We greatly enjoyed the special Cuban-inspired dinner last night @zingermansroadhouse. They do these special themed events regularly. We attended their Irish brunch near St. Patrick’s Day 2017 but this was our 1st dinner there (we’ve enjoyed their barbecue and fried chicken catered meals off site). I started with the “Roadhouse Colada”. We really liked this. The pineapple, coconut, and ginger syrup gave sweetness to the well-flavored drink and the lime’s acidity balanced it well. We split a Shooting Star Blue Franc red wine with dinner. It was a good match: fruit-forward, little tannins, no off flavors. We heard from the chef, Ari (whom we had the pleasure to meet on our way out), and the author/photographer/inspiration for the dinner Cynthia Carris Alonso. She talked most of the night but I enjoyed learning about Cuba and its food. Speaking of the food...we really liked the plantain chips and ham croquettes. The salad was good. The next 4 dishes were served family style. We really liked the ropa vieja and black beans. The beef was tender, moist, and flavorful. The beans were delicious but some were crunchy and undercooked. The chicken and rice were okay w/o distinct flavor. I liked the tostones’ sweet/sour topping but the plantains were bland. Our dining companion (Caribbean native) said plantains are usually a source of calories/filler and not flavor. The rice pudding was underwhelming. Mostly rice, very little leche, and some flavoring. We sat with a couple who moved to AA from California. The woman has family here and the man is from the Virgin Islands. We really enjoyed their company and his commentary on the dishes. But these reviews are my own. The servings were more than ample and the service (from Taralyn) was good. We really enjoyed this dinner! We would like to do this again. I made some #hummus last week and wanted a #healthy dipping item. Sliced some #wholewheat #pita bread in 6 wedges, brushed with #evoo, sprinkled with #dukkah (a Middle Eastern spice), and baked at 350° for 20 mins (10-15 may have been adequate). These were very crispy and held up to the resistant forces of the dip. These would work well with your favorite artichoke dip, spinach-artichoke dip, or cheese ball. Or crumble them to make a Middle East variant of panzanella - the bread salad of tomatoes, cucumber, herbs, vinegar, and EVOO. In the 3d picture our dog Henry looks for crumbs overboard. Last week I #grilled some #porkchops from @luckysmarket in #annarbor on the #biggreenegg over #lumpcharcoal. Coated with Cajun spices from #penzys. One side dish was #traderjoes #sweetpotato fries baked according to directions. The other side was some leftover black beans I improved with some #chipotle pepper and #adobo sauce. Added #lime juice to my connubial companion’s and my beans and a little #yogurt to mine (sour cream would be better but we had none; yogurt is a lower fat option). Cilantro or green onion would make a good garnish. All components were tasty. The wife particularly liked the fries. Milk Street TV had a #chicken #teriyaki recipe that’s simple, fast, and tasty. I modified it a bit. Their recipe says teriyaki is a cooking technique where chicken is seared/broiled then glazed with soy, mirin, and sugar. They marinated thighs cut in pieces in soy and sake, drained, coated in cornstarch, browned, then glazed with a soy, mirin, sugar, and #ginger mixture. We lack sake and mirin. I marinated whole boneless thighs in liquid aminos (a soy sauce substitute), rice vinegar, dry white wine, #local #michigan #honey, and fresh ginger. I browned the thighs, sprinkling the top with cornstarch. When well browned, I added the marinade to the skillet and brought to a simmer. Cooked til reduced and thickened. The chicken should be done. We enjoyed over brown rice. Last week Little Rock friends visited and we dined for the first (but not the last) time @dessousannarbor. This is on Main next to Conor O’Neill’s, but downstairs. The decor is well done and doesn’t make you think you’re in a basement. I started with a “summer orchard” and loved the #bourbon🥃 and #peach🍑 flavors. I also started with the #carrot soup: spicy and delicious. The general manager stopped by our table to welcome us and he recommended the #seabass and chicken entreés. I got the former; the wife got the latter. My bass had rice, tropical gastrique, baby bok choi, and @thebrinery #kimchi. It was outstanding! Crispy skin and moist, tender flesh. The dish was very spicy but my Scoville-phobic spouse liked it too. Her chicken with spicy green chili broth, olives, sweet onion, and rice was also delicious. A