BALANCE....whether its work, school, chillin’ with friends or family time it’s something I’ve heavily struggled with recently. I took on more than what just one person could handle and it wasn’t doing me or the people around me any good. Anyone else been there?🙋‍♀️ . It got the point where I was physically feeling overwhelmed which was where I drew the line and knew I needed to take a step back and focus on the important things like my own well being and the goals I set when I went back to school . I always find myself wanting to do ALL THE THINGS but I am constantly learning how to better allocate my time towards the work & people that are important. Ingredients: Chickpea Apple Red onion Spinach Tomato Red bell pepper Cucumber Salad . Cashew Lemon juice Salt Pepper Garlic . Instructions: First step is to activate your chickpeas in water for at least 24 hours or to cook them. For the creamy sauce blend cashews, lemon juice, salt, pepper and garlic in a mixer and set it aside. Dice your, tomato, red bell pepper, apple and cucumber. Also slice your red onion and spinach. Combine the chickpeas with the vegetables, sauce and serve them on a bed of salad leaves in a bowl.

Margs and I always stock up on @eatbanza because it is a great pasta alternative (made from chickpeas) and so easy to make and incorporate into meals. We usually order straight from banza website or @thrivemkt 💯 made banza with sautéed kale + @bilinskisausage chicken sausage (my favorite brand). The banza is tossed in a beet pesto and topped with some of our green dressing (thx to margs for being the sauce queen). We try to sneak in veggies anywhere we can 🙄 I’ll post the beet pesto and green dressing recipes in the comments below! #realfood #eatbanza

Se trata de un Bowl 🌼 a base de Garbanzos Tostados, arroz integral, berenjena al ajillo, zanahoria en julianas y 🥑 Aguacate con semillas de ajonjolí negro. Las proteínas en este plato las encuentran en los garbanzos, las berenjenas y el arroz integral en diferentes porcentajes 💪. . . Para hacer la berenjena 🍆, la cortan en cuadritos y la ponen a remojar en agua con sal durante mínimo 10 minutos.🍆 Esto les permitirá retirar el amargo de este alimento.🍆 Posterior a este procedimiento, secan las berenjenas con una servilleta y preparan una cacerola dónde van a adicionar ajo, sal, pimienta y aceite de oliva, y van a dorar las berenjenas por mínimo 8-10 minutos.🍆 . . *Leche de Almendras* . . Esta receta usualmente la hago cuando no tengo tiempo de acercarme al mercado saludable y conseguir la marca de leche de almendras que generalmente me gusta comprar. Y es que si se fijan en la etiqueta la gran mayoría de leche de almendras que hay en el mercado tienen un alto contenido de azúcar, preservativos y otros componentes que restan alcalinidad a nuestra dieta diaria. . . Si tienen un puñado de almendras en la despensa, no duden en hacer su propia leche de almendras casera. Van a necesitar: ⏺️1 taza de leche de almendras remojada desde la noche anterior ⏺️3 tazas de agua ⏺️1 🥄 pequeña de canela ⏺️1 🥄 pequeña de panela orgánica ⏺️1 pizca de sal marina ⏺️1 licuadora a procesador y un colador . . Instrucciones: 1️⃣ Desechar el agua en que se remojaron las almendras. 2️⃣ Licuar todos los ingredientes ya mencionados hasta que quede completamente líquido. 3️⃣Colar con una tela de panadería o colador la almendra restante (con esta harina se pueden hacer Pancakes o waffles). Es la que aparece en el pocillo pequeño. 4️⃣Envasar en un recipiente de vidrio y a la nevera. Dura aproximadamente 2 semanas. . . Para más información ver las historias destacadas! . . En esta ocasión les presento un Bowl de champiñones salteados al ajillo, quinoa cocida, brócoli cocido, Kale con limón, y batatas dulces en rodajas y cocidas por 5 minutos y posteriormente horneadas (con ají, sal y aceite de oliva por 25 minutos más). . .
