Tiny snapshot of the presentation I gave today at the Central Florida Earth Day fest. Tried to answer the core question: how do we take something as personal as food and catalyze change to improve broader public and planetary health? (in 60 minutes or less) Admittedly, I am not an expert on the planetary part, but good news for all: the solutions to our diet-related public health crisis intersect with many of the solutions to improve planetary health! So what solutions did I propose? The usual. More produce, fewer processed foods. Increase health-promoting foods, minimize disease-linked ones. Advocate and campaign for systems-level change. Individual change is huge and important, but making change beyond ourselves (institutions & policy) has much higher impact. BIG problems require BIG solutions. We have since got some amazing feedback on different ways to do this from this beautiful community! 👏🏼 It can be hard with holidays like Easter - to be involved ... without the plastic. But there are lots of good ideas out there!! Making your own chocolate eggs and wrapping them sustainably for the hunt, getting a basket from an op shop to repurpose for Easter, decorating with natural materials and of course just downsizing all of it really! Making these eggs with my son was my favourite part of Easter! He loved it and it was exciting for both of us to experiment and see what colours we could get! This was made using spiralized cucumber, a spring salad mix, beets, mango, dates, avocado, pumpkin seeds and sprouts all topped with a drizzle of coconut aminos and lemon 🍋 . One of our daughters thought I had colored Easter eggs without her 🐰 but these colors are all natural. We know that dark chocolate is one of the richest sources of antioxidants, in particular flavonols and polyphenols. One of the polyphenols found in chocolate is called proanthocyanidin and its loved by butyrate producing gut bugs (good guys) like Akkermansia muciniphila. How amazing is that! Abso-freaking-lutely manic day today in the cafe. Just got in having pretty much not sat down all day. Our busiest day of the year so far having done 226 covers. Thankfully I had time to make the chef and I guacamole on sourdough toast with poached eggs before the masses arrived. Haven't eaten anything else today though. Just haven't had time. We absolutely love vege gyoza so well definitely be making this! #repost @alexafuelednaturally • • • • • MOST PERFECT VEGAN GYOZAS ✨ Recipe: (Makes about 30) Ingredients: GYOZA 30 store bought gyoza wrappers (I buy from asian market in the freezer section) 1/2 a block firm tofu  2 cups (cremini or stiitake) mushrooms, chopped  2 cups Chinese cabbage, thinly chopped  4 green onions, thinly sliced  4 cloves garlic, minced  1 inch piece fresh ginger, minced  2-3 tbsp soy sauce or Tamari 1 tbsp sesame oil  salt if needed  FOR FRYING GYOZA 1 1/2 tbsp avocado oil 1/4 cup water  SAUCE  3 cloves garlic, minced 4 tbsp soy sauce or Tamari 1 tsp sesame oil 1 tbsp Sriracha  1 tbsp cane sugar or pure maple syrup juice of 1 lemon  OPTIONAL GARNISH  Sesame seeds  Green onions Cilantro  Make filling: 1. Peel and mince garlic and fresh ginger. Then thinly cut green onions.  2. Remove the core of the cabbage (the bottom hard part) leaves and cut into very fine shreds. Then cut mushrooms into small pieces. 3. In a large pan add 1 tbsp sesame oil then sauté ginger and garlic for 3 minutes. Then add green onions and cook for an additional 2 minutes. Then add mushrooms and cook for 6 minutes.  4. Take tofu out of package and wrap in 2 paper towels. Gently squeeze the tofu releasing the extra moisture. Then using your hands crumble the tofu into the pan. Making sure to break up any of the bigger pieces. mix to combine and cook for 3 minutes. 5. Add cabbage and cook for 2 minutes or just until cabbage begins to wilt. Pour over 2-3 tbsp soy sauce and mix to combine. Taste the mixture and adjust seasonings to your liking adding more soy sauce if needed or an optional pinch of salt. 6. Turn off heat and transfer the mixture to a large bowl and let cool for 15 minutes. Making the gyoza: 1. Take a gyoza wrapper and use a teaspoon to take a small amount of filling and put it in the center of the wrapper. Dip one finger in a bowl of water and draw a circle around the outer 1/4” of the wrapper with your wet finger until it’s wet all around. ***recipe continued in comments OR could be found in Fuelednaturally.net"

Cooked up this #whole30 dinner (also served with a side of @tasteslovely paleo/whole 30 potato salad-YUM) while the kiddos and Mike dyed Easter eggs on our patio table. I don’t know why it took us five years to realize dying eggs is a great OUTSIDE activity. 🤷‍♀️ P.S. If they can’t see the color they won’t refrain. When they are almost done and admit they love it show them the color! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Give it a better name than “tropical transfusion” haha call it green machine, or green gummy bear, or after their fav super hero. Add a claim like, this is going to make you have super vision! Before you know it they will be requesting the green gummy bear smoothie! 😜⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Oh, one more thing I did with my kids, was level up the greens over time. How many minutes do I need to run to burn off my Easter chocolate? Who cares! Life’s too short to be solely focused on what we can’t eat, instead how about we start focusing on what we should be eating to make us feel good. Stop buying in to those stupid posts about how many calories you need to burn to work off your Easter eggs and start focusing on what foods make you feel energised and make you want to be active. Start focusing on all the foods you can and want to eat opposed to restricting and dieting. My friend @lm_nutrition set a challenge of eating 5 servings of vegetables everyday, which I just love- focusing on all the delicious veggies in season and how to make them “hero’s” on my plate is what I’m all about. Let’s do this- stop this diet or restrictive culture and start enjoying delicious healthy food. Does that mean you can’t have your choccie eggs- hell no! You want them, you have them, make sure you enjoy every damn mouthful and don’t feel an ounce of guilt. The best tip I have though is enjoy them slowly and check in with how you feel after.

Well... HELLO there 🤗 how I’ve missed you my — squishy, bagel-y, everything burger bombshell beauty💃🏻 🥯 🍔. . . My idea of treat yo self, as of late. 😍🤤@traderjoes GF Everything Bagel, @drpraegers California Veggie Burger, 🥑 love + @traderjoes Almond Mozzarella Style Shreds. Definitely has me in the feels right now 🥰 Growing up vegetarian, veggie burgers were pretty much a daily thing for me. Plant based subs have come a long waaay since then🍔🌮🍕🍦. . . Last week I went on a fast —- just medicinal green juice detox blends for 5 days and then incorporated solid food in the way of only vegetables, fruits and pure (unsweetened) almond milk... that’s it!. . . I’m trying to eliminate coffee, alcohol and processed foods for the most part. Those will just be the other 10%.. 90/10 - because balance 👈🏻 7 days in on vegan eats... & I’m pretty stoked on this melty, gooey, rich deliciousness. This is so NOT what I’ve been eating lately but what I definitely need to get back to! #backtothebasics My diet has not been the best over the last several weeks and I can feel it 🥴 Our birthday season is officially over (all 4 kids have birthdays within a 2.5 month period 🤪 not to mention the #yolo way of life for Spring Break) and it’s time reign in the clean eats once again. When I eat poorly I crave more junk and I can definitely feel a change in the way I think about myself and treat others! Good morning! Do you have mornings when you are too busy for a sit-down breakfast but you want to eat healthily?
