Healthy zucchini curry Ingredients 3 pounds zucchini 8 tablespoons extra-virgin olive oil, divided 1 large onion, quartered and thinly sliced 1½ teaspoons tomato paste or 1 small tomato, halved and grated 1 cup water 2 teaspoons sugar ¾ teaspoon salt ½ teaspoon ground pepper 2 tablespoons lemon juice 2 tablespoons chopped fresh dill, plus more for serving Whole-milk plain Greek yogurt & lemon wedges for serving Cut strips of peel off zucchini ⅓ inch thick and 1½ inches wide. (Reserve the center flesh for another use.) Cut the strips crosswise into 1-inch pieces. Heat 2 tablespoons oil in a large pot over medium heat. Add onion and cook, stirring occasionally, until very soft, 7 to 9 minutes. Add tomato paste (or grated tomato) and cook, stirring, for 30 seconds. Add the zucchini peels, the remaining 6 tablespoons oil, water, sugar, salt and pepper. Bring to a boil over high heat, then reduce heat to maintain a simmer. Cover and cook, stirring occasionally, until the peels are very tender, 20 to 25 minutes. Uncover and adjust the heat to a lively simmer. Cook, stirring occasionally, until the liquid reduces slightly, 5 to 8 minutes. Remove from heat and stir in lemon juice. Let cool to room temperature, about 30 minutes. Stir in dill. Healthy veg mix recipe Ingredients 1 cup walnuts 1 pound mini (Persian) cucumbers, sliced ¾ teaspoon salt, divided 2 tablespoons slivered fresh basil, divided 1 tablespoon extra-virgin olive oil 1 clove garlic, crushed ½ teaspoon grated lemon zest ½ teaspoon ground pepper 3 cups whole-milk plain Greek yogurt 2 tablespoons butter Place walnuts in a bowl and add cold water to cover by 1 inch. Soak for 5 hours at room temperature. Rinse, add fresh water to cover by 1 inch and refrigerate overnight. Drain, pat dry and coarsely chop. Using a potato masher, mash cucumbers with ¼ teaspoon salt until juicy. Drain in a colander for 5 minutes. Transfer to a large bowl and stir in 1 tablespoon basil, oil, garlic, lemon zest, pepper and the remaining ½ teaspoon salt. Whisk yogurt in a large bowl until smooth and spread onto a serving platter. Top with the cucumber mixture and the walnuts. Melt butter in a small skillet over medium heat until beginning to brown, 2 to 4 minutes. Immediately remove from heat and drizzle over the cucumbers. This is also my first time having Pad See Ew” - @superandrew123 - Ingredients: Fresh rice noodle (don’t refrigerate, it won’t be as good) Chicken Chinese broccoli Egg Garlic Black soy sauce aka See Ew Light mushroom soy sauce Oyster sauce Sugar (I use palm sugar) Optional: leftover roasted cauliflower - Instructions: Mix rice noodle (1 serving) and see ew sauce (1/2 tbs) and put it aside. In a pan, add 1 lbs of any kind of oil. Cook chicken and garlic until chicken is almost fully cooked. Add noodle, vegetable, soy sauce and oyster sauce. Add more See Ew sauce if you want to add more color to your noodle. Add a little bit of sugar. Once vegetable is cooked, add an egg to the bottom of the pan and stir gently without mixing raw egg to our cooked food. Once the egg is half way cooked, fold the rest over and mix in gently until the egg is fully cooked. Some people think images like this promote food fear or guilt around food. ⠀ My opinion is different working as a chronic disease Dietitian. This image provides the opportunity for people to learn about portion size, better cooking methods and following a balanced plate. ⠀ The option on the left to me is a supersized portion, HOWEVER it is a normal portion provided at most restaurants/pubs/bars. ⠀ The option on the right is a homemade version, served along side a garden salad and frozen oven baked chips. It follows a more balanced approach. Not everything on the plate is home made and that’s ok 👌🏼 ⠀ You don’t have to eat perfectly all the time BUT I believe it is important to understand how you can make better choices/options at home. ⠀ My belief around food is - SURE eat whatever you like, BUT you can still be informed around your choices for YOUR lifestyle. ⠀ Can you make the left option better? Do you have food traditions other than for the holidays? Growing up every Friday night was taco night! My dad would cook ground beef tacos and crispy shells. He prepared the meat the same way each week, ground beef with a can of Stagg Chili. This ritual of Friday night tacos even happened at my grandparents house. We have continued this tradition with our boys but sometimes mix up the type of tacos. When my parents come to