 🤤🙏🏻 • Now, this brings me back to goal setting. Without having the intention of wanting to get my headstand. I'd never be able to do it. So write your goals down, get to work and watch them come true 🙂 • I have a new post on my blog on how I implement, review and schedule my goals. In honour of #chanukah tonight and @tastetorontolight takeover, I decided to experiment in the kitchen and make grain free sweet potato zucchini and they were 💯! did I mention they all have no flour, no oil and aren’t deep fried! my husband even said this was the best dinner I’ve ever made (and he’s the biggest food critic 😜). Highly, highly recommend you makes these delicious ☁️ 🍪.. that’s a pillowy cookie in case you were wondering 😜 To stand mixer add: 1/3 cup melted coconut oil 🥥, 1 tsp baking soda, 2 cups arrowroot flour, dash of pink salt, 1/2 cup cashew butter, 1/2 cup natural peanut butter, 1 cup maple syrup and 1 tsp vanilla extract. Mix until batter is fluffy! Scoop out dough and bake on a prepared baking sheet, lined with a #silpat if you have (if not, use parchment paper). Bake at 350 for 20 minutes. Watch that they don’t burn 🔥 but make sure you give them enough time to cook through (mine needed 20 mins). Well I was about 5 minutes from calling for delivery pizza, but Catherine @cheeseandcardio reminded me that I have Christmas events this week and I need to stay on track this week (and this awesome community via msgs) talked me down so I made pizzas at home. I’ve been so stressed today with work, that I was making an excuse for myself to go over my dailies. As we are nearing the end of 2017, I’ve been spending a lot of time reflecting back on what a year it’s been. I found out I had Celiac disease on January 3rd of this year and, as you can imagine, wasn’t too thrilled about it. In the beginning I was frustrated, sad, and feeling pretty lost. Little did I know that it would bring so many positives into my life this year: 1) I was forced to take a closer look at how I was treating my body...both physically and mentally. I now have a completely different outlook on food, sleep, stress, and just an overall better appreciation for good health & life in general. 2) I’ve been able to connect with so many people that I probably wouldn’t have otherwise spoken to or had the chance to meet. When I decided to step outside of my comfort zone and share my story/start my blog, I never expected to hear from so many people who could relate or benefit in some way. It’s been great to reconnect and form new relationships with people I now talk to on a daily basis! 3) My # 1 favorite thing about this year… I found my passion. I never really felt like I had a “hobby” or something I loved doing outside of everyday #momlife (which is still my # 1 priority and passion of course...but sometimes it’s nice to have something to call your own amongst the craziness 😊) and I can honestly say I feel fulfilled. I still have a TON to learn when it comes to the technical aspects of blogging and a lot of growing to do, but I know this will come with time. I am excited for what 2018 has in store, and I am so thankful that 2017 happened. As the old saying goes... when life hands you lemons, make lemonade. (just make sure it’s refined sugar-free 😜)
