To prevent the transfer of bacteria from one foodstuff to another, it’s best to keep salad and vegetables on a different shelf or in a separate salad crisper, if your fridge has more than one.

Welcome to our new recipe series #nydchefstable! On Fridays we will be sharing recipes from some of the talented chefs we work with. To kick us off, we have @GeorgeBarson and @emrahs_insta of @corapearlcg with a delicious recipe for COURGETTES, BLACK GARLIC AND TICKLEMORE. Give it a go! - - - Serves 4-6 For The Puree 4 courgettes 1 clove of garlic, peeled and chopped 1 large bunch basil Sea salt Finely chop the courgettes then cook gently in a little vegetable oil with the garlic until soft and any liquid has evaporated. Place in a food processor with the basil and blend until smooth. Pass through a fine sieve and season to taste. Black Garlic Vinaigrette 50g black garlic, peeled 15g Dijon mustard 50g Chardonnay vinegar 200g extra virgin rapeseed oil Sea salt Blend everything together in a food processor and season to taste. For The Courgettes 6 courgettes, mixed colours Sea salt Cut the courgettes in half lengthways then score criss-crosses across them. Season them with salt and rub with a little vegetable oil. Cook them on a hot wood grill, turning regularly, until golden and soft. (Can be roasted in a hot oven instead). Once cooked, cut each courgette into a few big chunks and dress generously with the black garlic vinaigrette. To Plate 1 raw courgette, thinly sliced on a mandolin 250g Ticklemore cheese Warm the puree and place a generous dollop in the middle of each plate, spreading slightly. Arrange the roasted courgette pieces on top, followed by some slices of the raw courgette. Dress with the remaining black garlic vinaigrette, then finish with thin slices of the Ticklemore.

Mitey mighty Mimolette - Also known as “Boule de Lille”, Mimolette was originally matured in the cellars of the town of Lille in northern France. The method of production of this cheese is very similar to the Dutch cheese Edam and is said to have originated in Holland. When French minister Colbert forbade the import of foreign goods in the 17th Century, the French started making the cheese themselves and Mimolette was born. The Cesar Losfeld Mimolette is matured by the affinuers “Cesar Losfeld” who are a family business maturing cheese in Roubais, North-Calais, since 1871. . As Mimolette matures the natural rind becomes dusty & covered in little craters from cheese mites that are actually encouraged to assist in the development of the rind (normally cheese mites are unwelcomed on the surface of cheeses). Annatto (a natural food dye) is used to give the cheese its orange colour which, with its pock-marked rind, makes it resembled a rock melon. . Mimolette is one of the few cheeses that the French enjoy as an aperitif, rather than after a meal. .
