Quick mid week meal asparagus stir fry. This is a super quick stir fry which was perfect with the roti. Do you see the gorgeous color of the asparagus and long pieces of this coconut? The asparagus was super juicy, delicious and the coconut and friend moong daal added a nice texture to the stir fry. Recipe - 1 bunch of asparagus cleaned and chopped 1 onion chopped 1/2 tablespoon whole white moong daal Tempering ingredients Coconut oil Coconut pieces 1/2 lemon juice Salt 1 teaspoon ground pepper Heat oil and add the moong daal and fry followed by tempering ingredients. Add onions saute for 1-2 minutes. Add the chopped asparagus , salt and mix well. Cook for 6-7 minutes and add the coconut pieces. Add the pepper , coconut and stir for a minute and turn off the stove. Squeeze the lemon juice and enjoy with rotis or make a sandwich for lunch box. Dinner 🍽 baked cod Quinoa made with chicken broth, diced carrots, shallots, garlic and broccoli. Apples because I needed something sweet. An 8oz serving of cod has 41g protein. A 1 cup serving of quinoa has 8g protein, somewhat high in carbs but it will fuel my arm day workout in the morning. Kinda boring meal but it tasted pretty good. One pot meal! This easily serves 4 unless like me you have someone who is muscle building at home..... No names! Easy to makes just cut the whole chicken all the way through the backbone and split with peri peri sauce on top, sea salt and pepper and cook in the oven for 60mins on 180. In the mean time prep the veg and chill out! 3 small red onions 3 carrots 10 plum cherry tomatoes 2 large Handfulls of small halved potatoes After the 60mins add the veg to the tray and cook for around another 30mins Then serve, I like to fry a little cabbage in a pan with garlic and a drizzle of olive oil and then top with sesame and pumpkin seeds! Looking for a healthy treat, or dessert???? Here it is, Strawberry shortcake with coconut yogurt😋 Thanks to @medicalmedium for sharing the recipe 2 1/2 cups almond flour 1 cup tapioca flour 2 tsp baking powder 1/4 cup solid coconut oil 1/2 cup almond milk 1tsp vanilla extract 2tbsp maple syrup or raw honey Filling with coconut yogurt, honey and strawberries. Preheat oven 400F Place the flours and baking powder in a bowl, mix. Cut the coconut oil into small pieces and place in the flour mix. Mix until resembles breadcrumbs. In another bowl, combine the almond milk, vanilla and maple or honey. Add all of this ti the flour mix. Mix well, flour a surface and roll out the dough until 1 cm thick. Use cookie cutter, place on a baking sheet and bake por 12/15 min. Assemble the shortcakes by placing one cookie, yogurt and strawberries , on top another cookie and repeat with coconut yogurt and strawberries again. Buscas un postre o merienda sana??? Aqui lo tienes, galletas de almendra con yogurt de coco y fresas. La receta es de @medicalmedium Calentar el horno a 200C, mezclar las harinas con la levadura y el aceite de coco. Mezclar bien, quedará como con grumos. Ańadir el resto de ingredientes y amasar bien. Con un rodillo, extender la mass sobre papel de hornear hasta que tenga un grosor de 1 cm. Cortar las galletas en forma circular. Hornearlas durante 12/15 min.
