Made into mini muffins in a basket for our holiday table? 🧺 Or with a touch of cream cheese frosting for dessert? 🧁 All 3??? Dropping the recipe right here in case you haven’t had a chance to try these yet 👇 A huge ✨Thank You ✨to everyone has already made them and returned rave reviews. Wishing everyone a wonderful Saturday ⚡️ . . . ✖️RECIPE Vegan Pumpkin Muffins 3 flax eggs, 1 Tbsp ground flax seeds soaked in 9 Tbsp warm water 1 cup pumpkin purée 1/3 cup oil 1/2 cup maple syrup 1 1/2 tsp pumpkin pie spice 1 tsp baking soda 2 tsp baking powder 1 1/2 cups spelt flour or 1 1/3 cup GF 1:1 flour blend Preheat your oven to 350 degrees. In a large bowl mix your flax seeds and water. Set aside for a few minutes while you gather your other ingredients. Add pumpkin, oil, maple syrup to the flax. Mix well. Then add remaining dry ingredients and stir until just blended. Oil your muffin tin or line with parchment and fill almost to the top. If you like a sweeter muffin, sprinkle with raw or coconut sugar and roasted. Bake for 15-20 minutes. chocolate chip pumpkin pie🥧 I got this recipe from @hersheys and this will be another dessert making an appearance on my grandma’s thanksgiving table! ingredients: 1 graham cracker crust (straight from the container cause #lazy) 1 egg 1 can pumpkin 1 can @nestle sweetened condensed milk 2 tsp pumpkin pie spice 3/4 cup chocolate chips whipped cream topping directions: 1. preheat the oven to 350 degrees 2. brush crust with egg 3. blend remaining egg mixture (I poured a bit of the egg into the mix cause there was too much sitting at the bottom of crust) with pumpkin, sweetened condensed milk, and pumpkin pie spice 4. fold in 1/2 cup chocolate chips 5. melt the remaining 1/4 cup in the microwave and incorporate into the mix 6. bake for 50 minutes 7. top with whipped cream and enjoy😋 . . . . . . . #pumpkinpie #eatwellbewell #moderation #thanksgiving #thanksgivingdesserts #foodphotography #nicolesnutrition

Why not aloo palak South Indian style?? 🙂 . . Ingredients to cook palak 1.5 cups palak tightly packed & chopped roughly 0.25-0.5 cups water salt to taste 1/8 tsp sugar to grind raw: kurma masala 1/2 inch cinnamon 1 no cardamom 2 no cloves 1 inch ginger 4-5 cloves garlic 1 tsp cumin seeds 1 tsp fennel seeds 2 no green chilli 1 tbsp cashew 1 tsp khus khus 1/2 cup coconut 2 no tomato chopped for making kurma 3 tbsp oil 1/2 cup onion finely chopped 1.5 cups potato cubes 1/4 tsp turmeric powder 1/2 tsp chilli powder 1/2 tsp coriander powder salt to taste 1-2 tbsp coriander leaves chopped finely Instructions cook the chopped spinach with water, salt and sugar until it shrinks. let it cool completely and grind it to a fine paste. grind all the ingredients mentioned under ” to grind raw” to a super fine paste and keep it ready. heat oil and fry chopped onions until brown. add the masala paste to the onions and fry for 2 minutes. to this, add potatoes, salt, turmeric powder, chilli powder, coriander powder and water. mix well, close and cook until the potatoes are soft. 15-20 minutes open and add the spinach puree. mix well. close and cook again for 5-10 minutes until oil leaves out. open and lastly add chopped coriander leaves. turn off and serve hot with chapathi /bread of your choice . . . . . . . . . . . . . #aloopalak #kurma #southindian #southindiancurry #indianfood #youtuber #indianyoutuber #recipevideos #cookingvideos #plantbased #foodfeed #spinach #whatsfordinner #thefeedfeed #indianfoodblogger @thefeedfeed @foodtalkindia @huffposttaste @hautecuisines #recipeoftheday #foodvideos #igerschennai #dinnerindia #vegeterianrecipes #eatwellbewell #healthycooking #foodiegram #foodgasm #foodporn #foodstagram