companion got the spaccatelli with tomato cream, peas, fennel, bufala mozzarella, but w/o the shrimp. The Laguna #chardonnay was a great match. The Russian River Valley in Sonoma County is a cool locale that produces elegant Chardonnays and Pinot Noirs. Shared desserts included an espresso-scented #flan with natural #caramel and candied #lemon peel and #elderberry #sorbet. Those were delicious! I loved the subtle coffee and lemon flavors. Service was great in the beginning but slowed in the end. Still a great dinner. This is a top #annarbor restaurant! We hosted a friend/colleague/sports fanatic last weekend. He was born in Detroit but never made it to the Big House for a #michigan #football game. One less bucket list item now! We went to the Zola’s in Arbor Hills off Washtenaw for an early brunch. We probably didn’t need our 9:30 reservation because only a few tables were occupied, but the place was full with a line out the door when we left. The Russian tea and Turkish #coffee with chocolate were tasty. Our entrees of waffles, sweet potato/parsnip #latkes with smoked salmon, and the American breakfast were tasty. Then we went to ESPN’s College GameDay on campus. Lee Corso made a fool of himself by donning a Wisconsin badger head. I liked the sign with the Pinocchio version of OSU coach Urban Liar. Michigan dominated Wisconsin in the game. When our friend visited early this year, we attended a #umich #hockey game at Yost and saw Michigan defeat highly ranked Penn State. This #pompano from @monahans_seafood was just outstanding! The backstory: (Michiganders may want to skip a few lines) Rex Nelson writes several columns each week for the Arkansas Democrat-Gazette and does a “Chewing the Fat” podcast discussing Arkansas restaurants. On one he mentioned traveling to the Gulf Coast and liking pompano in a restaurant there. That piqued my interest. I’ve been to the “Redneck Riviera” near Orange Beach, AL and Ft. Walton Beach, Destin, Pensacola, and Seaside, FL. Many Arkansans vacation there. I don’t know if I had pompano there but I’ve heard of it. I don’t think I saw it in Arkansas because it’s very perishable. Last week when I got the red snapper at Monahan’s I asked about pompano. They said they get it irregularly and sometimes the quality wasn’t up to their standards. I left my name & number and Mike Monahan called Thursday to say they got 2 in. I rushed there. The one I got was a beautiful fish, nicely cleaned and ready to bake. I simply prepped it with #evoo, S & P, and Meyer #lemon slices in the cavity. Instead of trying to season the cavity (hard to hold it open and grind pepper) I sprinkled S & P on the lemon slices before inserting them. I put a grape tomato in the mouth just to be silly. Baked at 350° for 20+ mins. Let rest. I cut across the bottom of the head and lifted the main spine from the tail and flipped the top filet before removing the main spine. The fins had some associated bones protruding in the flesh. These are easy to remove. We both loved this. Very tender, moist, and flavorful. Kudos to the fishermen and Monahan’s. This 1.5 lb plus fish should give 4 servings. Have you attended a game at #michiganstadium aka the #bighouse? Eaten any food from @umichgamefood there? Ever wonder what happens to the uneaten food? #annarbor’s #firstpresbyterianchurch has a ministry to handle this. Volunteers distribute lined bins to all concession areas days before the game. After each home game volunteers collect the leftovers in the bins and other containers and place in a walk-in freezer under section 3. Monday mornings volunteers transfer the frozen food to a Uhaul truck for transport and distribution. Some goes to St. Andrew’s Church’s breakfast program in @kerrytowna2. Most goes to a church and food pantry in Detroit. Leftovers include hot dogs, mac and cheese, pizzas, and buns, among other items. One Monday had 700 pizzas. Another had dozens of trays of frozen cooked hotdogs. Some of the bins are quite heavy and there may be 2 dozen plus of them. The ministry also rescues leftover food from the team’s kitchen in a lower level. Many people benefit from this. Several pictures of past players are on the columns and walls near this area. I saw the UM offensive lineman obviously holding the Arkansas Razorback player in the Citrus Bowl many years ago. Visited @monahans_seafood and got a good looking red #snapper. Preparation was a variation of a recipe I saw yrs ago in a KC Jr League cookbook that used snapper filets sandwiched between #lemon and #lime slices with an #herb #butter topping. I used the whole fish and put citrus slices