Our neighbor gave us a bottle of @nordenaquavit - made by his and his partner’s acquaintance - and recommended using it as we would gin. He did not ask for my promotion and this is my own opinion. It’s great! I made a standard gin and tonic for the wife: 1.5 oz. #aquavit, juice of 1/2 a lime, topped with tonic. Stirred and added the juiced lime half. Delicious! For my refreshment, I shook with ice 2 oz. aquavit, the juice of 1/2 a lime, about the same amount of fresh grapefruit juice, and about 1/2 oz. of #rosemary simple syrup (rosemary from our #herb #garden). Garnished with a knot of #grapefruit #zest. This too was delicious. The #caraway and #dill flavors are prominent and tasty. If you like the juniper flavor in #gin, you’ll probably like this. If you like other botanical flavors in your spirits, you’ll like this too. If you want to experiment using it in culinary dishes, I’d suggest deglazing a pan in which you’ve sautéed salmon or other fish. I watched the @177milkstreet cooking show on PBS Saturday and they did a quick #salmon recipe. The wife had bought the cookbook and I found the recipe. I used 1 of our frozen filets from @prideofbristolbay that thaw quickly. Instead of the green onion the recipe uses, I sautéed a sliced small onion in #evoo, added sliced #garlic, #cumin and #coriander seeds, smoked #paprika, and S & P. Spices from #penzeys. Used red pepper flakes instead of the sliced jalapeño. Added the diced #tomatoes and a splash of white wine. Nestled the salmon (I cut into 4 filets) in the sauce and covered. Our salmon wasn’t as thick as that on TV and it was done in a few minutes. I removed the skin as the recipe recommended (and gave it to the dogs), but you easily could eat it. I reduced the sauce a bit after removing the cooked salmon. The recipe says to serve the salmon flesh-side up with the sauce spooned on top. I put the salmon on some rice, then topped with the sauce. Our side #vegetable was #organic green peas from TJ’s. Dropped in boiling water and simmered til tender, about 6 mins. Drained and tossed with butter. We lacked the fresh herbs the salmon recipe used, but we both really liked this. As the show stated, the whole spices give pops of flavor in this dish. I think you can sub other proteins for the salmon in this recipe. Had some ground #venison in the freezer and decided to make small burgers. Made 3 1/4 pounders for bun-less sliders for us and 2 1/8 lb mini burgers for the dogs. We adopted our rescue dogs from foster families. They were mostly full-grown, but we don’t know their age or birth circumstances. We got them in January 2010 & 2011, so we celebrate their birthdays in January. We gave them small venison #burgers with mini carrot birthday candles. We enjoyed ours. They inhaled theirs. The venison is lean but tasted close to beef. Not gamey. Last week I pan fried some fresh #swordfish steaks and made a Mediterranean style sauce. Sprinkled S & P on the steaks. I rehydrated snipped sun-dried #tomatoes in hot water. Browned the #fish in #evoo on both sides, removed, added minced #garlic, sautéed til softened, added dry white wine, the tomatoes and their soaking water, sliced black and green olives, and capers. Simmered to reduce a bit, added fresh #lemon juice. Returned the fish to finish cooking. Sliced the fish and spooned some sauce over the slices. The Cliff Lede sauvignon blanc was a great accompaniment. This was #healthy, #nutritious, and good. I found the fish too mild; the wife thought it too strong. A couple of weeks ago I posted the roasted eggplant 🍆 Italian sausage pizza 🍕 I made. I had some leftover eggplant and sauce, but no crust. Fortunately the N.Y. Times dining site had a Jamie Oliver eggplant Parmesan recipe just in time. We typically do our eggplant Parmesan individually and not in a casserole. We dip slices in flour, then egg, then panko. Fry in EVOO, top with mozzarella, tomato sauce, and Parmesan. The Oliver recipe roasts the eggplant slices and layers with sauce in a casserole. No mozzarella. He tops with Parmesan and panko tossed with EVOO. Bakes at 375° til hot. I did his version and we liked the result very much. Without the individual egging and breading, this is a lighter and healthier version. Nice crunch on the top. Our 6th Deli Dinners a Go Go from @zingermansdeli was chili con carne last