Well I finally watched the documentary film @cowspiracy on Netflix last night. I admit as I sit here developing new dishes for @theathleteskitchennz this film has caused me to pause for a minute. My experience of vegetarian or vegan cooking is not great. I had always intended to include a few vege options... but now I’m leaning to including an extensive plant based selection. This will be an interesting challenge for our team. I’ve always enjoyed documentaries on our food chain ever since reading an omnivores dilemma. Food for thought... admirably disturbed by this film

Enter:👉 Roasted pumpkin and eggplant salad 🍆 . Made with leaves (!), roasted pumpkin & eggplant, diced red capsicum & cucumber, crushed almonds/pepita/sunflower seeds; dressing of cold pressed avocado oil (ran out of EVOO), lemon juice, a little Manuka honey, and plenty of salt and pepper. . Heaps of texture, flavour and vibrant colours that scream antioxidants such as Vitamin C and quercetin. . How do you like your salads?? 🥗

When raspberries are in season, I usually take them along with blueberries and any other berry I can get my hands on and FREEZE them! Fresh berries are the best. When berries are in season they are more flavourful and more nutritious. I know it’s great to eat seasonally and we try to do this - but this can add some #variety to our cold winters. •••• How to Freeze berries: 1. Place parchment paper on baking sheets 2. Rinse berries and pay very gently to remove excess water but without crushing berries. 3. Place on lined baking sheet in a single layer and place onto a flat surface in your freezer. 4. Freeze for 30 minutes to 2 hours (until frozen through). 5. Use a spatula or flipper to remove berries and place into freezer bags (I try not to use plastic so if anyone has another idea for freezer bags please let me know). I use glass dishes and mason jars for other freezing but have not found a solution for these as of yet. 6. I sometimes measure small bags so I know exactly how much is in a bag (ie: 1 or 2 cups) so I can easily grab them for a smoothie or when I am baking. 7. The bags can then be stored in your freezer for up to 1 year! ••••⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ideas for using frozen berries: - Smoothies (of course) - Topping for oatmeal or I place them in the oatmeal once it’s cooked and heat a little longer to warm them up ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ - To make smoothie bowls - To bake with (I make crips with frozen berries all the time) - Topping for coconut or regular yogurt - Topping for granola - Used in beverages as ice - Eat right out of the bag - To make Chia Jam - To make a fruit sauce topping for ‘healthy coconut ice cream’ - To make raspberry cashew cream cheesecake - Used to make sorbet - Add to homemade vinaigrette’s (thawed) - Make a healthy syrup for pancakes - Sangria (what did I say that?!) •••• #freezeyourberries #eatrealfood #foodhacks #foodhack #savemoneylivebetter #savemoneyonfood #nutritionist #wellnessblogger #wellnesscoach #foodtips #fruit #fruitideas #frozenfruit #freezing #produce #liveyourbestlife #summeriscoming #summerfood #summerfoodprep #foodprep

I have not been doing a lot of cooking these days as seasonal illnesses and other life drama kept popping up in my week. Today I did what I like to do when I am feeling more energetic but have no desire either to read or write. I chop and prepare. I had both a few pieces of salmon as well as pork tenderloin and I prepared them separately but using the exact same marinade. This was in part because of ease, but mainly as I suggested this week not all stomachs were in equilibrium. So my only spices were powdered tumeric and grated ginger. However, I couldn’t do without my garlic, scallion and thyme. - Jamaican you know! I used Penney’s shallot pepper and my citrus salt and Coconut Secrets coconut amino sauce that replaces the soy sauce in this soy allergy home. Then I added some of my citrus syrup and coconut oil. If you are paying attention you will see a plate of orange peel - actually mandarin peel. We eat a lot of those and why throw out the peel and then buy expensive dried orange peel? So whether I cook one of these tonight is up in the air, but I am prepared, as even in my chopping stage today with garlic and scallion, I also chopped celery and a huge bag of broccoli. So my preparation is done if later I have any energy left. Or, maybe someone else will cook tonight? 🌞
