If you haven’t had a chance to see my last couple posts, I already made baked fries and a pasta with this starchy goodness. Now here’s a smoothie! ⁣ ⁣ @highcarbhannah introduced me to these back in 2017, but they weren’t sold at my local Whole Foods in Boston. However, they are certainly here in Atlanta and I’m so happy I get to experience they’re beauty and versatility. ⁣ ⁣ I boiled this one and the added it to the blender with two bananas, @foragerproject coconut cashewmilk, some frozen raspberries, and honey (add agave if opposed to honey). ⁣ ⁣ Why put a sweet potato in a smoothie? Good morning ☺️ Today I’m having kind of the same breakfast as usual haha I ran out of almond butter though so today’s toppings are sliced banana, pb and chia seeds! Really yummy! . Today I wanted to talk about stress and anxiety and how this can effect your body, more specifically being bloated. As you may know lots of people are trying to find ways to be less bloated and seem to experience it a lot. Stress and anxiety while eating or while digesting food can have a big influence. When we are stressed or experience anxiety our body is not capable of digestion food properly, that’s why it’s so important you try to reduce stress and anxiety as much as you can. Try eating mindful, don’t be on your phone while eating try to relax, breathe and eat.

Yeah, I know it doesn’t look like much, but this is an incredibly easy meal that also tastes quite savory and satisfying thanks to the seasonings used. A simple sauté of red potatoes, carrots, shallots, and lentils seasoned with paprika and fresh rosemary. That’s it 👌🏼 Simple and delicious. I love getting big chunks of the potatoes and carrots, very reminiscent of a hearty stew. This is my pre prepped work meal x 4 this week! A little tidbit of info - there was a time when I would never have considered eating lentils at work. Now, it is no issue. As you slowly start eating more fibrous foods, your GI flora adapts to be able to better digest these foods. Lentils are a great source of protein and fiber, help maintain a steady blood sugar (preventing hunger as well!), and are therefore great for your heart, as well as being a good source of folate and magnesium. #vegan #whatveganseat #easyveganfood #vegancommunity #veganmealprep #plantpowered #plantprotein #nutrientdense #eattolive #wholefoodplantbased

I needed something quick and easy to throw into a pan after a stint at the library so I rustled up gnocchi in tomato sauce with sautéed garlic and onions with seasoned mushrooms - this took only 15 mins to prep and cook and is really cheap too 💫 (I might start doing cost per portion on these) 🌱

Change up your usual tofu dish with this tangy Chinese-inspired plum sauce! Super delish that I’m planning on making it with jackfruit next! . Give it a go and let me know how you get on! Post your pics #veganinspire1 . Recipe & instructions – 4 people 1) Thinly slice 1 small leek and add to a saucepan on medium heat with 2 tbsp water 1 tsp freshly grated ginger. Cook for 3-4 minutes to soften. 2) Add 200ml cranberry juice, 250ml vegetable stock, 1 tbsp vegan Worcestershire sauce, 1 tsp white miso paste and 1 tsp Dijon mustard and bring to the boil. Reduce to a simmer. 3) Add 3 plums (diced) and 1 tbsp cornflour (mixed with 1 tbsp water and continue to simmer for another 10 minutes. 4) Transfer to a heatproof blender and blend until smooth. 5) Pour back into the saucepan, season and keep cooking if the sauce requires thickening. 6) Add cooked tofu (pan-fried or baked) to the saucepan and coat well with the sauce. 7) Serve with your favourite vegetables. 8) N.b. this sauce reheats and freezes well although you may need to add 1-2 tbsp of water to thin it slightly. . . . . #govegan #veganforlife #easyveganfood #wholefoods #plantpowered #veganinspired #letscookvegan #healthydinner #healthyrecipes #tasty #veganpower #nutritiousfood #plumsauce #chinesefood #chineserecipes