night. Delicious, tender, nicely seasoned #beef chunks with #carrots and #beans. Nice heat. Delicious broth. Perfect for our cold night in #annarbor. The cornbread was fine. We’re from the South and prefer savory cornbread. This had some sweetener. Southerners call cornbread made with sugar “cake”. My sister once called me a Yankee when I made some Jiffy cornbread. I suspect our palates differ from native Michiganders. We’ll eat both versions. The slaw was fine. More red beets. I garnished the wife’s chili with #avocado and grated #cheddar #cheese. I garnished mine with sour cream and cheese (I had avocado with my salad). This was a very satisfying dinner. Kudos to the Zingerman’s chefs. Our 5th Deli Dinners a Go Go from @zingermansdeli last week was a delicious #tuna casserole. When my sister and I were kids, we unfavorably commented on our mother’s tuna noodle casserole. She eventually stopped making it. Canned Starkist tuna and Campbell’s cream of mushroom soup do not make for a good meal. The Zingerman’s version is so much better. Delicious imported tuna, flavorful sauce, peas, and good noodles. The “Sonoma salad” of #beets and #carrots was also great. We’re not beet fans. I once had roasted golden beets and really liked them. I’ve yet to have a red beet I’ve liked. We dislike their earthy/musty flavor. But these Zingerman’s beets were as close to tasty as I’d expect. This is our particular palate and not a criticism of the Zingerman’s chefs. We discussed our rankings of the deli meals we’ve gotten so far. The chicken paprikash from December is our favorite. The lamb tagine and this tuna are our 2d favorites. Final #pizza post. Sliced fresh #mozzarella and placed on top of the #eggplant that I placed on top of the sauce. Baked about 15 mins. I waited for the crust to brown and the toppings to bubble. Removed. I grated #parmesan #cheese on top, drizzled some primo #evoo our sister-in-law gave us, and sliced. Delicious! The crust was unremarkable (though the wife liked it), but the sauce and toppings were great. @luckysmarket in #annarbor had #eggplant on sale and I got 2 for our pizza last night. Trimmed stem end, sliced, and cooked in 400° oven. I poured #evoo on the baking sheets and coated both sides of the eggplant before roasting. They were tender in about 20 mins. Let rest. Got fresh #pizza dough from Lucky’s too. Put it on a floured surface and pressed to expand. It was too springy, so I let it rest. Later I pressed again, then rotated the dough over my downward-curved knuckles to expand. Put in a large round pan sprinkled with cornmeal. Spread sauce on top, then layered the eggplant. Preheated oven to 450°. Final installment next. My what a big sausage that is! Got this hot Italian #sausage from @sparrowmarket in @kerrytownshops. Slit the casing, removed and crumbled the meat, sautéed in #evoo, drained on paper towels, and set aside. Removed all but 2 Ts of the fat/oil from the pot and sautéed sliced onion and bell pepper. When almost tender, added sliced garlic and tomato paste. Cooked til garlic softened. See the fond in the bottom of the pot? That = flavor. Deglazed with red wine. Added large can of #tomatoes, dried #basil and bay leaf from our #herb #garden, and #oregano and #thyme from #penzeys. I used our avocado masher to crush the tomatoes. Returned sausage and simmered. If you’re making a pasta sauce, it’s ready. I was making pizza sauce, so I simmered longer to reduce the liquid. Tomato sauce for pasta or pizza can be as simple as sautéed onions and tomatoes. Adding other ingredients just enhances the sauce. Fresh citrus 🍊 is a dreary winter day-brightener. Several years ago my late uncle and his wife sent us some #pittmananddavis #grapefruit for Christmas. We loved them. Soon we were ordering them ourselves. We’ve had a couple of bad shipments over the years - including some rotting ones - but over all they’re delicious. We usually eat them plain. I like using a serrated steak knife to prep them. Cut in half across their equater. I then cut around the inside of the rind and between the individual segments and the membranes. I used to have a grapefruit knife with a split blade at the end. The split part went on either side of the membrane so you could cut both sides at once. A great timesaver. I recently saw a bruléed grapefruit recipe and tried that