Happy Monday! You’ve asked for it...here’s the dish I made yesterday to honor my dad on father’s day. I love his fried rice recipe as it included bell peppers and scallions (not pictured). Made it so tasty and nutritious. I also made a shrimp stir fry for the first time with yummy seasonings. Wanted something fresh & cool so added sliced roma tomatoes as a side. I’m so satisfied right now! Who said healthy can’t be yummy?

The quickest supper! Chilled carrot, zucchini and celery soup (simmer the veggies with garlic and vegetable stock for 15 minutes, then blend, season to taste and refrigerate) topped with micro greens straight from the farmers market. Not a hearty, filling meal but in this weather a little nourishment and a lot of liquid is all you need. 👌🏻

Monday and back at the healthy train after a weekend with a few indulgences. (Pizza. Fried zucchini. Beer.) Started with a chocolate happy tummy bowl. Followed by a just ok “salad” from @costco It was eh. (The hubby liked it, and the ingredients are pretty clean, so he will be having it again). There was. It enough lettuce. The salsa was bland. And a clear lack of veggies. I was just underwhelmed. Glad to have some baby carrots on the side. Tried a new to me snack bar. I didn’t even know that @nakedjuice had snack bars! It was yummy. Will be getting these again! Came home to make a ton of veggies and get some much needed green in my belly. Grilled onions, squash and mushrooms over spinach and parsley with chopped cucumber and a balsamic drizzle. Open faced tuna salad sandwich: Mustard. Muenster. Tomato slices. And yeah. I’m still hungry. So there will be a snack bowl later. (A smaller, well portioned snack bowl). What Costochondritus taught me about #slowingtheeffdown⁣ ✨ A few weeks ago, I started getting sharp pain in my ribs after an ab workout. After two days, I felt like I was being stabbed. After 4, I felt I must be having a heart attack. I couldn’t breathe properly. I couldn’t eat. I couldn’t sleep.⁣ I went to Urgent Care and was promptly told I had Costochondritus (ie, heavy inflammation of the intercostals), which accounts for 30% of people going to the ER thinking they are having a heart attack.⁣ The doc told me no lifting over 10lbs for 6-8 weeks and no side bends or twisting.⁣ ⁣ Oh hell no. ⁣ So I rested another day, went back to the gym, tried to workout, and inflamed myself more.⁣ Rested two more, tried to do seated bicep curls and basic planks.⁣ I couldn’t. I couldn’t do what I wanted to do because of a stupid rib. So obviously, I must work harder right?⁣ ⁣ ✨No. This is when it’s time to get intuitive. My body was screaming for a better way of training, and more importantly, a better way of recovering. I’ve worked out about 6x in the past three weeks. Yesterday, I took a nap and meditation from 2-2:42pm instead of going to yoga because the pain was so strong. And I didn’t feel guilty. I needed it.⁣ ⁣ ✨When your body lets you know it needs to slow down, give it that chance. Honor it and allow it to reset or heal. ⁣ Take the time to let yourself know you hear the message, you respect it, and you love yourself enough to give yourself the gift of time. The weights will be there tomorrow.;)⁣ ⁣ ✨Peace out, humans. Imma eat an avocado. 🥑

Marinated the chicken breast for 1hr punctured holes to allow marinade to absorb faster. Super simple stir fry for dinner tonight 💥 Chicken breast, bell pepper, pineapple, and white rice with a coconut amino-chili-ginger sauce

My take on some kind of potatoe salad. To be honest I have no clue what potatoes salad tastes like 😂as I have been allergic to eggs since I was little Potatoes (I kept skin on) boiled but not mushy . Low sodium turkey bacon . Low sodium dill pickles . Bunch of green onion . Made a "sauce" cut up the root ends of the teen onion and put in fry pan with some extra virgin olive oil. . Added ground pepper, apple cider vinegar, some while grain mustard, wee bit of syrup cooked until onions were soft . Mix into potatoes and turkey bacon .
