This week's #nydchefstable comes from chef @adamglo at The Woolpack Inn in beautiful Slad, Gloucestershire. Adam shares his seasonal recipe for ROAST BEETROOT, BREFU BACH, & COBNUTS. "A very simple recipe for you here but one where the ingredients, as often said, speak for themselves. We think the earthiness of the beetroot works well with the grassy Cheese, and the Kentish cobnuts, which are in season now until the end of October seemed to be an appropriate seasonal addition." - - - Serves 3 - 4 Ingredients: 1 x Brefu Bach (best left out at room temperature overnight in this case) 5 x beetroots 80g Kentish cobnuts 3 tbsp Good olive oil 2 tbsp lemon juice Smoked Maldon salt Black pepper A scattering of bitter leaves Pre-heat the oven to 200c Wrap each beetroot whole and unpeeled in tinfoil and roast them for 50-60 mins. They should still feel quite firm when you take them out then leave to cool still wrapped in their foil. Shell the cobnuts and toast them in the same oven for 10 minutes or so. You can give them a shake pressed between two mixing bowls if you want to shed some of the brown skin once they’re out. Once the beetroots have cooled enough to touch, rub the tinfoil around them in your hands and squeeze the beetroot out of its tinfoil jacket, hopefully a perfectly peeled beetroot should pop out then cut it into wedges. Whisk the olive oil and lemon juice together with a pinch of the smoked maldon and a grind of black pepper then dress the beetroots. Leaving it long enough for the salt to draw out some of the beetroots juice and the flavours to get to know each other. Roughly break up the cheese and position chunks of it on each plate, let the dressed beetroot segments fall around it, drizzling the lemony beetroot dressing all around as you go. Toss on some the toasted cobnuts and some crisp bitter leaves. Better still little beetroot leaves your beetroot may have come with.

After maturation in a small room next to the dairy for a minimum of two months, the smooth paste becomes interspersed with blue veins and develops a slightly flakey texture, with complex savoury flavours and a distinctly sweet finish. It is a relatively mild blue which should appeal to blue connoisseurs and new-comers alike. . This buffalo milk blue is the first of its kind in Australia and one of only a few made in the world. Cheese maker Barry Charlton collects fresh milk from the Sunrise Plains Farm, near Sale in Gippsland, which milks a modest herd of just forty-one Riverine water buffalo. Berrys Creek Gourmet Cheese was set up by Barry and his partner Cheryl Hulls in 2007. They specialise in making blue cheeses and are the only Australian producer to have made blue cheese from the milk of cows, sheep, goats and buffalo.
