How many more ✌🏻 selfies can I post before you guys officially hate me😆Jk don’t answer that. Because the facial expression is clearly an issue as well. I mean if you know anyone more awkward than me I’d be surprised 🥴 BUT ANYWAY. I ran to the gym this morning. 2.5 miles there + the regular daily workout. Which shouldn’t really be a big deal except that you guys know how I feel about running and I CHOSE to do it today. When I first started working out years ago, all I wanted to do was run a mile. Just one. One mile without stopping. That was my only goal, and it took a lot of work to finally accomplish it. But I did. And now I can run a couple miles without even dying. And this isn’t me asking for a pat on the back. This is me telling you that we can do hard things! This is me telling you that it gets better. You get stronger. You get faster. You get closer to your goal. Just because you’re not where you want to be now doesn’t mean you can’t get there. It doesn’t matter how long it takes and it doesn’t matter how fast you go, what matters is that you go! Don’t quit. Keep working.

AirFryer! For lunch today I used the AirFryer to cook some Atlantic Salmon. I served it with quinoa, steamed green beans and cherry tomatoes for a balanced nutritious lunch. This was a new to us meal option- I was slightly weirded out to turn ground beef into an Asian inspired meal- but my husband and I agreed it was actually good. (Kids ate it as well.). The Monday blues 😴 got me real good today so I thought I would spice the night up with some of my favorite {store bought} Pesto 🌿 and pair it with Salmon 🐟 …this is offish giving me 🙌🏼 life! It is so beyond easy to make…honestly….one of my mottos whenever cooking is to just keep it simple….why over complicate dinner, especially after a long day? Basil 🌿 Pesto 🐟 Salmon: Ingredients: 1lb salmon Pesto Salt to taste Parm Recipe: Preheat oven to 425. Clean and dry salmon. Once dried, place salmon into an oiled baking dish or pyrex. **Oil with olive oil Sprinkle salt on top of salmon and then generously spoon the pesto on top of the fish. Smooth the pesto so its a few centimeters (what am I a mathematician 👩🏻‍🔬?) thick on top of the fish. Optional: Sprinkle some of that good good parm 🧀 on top. Bake for 15-18 minutes (*depends on thickness). Did you blink and it was done too? Yea….ok, get it boos! Tonight I went with my daughter to Cyclebar. The weather was wet out and the ride was Taylor Swift/ Maroon5. It was a great bonding opportunity!!😁 I whipped up a quick dinner as soon as we got home. Mix the first 5 ingredients then combine the dressing and toss everything together🤗 . 16 ounces coleslaw mix 1 cup sunflower seeds 1 cup sliced almonds 3 ounces ramen 5 stalks scallions 3/4 cup avocado oil 1/3 cup white vinegar 1/2 cup stevia . Cruciferous vegetables like cabbage (in coleslaw mix!) contain many different antioxidants that have been shown to reduce chronic inflammation . Super simple shrimp fried rice 🌱 The details 👇🏻 •Heat a pan on medium heat with coconut oil - then sauté diced onion & garlic. •Once the onions are translucent, add in chopped broccoli, carrots, celery & prawns. •Season w/ onion powder, salt, pepper & thyme. •Add 1-2 tbsp of soy sauce & lemon juice. •Cook one package of @eatbanza chickpea rice as per directions on package. •Drain the rice & toss in avocado oil, salt n pepper. •Add rice to the veggies & prawns. •Crack 3 eggs into the pan & mix until cooked & combined. ... & Dinner is served 😋 🙅‍♀️I’m not a big rice eater .. or any type of grain eater for that matter. My tummy just does not like grains (even if they have been soaked & sprouted). This chickpea rice is super high in fiber & protein. So hopefully this is a more gut friendly alternative 🌱

This salad is super easy to throw together and if you don’t feel like making my Lemon Basil dressing then you could easily use Trader Joe’s Green Goddess dressing or balsamic vinegar instead! . Broccoli slaw or mixed greens, watermelon, strawberries, avocado and feta cheese (omit if paleo or whole30) you could also add TJs honey roasted almonds for some crunch! DRESSING // 4 oz avocado oil, 2 oz fresh squeezed lemon juice, 1 oz rice vinegar, some lemon zest, 1 cup fresh basil, 1 tbsp of honey or 2 pitted dates. Dinner tonight was beef bulgogi with sweet potato glass noodles, lots of shredded raw carrots, pickled cucumber, topped with green onions and sriracha crema. Typically it would be served with rice, but I would rather have noodles 😍 Totally amazing and is definitely going to be in heavy rotation.
