My kind of potato salad lol . An easy way for me to get my raw veggies in during colder months is adding a warm starch the the mix. In this case, roasted potatoes and bell peppers are added to warm the meal up a bit. ✨Cookies 'n Cream Pie✨ If you are looking for a non-pumpkin, delicious and healthy pie to share with loved ones this holiday season, this Cookies 'n Cream pie is a winner! It's so divine!! Made with simple, wholesome ingredients: dates, nuts, flaxseeds, vanilla, cocoa powder, and water! My mom just made this last week--- and it still blows my mind how tasty this recipe is! The crust was a bit crumbly because we used dates that weren't as sticky as medjool dates (which we usually use), but the crumbly crust gave it that cookie taste and texture ---and it was ohhh so amazing! Tonight I dined on pan fried salmon with rosemary potato wedges and kale. I love seasoning my potatoes with different herbs and spices, so tonight I went for the humble rosemary... And it was a winning combo! 🐟🥔🌱 To make the rosemary potato wedges: (serves 2) 1) rinse and pat dry 2 large or 4 medium potatoes 2) slice the potatoes into wedge shapes 3) place on a baking tray 4) drizzle with 2 tbsp olive oil and sprinkle liberally with salt, pepper and rosemary 5) roast in the oven at 180 degrees Celsius for 45 minutes, shaking and turning half way through cooking

Cleaned out my fridge before thanksgiving 🦃 w/ this fire 🔥 meal. • • Massage kale w/ coconut oil. Heat skillet on medium. Dice red onion + garlic and sauté for 2 min. Then add crimini mushrooms 🍄. Put in pan + cook for addtl 3 min. Add kale and cook down. Cook eggs medium in avo oil. Cut avocado 🥑 + slice. Add s/p hemp + chia seeds w/ slash on lime. Sauté 🍠 medium high season w/ s/p + everything bagel @traderjoeslist .

Pulled BBQ Chicken Cabbage Tacos with Broccoli Slaw 🌮. . Who says cabbage has to be the slaw and not the taco shell? 🌮 these tacos were super easy and were SO good that after I took this photo I stood in my kitchen and ate three of them immediately without so much as sitting down 🙈. . I was inspired to make a broccoli slaw taco since that's the veggie we're working on this month (thanks to @veggiebudsclub - and if you're interested, they have an amazing sale going on right now for Black Friday! Highly recommend). So far we haven't had much luck with the broccoli love, but these actually got eaten. I'm sure the fact the tiny broccoli pieces were hidden among all the other yummy toppings helped a bit 🤷🏼‍♀️. . Here's what I did: . Pulled BBQ chicken: 🌮Cook 2 chicken breasts and 2 cups of BBQ sauce in slow cooker on high for 3 hours. Shred with a fork and leave in cooker on 'keep warm' setting until ready to eat. . Broccoli Carrot Slaw: 🌮put 1/2 head of broccoli, chopped roughly, in food processor with 2 carrots (also chopped roughly). Pulse until veggies are slaw sized. 🌮finish slaw by adding 2 chopped green onions and tossing in my fav avocado dressing: 🥑 1/2 an avocado, mashed 🥑1 tbsp honey 🥑1 tbsp apple cider vinegar 🥑1/4 cup olive oil 🥑1/4 cup water 1/2 tsp each: cumin & sea salt Pinch of pepper . Add ingredients to mason jar and Shake shake shake until combined. .