visit they know what’s for dinner Friday night. My dad even offers to cook which is fine with me. A lot has been going on, both good and bad, but I'm thankful to finally be coming out of a long sickness that kept me down good. Kind of bummer I couldn’t do my long run today because it was pouring, but At least I got to eat a #donut for #breakfast🙃 🍩 Gluten Free Frosted/Powder Sugar Donuts: ~1.5 cup #glutenfree baking flour ~1 cup sugar ~2 tsp #baking powder ~1 pinch salt ~2 large eggs ~1/4 cup coconut oil, melted ~1/2 cup almond milk ~1 tsp vanilla For the glaze: ~1/3 cup powdered #sugar ~1 tbsp almond milk 👩🏼‍🍳 Preheat oven to 350F. Mix the eggs, oil, almond milk, and #vanilla in a bowl. Mix all the dry ingredients in another bowl. Add the dry ingredients to the wet and mix until fully combined. Spoon the batter into a frosting bag or ziplock bag and cut one corner off. Squeeze the batter evenly into 12 #donuts in your lightly greased donut pan(s). Bake for 18-20 minutes. Let the donuts cool slightly then remove and roll them into powder sugar until evenly coated. For frosted donuts, mix 1/3 cup powder sugar with 1 tbsp almond milk until you get a nice, slightly runny glaze. Add a tiny bit more milk if neeeded. Dip one side of the donut into the glaze, carefully remove and add #sprinkles! Let the glaze dry for about 15 min. Enjoy! 😋

🌶Green Chili Breakfast Quesadillas🥙 Super easy, super tasty—I’ve made this prep a ridiculous number of times! 😅 . (GF, vegetarian, 20-25 minutes, 4 servings) ~For the quesadillas: 6 large eggs 1 (4 oz.) can diced green chilies, undrained 2 tsp. oil or butter 4 oz. sharp cheddar, grated 8 corn tortillas ~To serve: 4 servings salsa 1/2 small cantaloupe, diced 6 oz. blueberries . 1. Whisk eggs and green chilies (with juices from can). Heat oil in a non-stick skillet over medium and scramble until eggs are just set then remove to a plate. 2. Wash skillet and return to burner over medium-high heat. Put 2 tortillas (or 4 if big enough) on the skillet and sprinkle 2 T. cheese on each tortilla. Cook until the cheese has melted and the bottom has browned. 3. Spoon 1/4th of the egg mixture onto one tortilla and top with a second tortilla. Let cool before putting in containers. 4. To assemble: I cut these in half for easier eating. Reheat the quesadillas in a toaster oven or skillet to re-crisp them or they are still tasty microwaved. . ~Storage: 3-4 days. ~Freezer: 😀 (quesadilla only). ~Saving money: Use whatever fruit is on-sale/in-season. Also, salsa is a great ingredient to stock up on if you see it on sale and have storage room (long shelf life, high versatility, and guaranteed interest in eating it are my criteria for what I buy in quantity when prices are low).

Dinner last night✨ soba noodle vegan miso soup! Ingredients: 1 Spring Onion 1 tbsp Fresh Ginger grated 1 clove garlic minced 2 tbsp Miso Paste or 1/4 cup miso concentrate 1 litre Vegetable Stock Soba Noodles 1 Head of Broccoli 1 handful Green Beans 100 g Chestnut Mushrooms 200 g Tofu Add other veggies to your liking! 1 tbsp Sesame Seeds Method: Sauté the green onion first then add in the ginger and garlic till fragrant. Then put in your miso and veggie broth and let simmer for a couple minutes. Add in your mushrooms first and let cook, then add in other veggies. I baked tofu beforehand and once the veggies were cooked I added in the tofu and precooked soba noodles. Brownie con Oreos Como están? Hice este Brownie para compartir con unos amigos muy queridos y salió increíble! Será que cuando uno cocina con amor siempre sale bien ❤️❤️. Les comparto la receta y los animo a que la hagan para sus amigos porque es muyy sensilla. Que necesitamos? Galletitas Oreo cantidad necesaria 100 grs de manteca o mantequilla 180 grs de chocolate semi amargo 180 grs de Azúcar 50 grs Harina 0000 4 huevos Una pizca de sal Esencia de vainilla Como se prepara? Fundir el chocolate junto con la manteca a Baño Maria o en Microondas. Batir el azúcar con los huevos hasta espumar y agregar la esencia de vainilla. Incorporar ambas preparaciones y por último en forma envolvente la harina tamizada. Llevar a una placa forrada con papel manteca y colocar unas Oreos por arriba, entonces a horno 180 grados hasta que la superficie tenga esa capita tan rica y al introducir un palillo salga apenas húmedo. Una vez cocido dejar enfiestada y retirar el papel manteca. Cuando se haya enfriado rociar con un poco de chocolate derretido y unos Sprinkles o granas. Les gusto??
