Add onions and season with salt, pepper, and thyme. Reduce heat to medium-low and cook, stirring occasionally until onions are caramelized and jammy, about 25 minutes. Stir in garlic and cook until fragrant, about 1 minute. Turn off heat and remove onion mixture. Wipe skillet clean. In a large bowl, season chicken with salt, pepper and oregano, then toss with flour. Heat remaining oil in the same skillet over medium high heat. Add chicken and cook until golden on all sides and mostly cooked through, about 8 minutes. Add beef broth and return cooked onions to skillet. Bring mixture to a boil, then then educe heat and simmer until chicken is cooked through and beef broth reduces slightly, about 10 more minutes. Add Gruyère and cover skillet with a lid. Cook until cheese is melty, about 2 minutes. Remove from heat and garnish with parsley. Cut Corn Tortillas into 4 triangle slices. Lay them out on an uncreased cookie sheet and spray lightly with Pam Oil Spray. Sprinkle lightly with kosher salt, no more than 1 tspn for the whole batch, and parmesan cheese. Bake for 10 - 15 minutes, until the edges have browned. let them rest on the baking sheet for 2-3 minutes. Baked Blueberry Zucchini Donuts with White Chocolate Drizzle 😍😍😍 Seriously you do not want to miss out on these! Buy yourself a donut baking pan and try our favorite donut recipe! INGREDIENTS •1 1/2 cups of whole wheat pastry flour •1 1/2 teaspoons baking powder •1/2 tsp salt •1 cup grated zucchini unpeeled, squeezed of all moisture •1 egg •1/4 cup maple syrup (honey will also work) •1/2 teaspoons almond extract •2 tablespoons coconut oil or avocado oil •1/2 cup unsweetened vanilla almond milk (any milk will work) •3/4 cup fresh or frozen blueberries For the white chocolate glaze (OPTIONAL) •2 oz high-quality white chocolate bar •1 teaspoon coconut oil INSTRUCTIONS Preheat oven to 350°F. Generously spray a donut pan with nonstick cooking spray. In a large bowl, combine flour, baking powder and salt; stir well with a whisk. In a separate bowl mix together all wet ingredients: grated zucchini, egg, maple syrup, almond extract, coconut oil and almond milk. Combine wet ingredients with dry ingredients mix until just combined. Fold in blueberries. Spoon the batter into donut pan, filling almost to the top. Bake at 350 for about 13-17 minutes or until wooden toothpick inserted in the center comes out clean. Turn donuts on a wire rack and cool completely. To make the white chocolate drizzle: Place a saucepan over low heat and add in white chocolate and coconut oil. You could also melt in microwave. Stir until melted then remove from heat and drizzle on donuts.

Tofu for breakfast??! 😱 • • • Did you know that a more plant-based diet may help with Chronic Kidney Disease? This low sodium, plant-based meal is a tasty breakfast or brunch alternative, and incorporates lower potassium veggies for those who are concerned about their potassium intake! • • • Tofu Scramble (serves 2) 1/2 block extra firm tofu (7 oz) 1/2 tsp each cumin, oregano, garlic powder 1 tsp chili powder 1/4 c water 1-2 Tbsp lime juice 1/4 onion 1 bell pepper 1 Tbsp oil • • • Wrap tofu in paper towels and press with heavy object for about an hour. Combine spices with water and lime juice in a medium bowl and set aside. Once tofu has been pressed, crumble into the bowl with the spices and toss to combine. In a pan, sauté onion and bell pepper in oil over medium heat. Once softened, move veggies over to one side of the pan and add tofu. Stir tofu occasionally until heated through, then mix with the veggies. Serve with toast!