bottom, middle, and top. Added fresh #thyme, #tarragon, #parsley, and #lavender from our sidewalk herb #garden in the cavity. Put several small pieces of butter on top. Started in oven at 350°, but after 20 mins it didn’t look like cooked at all. Increased temp to 425° to continue cooking the fish and roast the #brusselssprouts. I think the fish was very cold from being on ice at Monahan’s and my putting bags of frozen sprouts on top of the packaged fish before I cooked dinner to keep it chilled. Test doneness with a sharp knife or thermometer. Remove the citrus slices after cooking to avoid bitterness. I removed the fins and related bones and lifted the tail and spine to remove half the fish. I sliced the filet away from the head. I found it easier to lift the tail, bone structure, and top half in one piece to another plate, invert, and then remove the bone structure. The filets won’t be as pretty as filets you cook from the start but they’ll be more flavorful. The melted butter and citrus juices form a tasty pan sauce: spoon a bit over each serving. This was a hit. The only downside was several scales we encountered with each serving. I roasted the sprouts from TJ’s with S & P, EVOO, #michigan #maple #syrup, and #mustard. When done, I tossed with some cooked turkey #bacon from TJ’s. A Morgan #chardonnay was a great accompaniment. We’ve enjoyed this for years. Some years are good. Last week I cooked some #curried #scallops (a family favorite which I’ve posted before) and wanted to explain how I use fresh #ginger. I get a “hand” of ginger at the grocery store, wash it, and store it in the vegetable bin of the fridge. When ready to use, peel and smash, mince, or grate. I used to trim the skin with a paring knife. I’ve seen some cooking shows where chefs use a spoon to scrape the skin off the root. I tried it and it works great! You can mince ginger with your knife, grate it on a ceramic ginger grater (a gift from our friends), or use a microplane grater. The ceramic grater works well and is easier to clean than the microplane. But both are easier than mincing by hand. For the scallops, I sautéed the ginger and #garlic in #coconutoil, added the scallops, #curry powder, fresh #lime zest and juice, and coconut milk. The scallops exuded a lot of liquid even though the package showed no additives. I suspect false labeling. Some people recommend storing ginger in the freezer. I prefer to submerge it in a jar of dry #sherry and refrigerate. The sherry preserves the ginger, and when you get to last of the ginger, you can use the flavored sherry in a basic marinade. The Frugal Gourmet had a Chinese marinade of soy, sherry, ginger, garlic, and brown sugar. The sherry is a sub for a Chinese wine. This marinade works great for grilled pork and chicken. I went to #traderjoes last week and saw in their circular a special for #brined #pork chops. Sounded good, so I got 3. #grilled last night on the #biggreenegg over #lumpcharcoal. These were thick, as I like, so I rotated on each side and moved to a cooler part of the grill to finish. Brushed with a #michigan #maple syrup and #mustard glaze at the end. Check the pork with an instant read thermometer. I looked for >140°. The pork was delicious. The glaze didn’t add much. One accompaniment was our friend’s #asiago chive biscuits. These were great. The wife welcomed a friend/visiting professor last weekend and we hosted a dinner for him @vinologya2 with departmental colleagues. The downstairs space is nice and quieter than the regular street level space that was hopping with energy Friday night. We enjoyed the charcuterie plate and cauliflower apps. My scallops and our honored guest’s duck were delicious. The week before I met with Mary Jo to choose wines for the dinner. She was very helpful! We chose a NZ sparkling wine to welcome everyone, and a California Chardonnay and Cabernet to accompany dinner. All were delicious. The sparkling wine had good structure and tasty fruit. I prefer the Landmark Overlook Chardonnay over the Sextant we got, but the latter is good. We really liked the Mt. Veeder Cabernet. Our guest is enologically gifted, so it was comforting that he liked the wines. The wife fixed a simple #glutenfree dish last weekend for her work lunches this week. She cooked some brown rice and #quinoa pasta from #traderjoes and added halved cherry #tomatoes, mixed greens, #parmesan cheese, #lemon zest and juice, and S & P. Her recipe used #kale but she opted for the TJ blend which included kale and #spinach. It was delicious. The bright lemon flavors complement the savory tomatoes, cheese, and greens.
