HEARTY QUINOA BOWL ------> β€’ πŸ₯™ This is an easy meal that you can customize with whatever veggies you like, and it's perfect for the cooler fall & winter months. ❄️ β€’ πŸ₯™ Quinoa: I like to get mine from Costco because 1. It's a great deal of course and 2. It comes already rinsed. I know it's realllly simple to just rinse your quinoa before cooking it, but that step feels like a lot of effort for some reason. πŸ€·β€β™€οΈ Cook your quinoa according to directions on the package. If you want to make it extra flavorful, cook it in veggie or chicken broth instead of plain water. For 2 servings of quinoa I used 1 tsp @betterthanbouillon vegetable base and it added such a nice flavor! β€’ πŸ₯™ Roasted sweet potatoes: For 2 servings I used 1 sweet potato. Wash, then cut in half lengthwise. Cut each half in half lengthwise again, then chop into smaller pieces and spread on a baking sheet. Drizzle 1 tbsp oil (I used πŸ₯‘ oil) over them, along with a sprinkle of salt & pepper. Mix up with your hands to make sure everything gets coated. ☝️Tip for easy cleanup: Cover your baking sheet with parchment paper so nothing gets stuck. Bake at 400 for 20 min, tossing with a spatula halfway through. β€’ πŸ₯™ Roasted broccoli: I used frozen πŸ₯¦ and it turned out great so now I'm all about it. Take your frozen broccoli & spread it out on a baking sheet. I used the same one as the sweet potatoes & roasted everything together. Drizzle w/ 2 tsp oil & garlic salt, and mix around with your hands to cover it all in seasoning. Bake at 400 for 20 minutes, tossing with a spatula halfway through. β€’ πŸ₯™ Once everything is done, put it all in a bowl, top with a little Bragg's Liquid Aminos and enjoy!

Have a good evening guys ❀️ . . @traderjoes cauliflower gnocchi (Drizzle a bit of @primalkitchenfoods avocado oil on a pan, I use @tfalusa nonstick sapphire pan, then cook gnocchi on medium to high heat for 1-2 minutes or until crispy. Add a few tablespoons of water, cover with a lid and cook 6-8 minutes. Once done cooking, toss in a little pesto (recipe a few posts back), nutritional yeast + pepper. Serve with wild seared scallops and shrimp seasoned with @primalpalate garlic & herb seasoning, chili pepper + freshly squeezed lemon. Pair with steamed broccoli and sauteed baby Bella. Enjoy!

Crockpot roast, potatoes, carrots, beans, and gravy 😍 I LOVE the Crock-Pot, this is essentially a one pot meal (minus the green beans), takes no effort past chopping a few things, and turns out deliciously tender every time. I literally don't understand how people could dislike crockpots? _____________ Easiest and laziest way to cook: πŸ‘‰ Put layer of potatoes, carrots, and onions on bottom of pot. Set roast on top. Add 2 cups water and 4 bayleaves. Sprinkle salt, pepper, onion powder, garlic powder, oregano, and rosemary on top of roast. Turn on high cook 4 hours. Take roast out when done, mix cornstarch and water and add to juice in pot. Mix ingredients, knead dough, form into key lime sized balls and flatten with a fork while frying. Simple and so yummy. They were so good I had to make a second batch.
