Mexican style stuffed potato: red bean, corn, red pepper, onion, cheddar, cilantro and herb & spices. Served with my favourite pickled jalapeños, spicy salsa and lime wedges. In a perfect world it should be accompanied with a few shots of tequila but hey- it’s too early for a drink🤪 What a treat, anyway😋 . . 🇵🇱 Trochę rozgrzewających klimatów w ten zimny i wietrzny dzień. SWEET POTATO TOAST 🍠🍞 . Guten Morgen meine Lieben 🙌🏻 . Heute hab ich frei, daher etwas mehr Zeit fürs Frühstück. Also gibt's endlich Süßkartoffel Toast 😋 So lange wollte ich den jetzt schon machen aber vor dem Arbeiten geht sich das leider nicht aus 🤷🏻‍♀️ . 1 große Süßkartoffel 🍠 längs durchschneiden, mit der Schneidfläche nach oben ins Rohr geben, mit einer Gabel einstechen und bei 180-200°C 🌡 so lange ins backen bis die Kartoffel gar ist (ca. eine halbe Stunde). Je 1 EL PB2 🥜 mit Wasser angerührt, einmal + 1 TL Kakaopulver 🍫 Einen Sweet Potato Toast hab ich mit PB2 Cream + Birne 🍐 + PB2 Choc Drizzle + Erdnüssen 🥜 belegt, auf den anderen kamen PB2 Choc Cream + 1/2 Banane 🍌 + PB2 Drizzle + Kakao Nibs. Wirklich extrem lecker, saftig, süß und glutenfrei 😋 Dazu hab's natürlich wie immer Kaffee ☕, ohne geht's bei mir nicht 😁 . . . Cut 1 big sweet potato 🍠 into half and bake about 30 minutes at 180-200°C 🌡 Mix 1 tbsp PB2 🥜 with water each + once add 1 tsp cocoa cocoa powder 🍫 Topped with pear 🍐 + 1/2 banana 🍌 + PB2 (choc) drizzle + cocoa nibs + peanuts. Perfect for any upcoming Halloween celebrations 👻 Full recipe below 🎃👻 Made using @orgran_healthandnutrition Buckwheat Pancake Mix so they’re super easy to mix up, whilst being vegan and gluten free 👌 I often bake pumpkin and freeze it in portions to add to meals and other recipes 🎃 so make sure you get on that, as you can’t eat enough pumpkin at this time of year 👻 Pumpkin Pie Pancakes (Serves 10) 375g Buckwheat Pancake Mix @orgran_healthandnutrition 1 cup pumpkin puree (bake pumpkin and purée) 200ml water 60ml oil 3 egg replacers (3 tsp Orgran egg replacer mixed with 45ml water) 2 tsp cinnamon powder 1 tsp ginger powder 1/2 tsp nutmeg 1/4 tsp cloves Pinch of salt 2 tsp vanilla extract 1/2 cup natural sweetener of choice (eg rice malt, maple, coconut sugar, xylitol) Mix all ingredients in a bowl until just mixed Heat a frypan with a little coconut oil and cook pancakes for a couple of minutes on each side. Vegan Doughnuts🍩 By proper_tasty INGREDIENTS: 50 grams vegan margarine  120 millilitres soy milk 2 tablespoons sunflower oil, plus 1 litre extra for frying 250 grams plain flour 100 grams caster sugar 1 teaspoon baking powder 1/2 teaspoon salt PREPARATION: 1. Gently melt the butter over a low-medium heat. Add milk and 2 tablespoons of sunflower oil and mix together. Once combined, take off the heat and set aside. 2. In a separate bowl, combine the flour, 50g of the sugar, baking powder and salt with a fork. Make a well in the centre and pour in the butter mixture. Combine gradually until a thick dough forms.  3. Using your hands, roll dough into little flat balls and with your thumb, press a hole in the centre of each doughnut. (You may need to flour your hands for this part to avoid getting sticky!) 4. Heat up the litre of oil in a pan. To know when it's hot enough, fry a little bit of bread in the oil. If it goes brown and floats to the top, in 45-50 seconds the oil will be ready! Gently lay the doughnuts into the oil using a spatula. Fry for about 3-5 minutes on each side, until golden brown. 5. Transfer the doughnuts onto some tissue paper to soak up any excess oil. Then roll into a bowl of the remaining 50g sugar.  6. Share with a friend!☺👍
