Hello everyone! I am back with another #delicious, quick and easy recipe to #celebrate #chinesenewyear! I am teaming up again with @hollandandbarrett to bring you the second #eatwater dish which is Chilli & Lime Aubergine with #rice! #yum! - The Eat Water Slim Rice is totally #gluten, #fat, #sugar and #wheatfree and they also are totally #carb-free, so they’re a great addition to a healthy lifestyle. I was super excited (and intrigued!!) to use it as I’ve never tried it before, but I was really impressed with the texture, taste and how easy it was to use. It definitely took on the flavours of the chilli & lime! - Here’s the recipe: Ingredients: - 150g aubergine - 1 tsp crushed garlic - 1 tsp ginger paste - 1 lime (zest and juice) - 1 tsp red chilli (chopped finely) - 10g wholemeal plain flour - 1 tsp coconut oil - 1 tsp honey - 4 spring onions - 1 packet of Eat Water Slim Rice Method: 1. Cut the aubergine into medium-sized chunks and add to a mixing bowl. 2. Add the garlic, ginger, lime (zest and juice), chilli and flour to the bowl and stir well. 3. Heat the coconut oil in a frying pan. Add the aubergine mix and cook for a few minutes on a medium heat to soften. 4. Drizzle in the honey and add the spring onions. Cook for a further few minutes. 5. Heat the rice in the microwave and serve alongside the cooked aubergine. 6. Optional: finish with some extra chilli and coriander. #myhb #slimrice #food #ad

Did you know this year is the year of the #dog?! Do you know what your #chinesezodiac sign is? I was born in the year of the #monkey! - The first of my two #dishes is a #delicious and #healthy Sticky Mushroom and #noodle #stirfry! This #recipe is super quick and easy to make. The #eatwater #slimnoodles are totally #gluten, #fat, #sugar and #wheatfree and also #carbfree, so they’re a great addition to a #healthylifestyle. - Here is the recipe: Ingredients: - 150g portobello mushrooms - 1 tsp #coconut oil - 1 tsp crushed garlic - 3 tbsp light soy sauce - 1 tbsp teriyaki sauce - 1 tsp lemon juice - 4 spring onions - 1/2 red pepper - 1 packet of Eat Water Slim Noodles - Optional: sesame seeds Method: 1. Slice the mushrooms into large chunks (they will soon shrink once they are cooked!). Pop them in a bowl and add the garlic, soy sauce, teriyaki sauce and lemon juice and stir, ensuring that every mushroom is coated. Set aside to marinate for 5 minutes. 2. Heat the coconut oil in a saucepan on a medium heat. Finely slice the red pepper and roughly chop the spring onions. Add them to the saucepan and cook until soft. 3. Add the marinated mushrooms to the saucepan and simmer on a low heat until the marinade starts to reduce and become sticky (this should take a few minutes). 4. Heat the noodles in the microwave, before serving alongside the sticky mushrooms. 5. Optional: sprinkle sesame seeds over the dish to finish. #myhb #slimnoodles #food #ad

Tried this Slim Pasta tonight. Not in a weight loss effort but because it has 8.4g carbs per 100g so is much better for diabetics. Can’t say I’m overly convinced, I was hoping to love it and found it just OK.