this morning for our breakfast. I mixed dark brown sugar, #cinnamon, and ground #ginger. Spices from #penzeys. Our brown sugar was lumpy, so I whisked and rubbed them with my fingers. You can press the lumps through a strainer or use a mini food processor. I preheated the broiler and liberally (this is #annarbor after all) sprinkled the mixture on top. Broiled about 8 mins. I thought the mixture would develop a crust like creme brûlée, but it dissolved into the grapefruit juices. These were delicious! The wife exclaimed over them. I think allspice or Chinese 5 spice with brown sugar would make an interesting topping. Our 4th Deli Dinner a Go Go from @zingermansdeli came today. #local #michigan #lamb #tagine, lemony couscous, and North African salad 🥗 of #tomatoes 🍅 and #cucumbers 🥒. The Moroccan-style lamb was delicious! Tender chunks of flavorful lamb in a well seasoned liquid. The #spices had sweet and subtle warm notes, but I couldn’t detect an individual spice. Typical Moroccan dishes use #cumin, #cinnamon, and some hot pepper. The couscous was perfectly cooked - tender but not mushy. Subtle lemon flavor. The salad had flavorful tomatoes and cucumbers with fresh mint. Portions were more than ample. I made oven #roasted sweet potato 🍠 fries 🍟 with the deviled pork chops Monday night. Peeled #sweetpotates and cut into fries. Coated with #evoo, #cumin, #chipotle #chili powder, #aleppopepper, #ancho chili powder, and S & P. Spices from #penzeys. Roasted at 450° for about 25 mins, turned, and roasted for 10 more. They were tender when I poked them with a fork 🍴. I overdid the hot spices but these were delicious. Friday @sparrowmarket in @kerrytownshops I got thick, bone-in #pork chops. Saturday I watched America’s Test Kitchen on public TV and Detroit’s Elle Simone cooked deviled pork chops. Sounded good, so I used it last night. I didn’t have the recipe (until today), but I modified what I remembered. She used a nontraditional recipe: browned #panko breadcrumbs in #butter til golden. Mixed #dijon, brown sugar, dry mustard, #garlic, and #cayenne. Coated chops with this, topped with the toasted panko, then baked @275° for 40-50 mins. The low temp was designed to keep the chops moist but cook them evenly. I coated the chops with S & P as they sat to dry brine. I mixed coarse, stone-ground mustard, dark brown sugar, #smoked paprika, and #honey. Spread this over the chops and topped with plain panko. I roasted @450° but immediately reduced oven to 350°. Checked the pork after 20 mins: instant-read thermometer read 130°, so I turned oven off and left them in for about 10 mins. The pork was delicious! Tender, juicy, and very flavorful - both pork and topping. The Bread & Butter Chardonnay was a great accompaniment. Intense fruit, complementary oak, balanced acidity. Recent meals sourced from #annarbor’s @kerrytownshops @kerrytowna2. Friday I visited @tracklementsa2 (door faces north side of the shops) and got 1/2 lb #smoked #trout. Made apps on English #cucumber; some topped with light sour cream and capers. Lemon juice and S & P on all. You could sub crème fraîche or yogurt for the sour cream. Fresh dill, parsley, or chives would be great garnishes. The fish was moist and very flavorful. The cukes are a low carb gluten-free base. Squash or zucchini slices also work as the base. Dinner was red snapper from @monahans_seafood, which I visited after Tracklements. Coated top and cavity with #penzeys herbs de Provence. Baked @350° for about 20 mins. Let rest. Pried meat from bones. Squeezed fresh lemon juice on top. The fish was tender, moist, and delicious. I cooked this same fish a few months ago. I like a lemon butter sauce vs. the herbes de Provence. Wednesday we enjoyed our 3d deli dinners to go from @zingermansdeli. #beefstew, salad, and hearty rolls. The stew had ample perfectly cooked carrots and potatoes. Smaller pieces of onion and celery were present too. The beef pieces were tender but not disintegrating. The liquid was mildly flavored. The salad was just like our previous deli dinner to go salad: very good. The tasty rolls had a soft crust and chewy texture. Great for sopping! I think of pot roast and stew as two sides of the same coin. For pot roast, I brown the chuck roast, deglaze with red wine, and braise with carrot, celery, onion, #herbs (bay