Lunch today! Quinoa and veggies😋 Its even better with chicken curry on top.😉 . Winter is a great time to eat your veggies, but I struggle with digesting raw vegggies in colder months. I tend to focus on soups and stews mostly, but wanted a change of pace. Creation of my quiona bowl/fried rice love child commenced! . Quiona cooked in mushroom broth, fresh carrots, onion and celery chopped and sautéed in butter or coconut oil, with pre-cut, frozen green, yellow & red bell peppers, 2 cloves fresh garlic (pressed/minced) and frozen green beans added once carrots soften. Seasoned with Himalayan salt, pepper, garlic powder, onion powder. Added a bit of mushroom broth once veggies are mostly tender and let simmer for a few minutes, letting flavors blend. Voila! It can be hard to eat fresh food With a baby, so i have become the queen of leftovers and repurposing the same food into multiple meals...that way i only have to spend time cooking once and i can eat for days! Less time cooking = more time for baby ! WHAT A WEEK! 😜 Lots of snow in Kansas City, downed tree limbs, and a short power outage. . I would like to say that all of that did not negatively influence my renewal to a healthier lifestyle, BUT there is something about cold and snowy ❄️ weather that elevates by comfort food desires. . Before the snow hit I posted that we were going to give one of the many meal prep delivery services a try last weekend. (Great timing with the delivery the day before the storm) I promised to give some feedback and over all I would give it a thumbs up 👍. . ✅ Fresh Meat & Produce ✅ Simple Directions ✅ Tasty 😋 ✅ Convenient . The photos show a selection that is not gluten & dairy free but I am kind of a pasta snob so I wanted to really put them to the test. We enjoyed everything we selected and outside of the pasta each recipe would be pretty easy to modify for any restrictions you might have. . . I am continuing to research other services to find one with more options that are gluten & dairy free. The right delivery service and daily shakes would make clean eating a breeze for ANY BUSY PERSON!!! . A late one tonight as I went to a combat class with some mummy friends! Luckily my earlier @eatvive bar kept me energised! - This plant based dinner was and @aldiuk sweet potato burger ~ sweet red cabbage ~ roasted carrot ~ greens and a dollop of hummus!! - The boy and I had a very chilled afternoon in the house for a bit of a change so I managed to get some food prep done! I made this yummy wintery cabbage using cinnamon and @thegroovyfoodcompany coconut sugar! Easy weeknight Bacon, Broccoli & Cumin Pasta. Perfect quick diner for those evenings when you don’t get through the door until gone 6.30pm. It’s so quick that I’ve cooked it, we’ve all eaten, the dishwasher is on & I’m already heading off to bed 💤 Ingredients : 300g of wholemeal pasta 1 x broccoli 6 x rashers if bacon 3 x tbsp of olive oil 1 x tsp of ground cumin 2 x cloves of garlic 250g of grated mature cheddar Salt & pepper to taste. Instructions: Boil the pasta in salted water per the packet instructions. Chop up the broccoli & cook in salted boiling water for around 5 minutes or until cooked. Whilst the pasta & broccoli are cooking chop the bacon & dry fry until crispy. Put the bacon into an ovenproof dish. Use the same pan you fried the bacon in & add the olive oil, cumin & crushed garlic & put on a very low heat so all the flavours infuse & flavour the olive oil. Drain the pasta & broccoli & tip into the ovenproof dish with bacon. Season well with salt & pepper. Give everything a good mix until everything is flavoured with the olive oil. Sprinkle the grated cheddar over the top & pop under the grill until cheese is melted. Any mamas out there that just DON’T have time to meal prep/cook? 🙋🏻‍♀️ I work from home so you would think I have all the time in the world to cook and do things around the house but that’s not always true. I am the QUEEN of convenience meals. I batch my chicken out once a week and the remainder of the days I will have either lunch meat or precooked meat in the freezer. If you ask me how I stay on track with my food having 3 toddlers and also working - its convenient meals. Cooking and meal prepping is super important to staying on track but I’m not afraid to admit that I eat freezer meals pretty often. Sometimes I will buy frozen veggies (which btw are just as nutritious as fresh veggies!) Or sometimes I will buy my own mixed veggies and chop/bag/store for later use to throw on a skillet. If you are having trouble with cooking time-consuming meals everyday, add some convenience meals to your life. My go-to convenience meal is steamable rice, steamable veggies and usually chicken from the batch I made already OR I buy frozen precooked chicken breasts if I’m really short on time for a meal (watch sodium levels of course). Dinner last night was a good one and it was all done in my Instant Pot! 😃 This truly makes it so easy! First I cooked a deer roast by seasoning and searing it on each side using the “Sauté” setting. Then I removed it from the pot and added butter, red onion, bell peppers, poblano peppers and garlic. Once those were sautéed enough, I added 1 can of organic diced tomatoes, sea salt, pepper and a little granulated garlic and onion. Brought everything to a boil and then added the roast back in. I changed the Instant Pot setting to “Manual” and closed the seal valve. I cooked it for 30 minutes and let it naturally depressurize. Once it was done, I served the tomato and pepper mixture in a bowl and topped it with homemade cauliflower mashers and the roast. With the research in the news today encouraging us all to eat less red meat and more beans and lentils, thought I would share this family favourite - bean casserole served with ciabatta dumplings. Although my 1yo gagged and was then sick with her first mouthful so I had to blend it up for her 😂. I love cooking with beans as they are ready in minutes, super cheap and high in fibre. This recipe has borlotti and cannellini beans cooked in a tomato base with onion and rosemary. The dumplings are made by soaking ciabatta in milk and adding lemon zest, egg, flour, pepper and parsley. They are then browned in a frying pan for 5 mins. Much healthier than traditional dumplings and super tasty. This recipe is a Gino Italian Escapes one. Cook until onion and pepper soft. • Whilst you’re waiting for that to cook, cook some wholemeal pasta (i always dissolve a stock cube in the water to add flavour) • When the onion and pepper are soft, add 4 teaspoons of the Schwartz bbq seasoning, 4tbsp sweetener, 2 tins of chopped tomatoes, 1 stock cube, salt and pepper. • Let the sauce reduce slightly until desired thickness. • Add the cooked pasta to the sauce, chicken and bacon, and stir thoroughly • Add 8 tbsp Heinz BBQ sauce (8 syns) and stir thoroughly. • Place into an oven-proof dish and add 45g low fat cheddar (HeA) per person on the top of the pasta • Place under the grill until cheese begins to brown. #yum
