Meatballs with Celery root. This is the favorite dish of my mother-in- law and most of my friends who already had a chance to taste it in my house. I don't know how my mother-in-law learned to cook this meatballs: in fact, Turkey's food culture is very rich and every region or area has own food specifics. When you are eating somewhere something, you can even understand from which region the chief came. Because, every region has own specific touches and vegetables's recipes. So, the fabulous meatballs are not belong to the region where my mother-in-law was born (and actually, I never meet or hear from someone about this dish). Whatever, the process of preparing and cooking is very simple and look as any meatballs. The one big difference is the grated celery root is added to the mince. I assume, the big secret of these meatballs is a juice of celery that processed into the pieces of meat and gives very aromatic taste and makes these dish very delicious. The recipe is below: ฤฐngredients For meatballs: 1. 1 kg mince, 1 middle onion, 1 big grated celery root, 1 egg, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 4 soup spoons of dry mint, 2 cloves of garlic. For sauce: 3 lt water, 3 big grated tomatos, salt, 1/2 lemon water, 1/2 teaspoon of sugar, 2 cloves of garlic, 3 bay leaves. Directions: 1. Mix all ingredients for meatballs and put to refrigerator for at least 30 min. Then, make small cutlets. From 1 kg of mince, I make approx.90 cutlets. My favorite shape of cutlets for this dish is oval, but you can do any shape that you prefer. 2. At the big pot, drop a little olive oil and fry garlic only for processing an aroma to the oil and then remove them. Add tomato, slowly mix until the juice will evaporate and then add the water. When water is boiled, add the salt, sugar, bay leaves, lemon juice and start to throw into the water the cutlets one by one. Cook a 10-15 minutes. It is ready! Serve a dish with fresh celery leaves and fresh mint. Stuffed Artichoke Hearts in Turkish style - very simple and incredible delicious. Recipe: For artichoke's hearts needs 3/4 part of middle size of onion, 1/2 lemon juice and 1 slice of fresh orange, 1 lt water. For stuffing: 1 carrot (middle size), 1/4 part of onion, 1/2 cup of pea, olive oil, 1 clove of garlic. 1.At the pot, boil 1 lt water and put the artichoke's hearts, lemon juice, limon peel, 1 slice of orange and an onion that cut on big parts. Cook them approx. 30 minutes and then put 1 desertspoon of sugar and a salt. Cook 5-7 min more. It has been already cooked. 2. On the other hand, cut the carrot and an onion on a small parts. At the pan, put a olive oil and when it become hot, step by step fry the parts of onion, garlic, carrots. Then put pea and 5 soup spoons of water from the pot, where artichoke's hearts were cooked. Put a little salt and a sugar. Cook until pea will be ready. For servicing: Take the artichoke hearts on a plate. The concave side should be up. Put on it the stuffing of carrot and peas and drop a little olive oil. Then put a cut fresh dill. Hold in refrigerator at least 1 hour for to be a ready.