leaf, thyme, rosemary, etc.), more wine, beef broth, and Worcestershire. I use a slow cooker on low for 8 hours. But pot roast can be braised in a low oven or over low heat stove-top (flip periodically). For stew, the chuck is cut into cubes, browned, and then braised with similar ingredients. Some recipes for both coat the beef with flour before browning. I thought the beef stew liquid could have used more beefy herby flavor. Otherwise a very good dinner. We hosted the wife’s book club Tuesday night. The wife ordered and I retrieved a very nice cheese tray from @morganandyork. Great assortment of soft and firm cheeses and various fresh and dried fruits. I didn’t read the book, and based on the discussion, I won’t. We served red and white wines to accompany the cheese. We distracted the dogs with bully sticks. Alys enjoyed hers. Henry discarded his, sat in his bed by the fireplace, and enjoyed the literary discussion. Pineapple 101. Fresh #pineapple 🍍 is easy to prepare. Grab the base and leaves and twist the leaves off. Trim top and bottom. Stand upright and trim the rind off all sides. Cut the remaining pineapple in quarters vertically. Trimmed the inner core, diced, and fed some to the dogs. Saved the rest of the core for future dog treats. I cut the remaining portions of the edible pineapple in half lengthwise, but sometimes I cut into small pieces. I’ve seen several Instagram posts on #avocadotoast with #aleppopepper sprinkled on top. So I ordered some when I was ordering other bulk #herbs and #spices from #penzeys. Tried it a few times: 1st, I scrambled some eggs 🥚 and placed them atop #avocado on #ezekiel bread toast. Sprinkled S & P and the Aleppo pepper. 2d, I steamed some eggs til hard-cooked (about 12 mins), chilled in an ice bath, cracked, returned to the ice bath, then peeled. Coincidentally I saw an Epicurious email on boiling eggs. This said putting cold eggs into boiling water, cooking, chilling in the ice bath, cracking the shells, returning to the ice bath, then peeling was the best way to get easy peeling eggs. The ones I cooked were easy to peel. I used our cheese slicer (a gift from our friends) to perfectly slice the peeled eggs. Sprinkled the Aleppo pepper on top. Avocado 🥑 toast for the wife; plain for me. Our verdict: okay. The pepper adds heat but we didn’t get any savory or flavorful notes. So we are underwhelmed. I made #polenta with #gruyere #cheese to accompany the ham. Our standard recipe uses a cup of @bobsredmill polenta, 2 C each broth and milk, a t thyme, and a t S & P. After the polenta was done, I added #butter and the grated cheese. Stirred and let cool. Cut into wedges. The wife came home and exclaimed over the ham aroma and the polenta’s flavor. My preprandial #cocktail is a #margarita variation: #tequila, #triplesec, #lime juice, and #cranberry #pomegranate #apple juice. I used 2 oz. tequila and juice, 1 oz. lime and triple sec. Shake with ice and strain. Adjust proportions to your preference. The apple juice gives the drink sufficient sweetness. The lime, pomegranate, and cranberry give tartness. Best #ham ever! When we lived in Arkansas, we regularly got Petit Jean hams (our fave was their peppered ham). They were/are great. Zingerman’s Deli carries some Petit Jean bacon, and maybe ham. This #nimanranch ham was DELICIOUS! Got it @luckysmarket in #annarbor last week. I’d heard about Niman meats: humanely raised, natural, flavorful. The meats are featured on many restaurant menus. The ham was cooked but had instructions on heating (325° for 10-12 mins per lb) and had a natural glaze powder and instructions on liquefying and basting. The ham was wonderful. Great flavor, not spongy like mass-produced hams injected with liquid. The glaze’s brown sugar, clove, and orange peel provided a nice accent. All natural ingredients. Random Trader Joe’s acquisitions. I got the #lentil and brown rice #pasta and it was great with leftover meatballs. I didn’t tell the wife the nature of the pasta and she guessed whole wheat. The texture was that firm - and it was tasty! The frozen #grilled #asparagus is a winner. I like frozen vegetables with the vegetable being the sole ingredient on the package label. I microwaved the spears and tossed with butter and lemon juice. I made a lunch salad for the wife with #arugula, #cucmbers, and hot-smoked #salmon from