Time for some healthy food porn! I truly believe preparation is key to eating healthily (not to mention reducing family cooking anxiety, food waste and grocery bills), however I admit to liking my food freshly cooked. This grilled Barramundi, mashed pumpkin and Asian slaw took 15 minutes to make and was pot-free (praise the lord!). The Barra was cooked under the oven-grill, the pumpkin in the microwave (I then added some cinnamon) and the slaw is made of wombok, spring onions, nori and carrot dressed with low-sodium soy, EVOO and apple cider vinegar. I made this meal because I had to get the family in from school, kinder and work, fed, showered and out again in a short time. The prep? Skip take-out and make this instead 🍤😍 THAI-STYLE CHICKEN AND PRAWN FRIED NOODLES (PAD THAI) Serves: 4 INGREDIENTS 3 tablespoons Thai fish sauce 3 tablespoons tamarind paste 3 tablespoons light brown sugar ½ lime, juiced 4 tablespoons vegetable oil 2 eggs, beaten 2 chicken breasts, finely sliced 200 grams raw prawns, shelled and patted dry 2 spring onions, finely sliced 1 chilli, finely sliced 30 grams coriander, finely chopped 2 grams garlic, crushed 600 grams flat rice noodles, cooked 100 grams bean sprouts Handful roasted peanuts, roughly chopped Lime wedges, to serve PREPARATION Combine the tamarind, fish sauce, sugar, and lime juice with 1 tbsp water and set aside. Cook the eggs in 1 tablespoon of oil and set aside. Add 1 tablespoon of oil to the frying pan. Sear the chicken until golden and cooked through. Add the prawns to the pan, and cook for about 2 minutes or until they just turn red. Tip in half of the spring onions, half the coriander, garlic, and chilli. Cook for 1 minute until fragrant, then set aside Heat 2 tablespoon of oil in the wok, then add the noodles and bean sprouts. Stir-fry for 2 minutes until the noodles have separated and everything is heated through. Add the chicken, prawns, and tamarind sauce. Toss with the noodles until well-coated. To serve, scatter over the roasted peanuts, remaining spring onions, coriander leaves, and lime wedges.

My paleo take on one of my favorite meals of all-time 🙌🏽 ⠀ Chicken No-Marsala ⠀ Ingredients: ⠀ 2 skinless, boneless chicken breasts 1/2 cup arrowroot flour, for dredging + 1 TBSP for the sauce Sea salt and freshly ground black pepper 2 TBSP ghee (@fourthandheart) 2 oz thinly-sliced prosciutto 1 shallot, chopped 1 cup crimini mushrooms, sliced 1 cup chicken stock 1/4 tsp dried flat-leaf parsley ⠀ Directions: ⠀ 1. Cut the chicken breasts into 6 pieces. Using a rolling pin or a meat tenderizer, pound the chicken breasts until they are about 1/4-inch thick. ⠀ 2. Pat chicken cutlets dry with a paper towel. Season generously with salt and pepper. Dredge both sides of the chicken cutlets in arrowroot flour. ⠀ 3. In a large skillet, melt the ghee over medium-high heat. When the oil is hot, fry the chicken cutlets for 5 minutes on each side until golden, turning once. Remove the chicken cutlets and place on a large platter in a single layer. Set aside. ⠀ 4. Reduce the heat to medium and add the prosciutto to the pan. Sauté for 1 minute. Add the shallot and mushrooms, and sauté until they are softened, about 5 minutes. ⠀ 5. Add 1 TBSP arrowroot flour, and cook for another 3 minutes. Pour the chicken stock gradually in the pan, stirring as you pour. ⠀ 6. Add the parsley. Simmer gently for a couple of minutes until the sauce thickens. ⠀ 7. Return the chicken cutlets to the pan, continue cooking for 3 minutes. ⠀ *If serving with pasta, mix in the noodles and let the noodles absorb the sauce before serving. For this meal, I used @cappellos fettuccine. ⠀ *Omit the pasta if you’re making this a Whole30 meal. Instead, serve with mashed cauliflower and roasted vegetables.
