Today I joined a workshop where we collected wild herbs and then the lady who led the workshop cooked a 5 course chinese meal with them and we helped. Was really good and the food very tasty and quite light. The thing I’m loving most about eating intuitively is that I can eat a grilled cheese and smoked meat sandwich on rye and not worry or feel guilty about it. I had a small heel of old cheddar cheese and 3 slices of smoked meat to use up - it was either this or an omelette. The sandwich won out. And it was delicious. But I forgot to put some Dijon mustard on it. 🤦🏻‍♀️ #rookiemistake

I’m really loving these easy one pan meals lately! Especially the ones that bake in the oven, which means even less cooking 😏 this is a Salsa Chicken Bake! . INGREDIENTS: - 4 boneless skinless chicken breasts - 1/4 tsp each of cumin, garlic powder, salt, and pepper - 1 container of fresh salsa (about 12oz) - 1.75 cups low fat mexican cheese . DIRECTIONS 1️⃣preheat the oven to 375 2️⃣cut up the chicken into bite-sized pieces and lay them evenly in a glass baking dish 3️⃣ season with the cumin, garlic powder, salt and pepper evenly 4️⃣add the salsa on top and spread evenly and then too with the cheese 5️⃣bake on the middle rack for about 30 minutes, or until the chicken reaches 165 degrees . This was so easy to make! I served mine over cauliflower rice to keep it lower carb 👍🏼