TJ’s, grape #tomatoes and #avocado from @luckysmarket in #annarbor, and a #lemon #dijon vinaigrette. TJ’s candy cane tea is delicious but has a slight off flavor. We usually eat #blackeyepeas on New Year’s Day. It’s a southern - and somewhat northern - tradition. In the south, peas are traditionally cooked with pork: ham bone, ham hock, bacon, etc. I used a #smoked ham hock from @sparrowmarket. I soaked overnight a lb of dried peas I got Monday @luckysmarket in #annarbor. Drained. Added the ham hock, a #bayleaf and #cayenne pepper from our #garden, ground black pepper, and water to cover by about an inch. Simmered covered for about 1/2 hr, then added 1 T kosher salt. After another 1/2 hr or so, the peas were tender but there was too much liquid. I uncovered and increased the heat to reduce. I removed the ham hock, cooled, removed the meat from the bones and connective tissue, and added the meat to the peas. These were delicious! The wife said they were perfect. She made #cornbread to accompany the peas. She was disappointed. I liked it. We’ll try a different recipe next time. Last week I went to Knight’s market on Miller in #annarbor. I’d seen some reference to it months ago, but didn’t remember it until the @rustbeltmaven mentioned it as a source of good meat. If you head west from Kerrytown on Catherine, which becomes Miller, it’s just past the RR overpass and on your right. A nondescript white building with the entrance on the side opposite to the street. So turn right, right after you see it. It’s a small general grocery with fresh beef, pork, and poultry, and prepared dishes. One couple ahead of me was ordering a big beef roast for New Year’s. I got 2 Amish chickens and a tub of tuna salad. Both were great. I simply seasoned the chickens with S & P and put fresh #rosemary from our #herb #garden in the cavities. These had torn breast skin near the cavity - like most chickens I get - so I covered the tear with a lemon slice. Sometimes I use an onion slice. I wanted to protect the breast meat at that tip from overcooking. I cooked stovetop in a large nonstick skillet for several mins to give the dark meat a head start, then roasted @400° for about an hour. Check with an instant-read thermometer. I drained the juices from the cavities into the skillet and set chickens aside. Poured skillet juices into a fat separator. Deglazed with dry white wine, added chicken broth, the defatted drippings, roasted lemon slices, and a cornstarch slurry, and stirred til thick. Look for the skillet bottom being visible as you draw your spatula across it. These were delicious! Just as good as the Amish chickens from Sparrow Market. The meat was tender, moist, and flavorful. A few weeks ago I visited @thrivejuiceryaa in the Trader Joe’s parking lot in #annarbor. Previously the wife got us some #avocadotoast from Thrive. It was delicious! Hearty bread, nice #avocado, and #tomato slices. I got 4 juices to try. The celery juice was barely palatable. I like celery, especially with Zingerman’s pimento cheese. This celery juice was not good! My palate - no defect in the juice. The sunshine, sweet green, and sweet root were very tasty. But each 12 oz. bottle was $8.50. That’s not worth it. I’d rather eat the fruits/vegetables and get the fiber too. Merry Christmas Eve! We frequently enjoy #seafood (crab legs, shrimp, etc.) on Christmas Eve. Tonight I cooked a #roasted #shrimp & #broccoli recipe we’ve done several times. The NYTimes recipe roasts 2 lbs broccoli coated in #evoo, #cumin seed, #coriander seed, #cayenne, and S & P @425° for 10 mins, then tossing and adding 1 lb shrimp tossed with EVOO, #lemon zest, and S & P, and roasting 10 more mins. I like to use more shrimp and we had only a lb of broccoli. I roasted a lb of #brussels sprouts for 15 mins, added a lb of broccoli and roasted 10 more mins, added 2 lbs shrimp and roasted 10 mins. Tossed occasionally. Added fresh lemon juice after plating. Served over #jasmine #rice. This was delicious! We enjoyed it with a #mumm #sparkling Rosé. This was a great match. This French company makes sparkling #wine from California grown grapes using the champagne method. This had a great pink color. Spices from #penzys. I wore my Santa apron, a gift from the wife’s aunt. The red wreath is our neighbor’s, the lights and tree are ours, the crèche and Elf on the Shelf are from my in-laws. I read an article on discussion topics at Christmas dinner, and one funny topic was Elf on the Shelf: fun toy or dystopian tool to get kids used to government surveillance of your everyday life? I saw an article on #salmon from @prideofbristolbay in the NYTimes dining site. The company fishes #sustainable salmon, then filets, freezes, and ships. We got a 20 lb box of 16 1.25 lb filets. All individually wrapped, so you can pull 1 or 2 from the freezer as needed. Each filet should give you 3 servings. 