It’s been a hot second there instagram fam since I’ve posted! . All last week I worked at a retreat here on the big island which was incredible. . Not only did it give me a little break from IG, but it also gave me an opportunity to connect deeply with other people and myself - something I’ve been honestly craving for awhile. . Having connection and community is so very important, so nurturing, so healing which is one reason I’ve loved Instagram for awhile now. But there is a difference between this and real human face to face connection that is so special and not as common as it used to be. . If this is something you don’t have in your life, I encourage you to try and cultivate that in your life a little more. Put your phone down. Find gatherings where you can find likeminded people, go to a yoga class (if you feel physically strong enough), find a meditation group, even talk to people while waiting in line at the store! This creamy mushroom stroganoff takes me back! I loved my mother’s beef stroganoff and this plant-based version makes me so happy. I went a little crazy with almond flour crackers and siete tortilla chips on spring break last week.. sometimes you just need to let it go and eat the crunchy things. Right? Monnnddaayyy... As much as I hate meal prepping (& cooking in general 😂), it is SO worth it!! And I'm really thankful that my schedule allows me to NOT do it on the weekend 😅 Mondays are long and tiring (add workout & grocery shopping on top of meal prep, plus I like to do my once a week vacuum of the whole house after bc sometimes I’m an overachiever 😅) but I'm prepared for the week ahead, and I don't have to spend every day/evening going to the grocery store and figuring out what to make... That would be MORE exhausting! Planning ahead (at least a little) helps you to stick to your goals, save money (going to the store less), and have more free time in the end! 🙌🏼 *but like I’ve mentioned before, I don’t make complete meals for the whole week... a lot of it is simply PREP. It wasn’t just about calorie counting, starving ourselves, and exercising harder. In fact our first step was changing our nutrition. What if you didn’t have to starve yourself to reach your goals? Now that spring is insight! It’s great to lighten up our menu with yummy 😋 simple meals like these Beauty Rice Paper Spring Rolls! . So easy once you get the hang of rolling them and you can literally fill them with whatever you like! . 🥜 Peanut Sauce 🥜 . * 1/4 cup creamy peanut butter (sugar-free) * 1 Tablespoon hoisin sauce * 2 teaspoons soy sauce * 1 clove garlic, mashed * 1 teaspoon Sriracha sauce * 1-2+ Tablespoons warm water, or more as needed * crushed peanuts, to garnish . . 💕Spring Rolls💕 . .* 10 spring roll rice paper wrappers * 1 large 🥕 carrot peeled and julienned * 1 large 🥒 cucumber julienned (you can peel, but I don't) * 1/2 of a large red pepper🌶, julienned * 1/3 cup chopped purple cabbage 🥬 * 1 ounce cooked rice noodles/rice vermicelli (optional) * 1 🥑 avocado, sliced * handful fresh cilantro 🌱 (and/or mint, basil) * 5 large green lettuce leaves (romaine, butter, etc), torn in half🥬 * 4 radishes, thinly * sesame seeds for garnish (optional) 1. Whisk the sauce ingredients together. . 2. Pour warm water into a large bowl. Dip the rice paper wrapper into the warm water for 15-20 seconds one at a time. Immediately remove from the water and place flat on the counter. Pat the wrapper slightly dry. . 3. Fill the rolls: with a little of the veggies 🌶 noodles avocado 🥑 and cilantro 🌱on top of the bottom 1/3 of the rice paper. Lay 1/2 of a lettuce leaf on top. Careful not to overfill:) . 4. Roll everything up tightly– just like a burrito. To do so, gently pull up the bottom of the roll and roll over the filling. Then, roll and use your hands to tuck the filling in as you go. . 5. Voila! Portion control is extremely difficult, let's face it, but eating the right amount of food is incredibly important for good health and maintaining or losing weight. And it applies to healthy food, too. Portion control is actually the cornerstone of good nutrition – . . If you are unable to stop eating once satisfied, you can be left feeling guilty and uncomfortable. Such guilt and discomfort can make us see food in a negative light and cause you to restrict food. This restriction then creates feelings of deprivation and leads to more overeating, perpetuating a poor relationship with food and feelings of loss of control . To help control portions and form healthier eating habits, here are some simple portion control tips - . . * • Drink water 💦 before you eat – and this is because when you're dehydrated (and a lot of us are, esp in winter), than you're more likely to eat extra . * • Fill your plate with veggies 🌽 and 🥗salad first and eat these guys first . * • Adopt the palm 🖐 portion control method – it's the most stress-free way of starting any new eating regime no scales or measures just your hand as a reference tool, generally its 1 palm of protein for females, 2 palms for males, the tip of your index finger of fats for females and 2 tips for males and finally carbs, 1 fist for females and 2 for males . * • Hunger takes 20 – 30 MINUTES to set in so SLOW DOWN YOUR EATING, sit and eat mindfully, when you rush, food is less satisfying and your brain will just keep wanting more until it finds that 5th serving of baked potatoes with melted cheese at 19 minutes before fullness sets in 😂👎🏻 . .
