Tempeh Veggie Stew 🥙 After a long Easter weekend with lots of BBQs and dining out, I felt like a homemade vegetarian dish last night. I fried some onions and garlic with tempeh, zucchini, eggplant and mushrooms. Added a little bit of tomato paste and olive oil and topped it off with some leftover Ricotta I found in my fridge. A portion of whole grain spelt pasta aside. Done in less than 15min! More delights from the streets of Jerusalem. Jerusalem bagels are more of an oval shape and are usually covered in sesame seeds or za’atar spice, with a slightly sweet dough. They’re more for dipping in bowls of hummus rather than smearing with cream cheese. The smells of carts and stalls with freshly baked bagels made me feel constantly hungry as we wandered through the alleyways and I honestly think I could have eaten my body weight in them! I really like making healthier alternatives to popular treats. This is my Snickers bowl -- it's made out of yogurt, cocoa powder, dates and peanuts (I make a vegan chia seed version too).⁣ ⁣ Swipe to see how it compares to a regular small Snickers bar 👉🏼👉🏼👉🏼⁣ it's quite significantly higher in calories to a 15 gram Snickers bar, it's also (IMO) much more satisfying. I don't know about you but my sweet tooth is NOT satisfied with 15 grams of anything. The quality of macros and micronutrients is also a nice bonus.⁣ ⁣ The words of the century so far seen to be "calorie deficit" and it's driving me nuts. You're not going to achieve optimal anything if you feed your body nothing but protein powder and junk. You might lose fat in a crazy deficit but you'll also lose your mind and your health.⁣ ⁣ Focus on health, on what your body needs in order to fuel whatever it is you do every day of your life. ⁣ Yeah, treat yourself. Tried a new recipe this morning Coconut Flour Pancakes! These are gluten free and low carb.. But super coconutty and pretty filling so you don't need much...🍶 . This was made using 1/4 cup coconut flour, 1/8 t baking soda, pinch of salt, 1/4 coconut milk, 2T cold pressed coconut oil, 3 eggs, 1-2 t honey, 1/2t vanilla extract.... Maple syrup to taste..🍽️ . First mix the eggs.. Coconut oil and honey together. Add coconut milk and the vanilla extract then stick in the coconut flour baking sods and the salt. Cook and serve! Ps. In this one: Buckwheat kernels Oats Quinoa flakes Almonds Raisins Coconut Dried apples Puffed amaranth Honey I soaked the buckwheat and re-dehydrated it prior to the whole process, threw everything else onto the tray, stirred through a few tabs of honey and then cooked it on 100degs for a couple of hours, allow to cool and break it up into little pieces. Breakfast this morning was @deliciouslyella Bircher muesli warmed on the stove with @alpro unsweetened almond milk and water. Then off heat I added @twochicksproducts egg whites and @formnutrition vanilla vegan protein. Topped with warmed berries and @sainsburys natural almond butter 😋

Toast toppings-I get asked at work what can I eat for breakfast or what can I give my kids. Some find there breakfast can get a bit boring and never know what to put on toast other than your common spreads. Breakfast doesn't need to be boring eat something that will keep you happy, full and satisfied. There's no right or wrong breakfast but you can certainly play around with a variety of colourful toppings-hummous and tomato, cream cheese and fruit, nut butter and banana or pears and avocado and tomatoes. Try a toast topping and let me know your creations! Happy Thursday!

Étant en manque de la fameuse galette des rois, j’ai eu envie de préparer mon almond bowl ce matin😍 . . . Pour réaliser mon almond bowl, mélangez 170g de compote de pomme ssa, 30g de lait végétal neutre, 30g de son d’avoine, 10g d’amande en poudre, 1/2 cc de levure chimique et 1/2 cc d’amande amère. Mettez votre bowl au microonde durant 2min et voilà, finito🤤🍎🥛 Rajoutez des amandes effilées, des amandes entières et des graines de chia blanc🌰🥜🥧 . . .