1st, I did the low oven Mark Bittman recipe: cooked skin-side-up @275° for 20 mins on oiled parchment. Peeled skin off. Topped with a spoon of basil butter. Next, the wife did an opposite Mark Bittman recipe of high heat roasting with #herbs. She flipped halfway through. Both were delicious but her’s was tastier. She used #rosemary and #sage from our #herb #garden. A squeeze of fresh #lemon helped. From my cooking, I sautéed the peeled skin to crispy deliciousness, then broke into pieces for our dogs. They love salmon skin! I saw a Jacques Pepin recipe where he sprinkled salmon cracklings on a salad. The wife did hers for our friend who joined us for dinner. We had TJ’s biscotti for dessert and a delicious Sauternes from Whole Foods. This salmon was very tasty. The cost is about $16+/lb. The carbon footprint calculus is complicated: you get a bunch of salmon, so you don’t have to make multiple trips to the store or fishmonger. But you’ll have a large styrofoam container to discard. The 2d of our deli to go dinners from @zingermansdeli was #amish #chicken pot pie with mashed #potatoes and a large tossed salad. The pot pie looked like the ones sold from the freezer section of their deli. They are delicious! Tender, flavorful chicken, with ample vegetables. The crust is tender and flaky. We’d like a little less crust, but we saved some of the braided rim crust for our eager dogs. And the pot pies had potatoes in them, so we’d like a different side vegetable rather than mashed potatoes. The beef gravy seemed out of context: why beef gravy with chicken? It was bland. The fresh greens salad with cucumber and shredded carrot was very good. The dark top of the pot pies was my fault. I heated these in our toaster oven and they were too close to the top burner. But the top crust was still tasty! Not burnt. We’re big fans of all the Zingerman’s pot pies. Our sides at our French bistro dinner were smashed #potatoes and sautéed #spinach. Sautéed sliced #garlic in #evoo, added 3 (6 oz.) bags of fresh #spinach from TJ’s and tossed. The spinach collapses greatly. Invert the bottom layer with the garlic so it doesn’t burn, then keep stirring/tossing as the spinach shrinks. I spoon the spinach to the sides so the accumulated liquid can evaporate from the middle of the pot. Add S & P, and grated #nutmeg at the start. The potatoes were boiled, drained, mashed, mixed with buttermilk, butter, and S & P. We had a French Bistro dinner tonight at home. I cooked a variation of #steak au poivre (steak with pepper) using #ribeyes (instead of the traditional strip steak) from @sparrowmarket, coated with Kosher salt and cracked #pepper (4 pepper blend from #penzys) in #evoo. The key is cracking the peppercorns (in a mortar with a pestle or on a flat surface with a skillet). Ground pepper will be too hot. Cracked pepper is just right. Sauté in a hot skillet several mins per side. I removed to a plate, poured off the oil/fat, added brandy and flamed, reduced, added heavy cream and the accumulated meat juices, and reduced. It’s ready when it thickens. Be careful with the brandy. Too much will create an inferno. Start with 1/4 C. When the flames subside, scrape the browned bits from the skillet and add the cream. If you want to be fancier, sauté diced shallot in the skillet with some remaining oil before deglazing with the brandy. Saw this #elliekrieger recipe on the #washingtonpost food site for “aromatic chicken and chickpea stew” and tried it. Her recipe sautés 1 lb. boneless #chicken thighs cut in 1” pieces and seasoned with S & P in #evoo til brown, removes; cooks diced #onion, then minced #garlic, adds #cumin, #coriander, #cinnamon, red pepper flakes, diced tomatoes, #tomato sauce, #chickpeas, water, and more S & P. Simmers covered for 10 mins. Returns chicken