We were supposed to go to our community homeschool day but Luke woke up with a cold and a low fever. So we decided to stay home. Which I was real bummed about because at lunch we were gonna have thanksgiving lunch😭😭 I got up early and made kale salad and sweet potatoes as side dishes. Sin e we didn’t go I though “well I guess we are having kale for every meal for the foreseeable future.” But it went pretty fast! *Recipe is 1&1/2 bunches of Kale cut up Sunflower seeds 5 cutie oranges peeled and taken apart 3/4 cup Dried cranberries or a pomegranate seeded Dressing 1/3 cup Apple cider vinegar 2/3 cup EVOO 2 teaspoons of salt Two tablespoons of honey *recipe is an approximation lol Mmmm it’s so good.

Who loves schnitzel?🙌 It is a firm fav at our house. It's a cheap cut of meat and easy to make. Last night I jazzed it up a bit by stuffing it. So Yum! I just spread the piece of schnitzel with Dijon mustard then on one half put a slice of ham some baby spinach🌿then a slice of cheese🧀 folded it up then crumbled it as I usually would and cook it as I usually would. Had it with a big salad and some roasted potatoes and kumara. Yum yum👌

My new winter side dish! 😍An easy dinner that I made up with leftovers. What I had in my fridge: 🌱1/4 cauliflower 🌱Handful of kale 🌱Garlic 🌱Feta 🌱Quarter of pomegranate 👩🏼‍🍳Method: sauté garlic and cauliflower for 5-6 minutes, add kale and cook for 5 minutes. Crumble feta (optional)and pomegranate seeds, black pepper & chilli flakes!! HAPPY NATIONAL BUNDT DAY FRIENDS! Here’s a recipe from our kitchen👇🏻 Love to hear what you think 🍰 . BEETROOT BUNDT . 500g cooked beetroot 4 eggs 350g caster sugar 2 tsp natural vanilla extract 250g ricotta 250g unsalted butter, melted 375g self-raising flour ½ tsp ground cinnamon Drizzle icing, pistachios and dried rose petals, to garnish . Preheat oven to 180°C. Combine the beetroot, eggs and caster sugar in a blender and purée until smooth. Add the vanilla, ricotta and butter, then purée again. Fold in the flour. Spoon into a buttered and floured 2 ½ L Bundt tin, then bake for 45-50 minutes, until a skewer can be inserted and removed cleanly. Cool in the tin for 5 minutes, then invert onto a cooling rack. Drizzle with icing, then dress with pistachios and dried roses.

What to make for a side dish, appetizer or a night snack?? This dish! Roasted eggplant caprese taste so delicious! You will love the taste of the roasted eggplants and tomatoes, topped with melted cheese, basil and balsamic vinaigrette! 🍆🍅🍃🧀 .... #recipe .. Roasted Eggplant Caprese ... 1. Peel eggplant and cut into 1/2 inch spheres lay flat on sprayed baking sheet. Bake at 400F for 20 minutes. 2. Cut tomatoes into round spheres, and top each eggplant after 20 minutes with the tomatoes, place back in over for 10 minutes. 3. Take out the eggplant and tomatoes and cover each one with mozzarella cheese. Place back in over for 2-3 minutes until cheese has melted. 4. Place on plate and pour balsamic glaze on top. Garnish with fresh basil. 🌟Glaze: Mix 3 tbs balsamic vinaigrette with 1 mined garlic, 1 tbs olive oil and salt. *Optional, if u want thicker consistency aka balsamic glaze... heat 1 cup over med heat for 10 min stirring continuously to avoid burn. Let sit for a few minutes so glaze thicken. Happy #worldkindnessday and what an awesome thing to celebrate, right?!? It totally gives me all the feels. I mean bringing a smile to someone else's face is the dopest. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Showing kindness to others isn't always the easiest thing to do, but sadly what I see time and time again is how much people struggle with showing kindness to themselves. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I was one of those people, especially when it came to my physical body. Full of excuses on why I didn't have time to make healthful food, how I was no good at exercise, and oh! let's not forget how much I "needed" to be doing instead of sleeping. My poor body. I was not being kind to it, which in turn affected every other part of my life too. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I wasn't the kindest to my family, to my friends, um...maybe even the mailman on occasion. Here's the thing, I believe kindness needs to start with ourselves FIRST. And that means taking time to nurture and care for the one body you will ever be blessed with. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ That kindness will radiate through you and out into the world, promise. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So....I propose you start with a bowl of my Tomato Basil Bisque to fuel you with goodness followed by whatever movement you enjoy, and then - girl, go to bed and get 8 glorious hours of sleep.
