AGNELLO GRATINATO CON PISELLI. RICETTA PER 4 PERSONE FOTO 2: tritate una cipolla e fatela rosolare con poco olio. Poi Prendete 350g di piselli e cuoceteli aggiungendo all'occorrenza del brodo vegetale precedentemente preparato. FOTO 3: prendete 1 kg di agnello (meglio se spalla o costolette), e togliete il grasso in eccesso. Poi in una pentola larga fate rosolare con poco olio una cipolla tritata e poi aggiungete l'agnello e fatelo rosolare. Poi versare un bicchiere di vino rosso e, coprendo la pentola con un coperchio, fate cuocere a fiamma dolce per 10 minuti. FOTO 4: prendete 150 g di mollica di pane sbriciolata. Ad essa aggiungete 60 g di pangrattato, 40 di pecorino grattugiato, 40 di parmigiano grattugiato, aglio tritato e prezzemolo e mischiate il tutto. Poi versate l'agnello dentro una padella o pirofila capiente che vada anche in forno. Una versato l'agnello, versate sopra il suo liquido di cottura. Sopra mettere i piselli e cospargere il tutto con la panatura e mettere sopra il brodo rimasto. Mettere questa pirofila sul fuoco moderato con un coperchio per 10 minuti. FOTO 5: mettere in forno a 200 gradi per venti minuti, o finché si è formata la crosta in superficie.