and juices and cooks another 8-10 mins covered. Adds fresh baby #spinach you’ve chopped and cooks til wilted. Taste and adjust seasonings. I had 3.7 lbs chicken thighs, so I approximately doubled the other proportions. And we lacked spinach, so I used frozen #kale, which I added with the chickpeas. I added the chickpea liquid instead of plain water. We really liked this, but the wife thought the kale stems and chickpeas could use more cooking. You can serve as is, over rice, over pasta, or as I did with a subsequent meal, a shepherds pie variation where I spread mashed #potatoes on top and baked. We hosted one of the wife’s work group parties last Friday. @zingermansdeli provided the delicious food: Italian #meatballs (grass-fed #beef & #pork) with house-made #tomato sauce and Grana Padano #cheese (we got a small tub labeled #parmesan but we’re not complaining!); spicy #lamb skewers with a #cucumber #yogurt sauce; savory kisses (oven-dried tomatoes with blue cheese, Grana Padano, and #basil); #vegetable skewers of squash, zucchini, onion, tomato, and #mushroom; and #dates stuffed with blue and cream cheese and wrapped with applewood smoked #bacon. My sister sent savory cheese cookies: like cheese straws but round. I wore my favorite Christmas sweater. We corralled the dogs until the end, then released them to bother our guests. Everything was delicious! We provided #wine; a colleague provided other beverages. One guest brought a William Hill Cabernet Sauvignon. It was delicious! Great fruit, complex flavors, soft tannins. I didn’t eat much #sausage before meeting the wife, but she enlightened me with her delicious dishes using #italian sausage. In Arkansas, we loved #youngblood Farms breakfast sausage and used it 2-3 times a week for breakfast protein. They were in western Arkansas but stopped delivering to Little Rock. After our move to #annarbor, we’ve liked the breakfast sausage patties from @sparrowmarket. I saw an article in either the NY Times or Washington Post on making your own sausage. I tried to create the well-flavored sausage Youngblood made. I got 2 lbs of bulk sausage from @luckysmarket in #aa, mixed with S & P, #sage, #fennel seed, #thyme, and red pepper flakes. Formed into balls, flattened into patties, and sautéed. I really liked these. The wife liked the Sparrow sausage better. The former are more work, so there’s a trade-off if I want to make my own sausage patties. We both like the Sparrow sausage patties. If you want to do your own from scratch, grind pork shoulder with liberal S & P and spices. You can test your batch by frying a small piece, tasting, and adjusting your batch for seasoning if necessary. I love the fennel flavor in Italian sausage so I used it in our breakfast sausage. We eat most meals at home with food we prepare, but occasionally we eat out or get food out and eat in. I saw announcements from @zingermansdeli for delivered meals over the next several months, usually a different meal every week or two. You order by a deadline and pick up or receive free local delivery within a 2-3 day window (you schedule the day/time). Each meal comes with heating instructions. Buy 6 and get the 7th free. I ordered 7 x 2, so we paid for 12 (2 servings of 6 different meals, with the last ones free). I wanted to support local business and try Zingerman’s various dishes. Last night we enjoyed our 1st: #chicken #paprikash. The #amish chicken pieces were moist and tender and luxuriously swimming in a creamy, rich, flavorful sauce full of #paprika and #tomato. The nokedli seemed like boiled flour noodles; mild in flavor but great for soaking the sauce. The #roasted #vegetables (#carrots, #parsnips, #brusselssprouts) were crisp/tender with nice charred flavor. This was delicious! The servings were generous, even after I grazed on the leftovers after dinner. Our next meal is in 2 weeks. The others are in January and February. Last night’s dinner was a simple but flavorful #pork chop sauté. #natural pork from @luckysmarket #annarbor. I dry brined by liberally sprinkling #kosher #salt on the chops 2 hours before cooking. The theory is that salt draws water from the meat, dissolves, and is reabsorbed in the meat, making the end product juicer. I sliced slits in the fat side of the chops to prevent curling: sometimes meat will curl and you get browning only along the rim or in the center. This is not a problem when grilling or broiling because the heat hits the entire surface. I sautéed in #evoo & #butter over med-high heat. Most chops browned well. One curled and browned mostly in the center. Removed, spooned all but a T or 2 of fat out of the skillet, sautéed sliced #shallot and #garlic, deglazed with dry white #wine from TJ’s, added chicken broth, reduced, added heavy cream, #dijon and coarse grain #mustards, and reduced a bit more. This flavorful sauce is great with pork, chicken, beef, and salmon. Sometimes we are like Goldilocks: too hot, too cold, just right. Or too strong, too bland, just right. I cooked #swordfish once and planned to have the leftovers another night. The wife diplomatically offered to arrange fish tacos. Tortillas, limes, avocado, fish, sriracha sauce, etc. She later confessed to disliking the strong swordfish flavor. Her preparation diluted the strong swordfish flavor and made a very tasty dinner. I recently cooked mahi mahi simply with S & P, garnished with a #basil butter ball (I make #herb butter in the food processor and freeze in small containers) and some #lemon juice. This was too bland. So I improvised for leftovers based on her inspiration but in the opposite direction. Heated #cumin, #coriander, #chili powder, and #cayenne in #evoo to bloom the spices. Warmed and coated the leftover fish in the flavorful oil on both sides. Heated the #tortillas (these are from @luckysmarket #annarbor and the best I’ve found - thicker and heartier). Added the fish, #avocado, brown rice, black beans, #montereyjack #cheese, and #lime. This was a definite improvement. Another chance to channel Proust and the Importance of Being Ernst. I got some frozen Ernst #chorizo #pork #sausage from @argusfarmstop on Packard and #lamb chops from the @westsidefarmersmarket this summer. We previously enjoyed Ernst Farms pork chops from Argus. I sautéed the chorizo in a bit of oil and broke into crumbles. The sausage was well flavored and not fatty. I drained, scrambled some eggs, and combined. Later I put both in a #tortilla with #avocado and #montereyjack cheese. We really liked the well flavored sausage. I sautéed the lamb chops in #evoo in our large #scanpan skillet to brown on both sides, drained the fat, deglazed with dry red wine, and reduced. The lamb was delicious. The sister and BIL visited Wednesday and Thursday. I took them to lunch @savas_ann_arbor - the same place I took them in their last visit in May 2017. My sis got the Caesar salad with salmon. I got the spinach - artichoke salad with shrimp. My BIL got an omelet with hash browns. Delicious as usual. Service perfect as usual. That night we attended the great performance at #hillauditorium of Wynton Marsalis and the Jazz at Lincoln Center group. We subscribe to @umspresents and attend a few concerts a year. We chose this one and my sis got tickets after we mentioned it. This was a great concert. They played some familiar holiday tunes with solo interludes from trumpets, trombones, and saxophones. The piano, bass, guitar, and drums added background. The vocalists were outstanding. Veronica Swift has a deep, rich voice. Vuyo Sotasce has a vibrant voice. He’s here on a Fulbright Scholarship. I don’t miss an opportunity to tout my former home state, so here’s some background: J. William Fulbright was president of the Univ. of Arkansas. His mother was a newspaper publisher who criticized state powers. The latter fired the son. Fulbright then ran for and was elected to the US House, then the US Senate (defeating Sen. Hattie Caraway - the 1st female elected to the Senate). He authored the legislation passed in 1946 funding educational exchange: US students could study overseas and foreign students could study here. He has 2 big demerits. When Democrats lost control of Congress during Pres. Truman’s term, Fulbright suggested Truman resign (as would happen in parliamentary systems). Truman called him “Half-bright”. And he signed the Southern Manifesto opposing school integration. He ended his senate career opposing the Vietnam War as chairman of the Senate Foreign Relations Committee. The U of A’s arts and sciences school is named after him, as is an elementary school in Little Rock. His scholarships are a great legacy. Thursday we lunched @zingermansdeli.
