Who else wants @cookingforpeanuts Stewed Tomato Chickpea Curry?! 🤤 Reposted Recipe below! 🍅Recipe: Sauté 1 small yellow onion (small dice) until soft and starts to brown, about 5 minutes. Add 2 minced garlic cloves, 1 tsp ground cumin, 1 tsp coriander, 1 tsp sweet paprika, 1/2 tsp red chili flakes. Sauté another 30 seconds before adding 1 tbsp tomato paste. Mix well while heating for another minute. Add 1-15oz can stewed tomatoes. Simmer about 10-15 minutes, adding broth or water if gets too dry. Blend sauce until mostly smooth with a few chunks remaining. Return to stove. Stir in 2 cups cooked chickpeas. Add coconut milk gradually from 1-15oz can until desired creaminess is reached. (Don’t need to use all of it.) Cook until heated through. U can basically make this meal w any roasted vegetables and it will be really good :) the squash w/ the tahini is a really good combo in this👆 - Ingredients: - 100g pasta - 1 Can of chickpeas - butternut squash (roasted) - some fresh parsley - Sauce: 30g tahini, juice of 1/2 lemon, salt & pepp+ pasta water until the right consistency. - I’m gonna update caption w macros in a little don’t have time to calc rn lol, but yeah hope y’all had a great day :)

Sharing this Whole30 Instant Pot Chicken Stew that I made this past weekend and have been having as my lunch at work this week 🤗 this is the recipe that made me fall in love with my Instant Pot 🥰 I knew I wanted to make something warm and cozy because we’ve been having freezing temperatures and snowstorms and this stew fit the bill 💯 I added chicken broth, chicken breast, caramelized onions, carrots, red potatoes and a handful of spices into my IP and after only 12 minutes of pressure cooking it was done! BIRTHDAY SEASON 🎂 | Has it been a long enough waiting period since the start of the new year to talk about cake again? 😉 Because if I’m being honest, we haven’t really stopped yet with the sweet treats, as we are in the midst of birthday season here. 🎉🎂 It began with my birthday right after Christmas, followed by my younger son’s birthday a week into the new year, & then we get a brief reprieve until late February, when my older son turns 14! 😳 . We celebrated my 9-year-old’s birthday last weekend with a small party with his closest friends, a platter of his favorite snacks (stay tuned for more on this soon), & this Cookies-and-Cream Cake, which has become the most-requested birthday cake in our family since I made it last year when my son turned 8. 😋 Once again, I used my go-to chocolate fudge cake recipe, adapted from America’s Test Kitchen/Cook’s Illustrated’s (@testkitchen) Baking Ilustrated cookbook, paired with a cookies-&-cream white chocolate & cream-cheese frosting recipe from Tessa Huff’s (@stylesweetdaily) Layered cookbook. Last night I made this fried broccoli and kale with garlic, cumin and lime. A new recipe I was trying out from @ottolenghi Simple. It was so good that even my kids devoured it, but I think what made it taste extra special to me was serving it on my late granny’s dinner plate that she received as a wedding gift.

If you haven’t noticed yet, we love baking in our house! Our oldest son has a sensitivity to gluten and I have a weird relationship with milk products-too much 🐄 will make my nose run like a 🚰 and my skin red(er). A while ago, I discovered these two substitutes that can be used in almost any baked good we make with no difference in texture OR TASTE🙌🏻. For gluten intolerance: substitute regular flour with @bobsredmill Gluten Free/Dairy Free 1 to 1 baking flour. For a butter substitute, we use @earthbalance vegan buttery sticks. Oh!-and these muffins are blueberry banana and delicious! ➡️ •2 cups @bobsredmill 1 to 1 baking flour •2 eggs •1/4 tsp almond extract •2 tsp baking powder •1 C. sugar •3/4 tsp salt •2 TBSP pink Himalayan sea salt •1 1/2 tsp vanilla •1 stick @earthbalance vegan buttery stick, softened •1/2 cup almond milk •1 1/2 C. blueberries •1 mashed banana • 1. Whisk: gluten free flour, baking powder and salt. 2. In separate bowl, beat “butter” and sugar. Add in eggs one at a time and then the almond and vanilla extract. 3. Gradually add flour mixture, alternating with almond milk into the bowl. 4. Fold in blueberries and mashed banana. 5. Preheat oven to 375. Add cute 🧁 liners to your muffin pans and fill 3/4 full of batter. 6. chimichurri pasta with mushrooms, avocado and arugula 🥑✨ hands down one of my favorite comfy meals to make 🤤🙌🏼 ~ chimichurri + cremini mushrooms (+ olive oil) + avocado chunks + fresh arugula + red pepper flakes + hemp hearts + fresh parsley || #feedyourglow . chimichurri (2-3 cloves garlic, peeled and crushed + 1/2 jalapeno pepper, seeded and chopped (optional) + 1 small shallot, peeled and chopped + 1/2 cup fresh parsley leaves, packed + 1/2 cup fresh cilantro leaves, packed + 1-2 tablespoons fresh oregano, leaves only (or 1 teaspoon dried oregano) + 2 tablespoons lemon juice, freshly squeezed + 2 tablespoons red wine vinegar + 3/4 cup extra virgin olive oil + himalayan pink salt and black pepper, to taste . place garlic, jalapeño, shallot, parsley, cilantro, oregano in food processor then process/mix until combined. add remaining ingredients until smooth, scraping sides as needed. thin with filtered water until semi-thick or until desired consistency. taste and adjust flavor, as needed. store leftovers in an airtight glass container and refrigerate up to 4-5 days 💫

Found myself daydreaming about my girl @kalejunkie ‘s Life Changing Chocolate Chip Tahini Cookies, but remembered I was all out of almond flour. . 🤦🏻‍♀️ so I thought to myself, why not get wild and use coconut flour?!😜 {and add a few other ingredients🥳} Here’s how I whipped up these TAHINI COCONUT FLOUR CHOCOLATE CHIP COOKIES🥰 Ingredients: -1/2 cup coconut flour @traderjoes -1 1/4 cup coconut oil or butter, melted @traderjoes -1/3 cup tahini -1/2 cup coconut sugar @traderjoes (raw honey, agave, or maple syrup might also work!) -1 egg -1 teaspoon vanilla -1/2 teaspoon baking soda -1/2 teaspoon sea salt + more for sprinkling (optional) -1/2 cup dark chocolate chips Directions: 1) Preheat your oven to 350° F and line a baking sheet with parchment or a baking mat. 2) In a large bowl mix melted coconut oil, tahini, and coconut sugar until well combined. Add the egg and vanilla and mix again. 3) Add coconut flour, baking soda, and sea salt. Mix in with a spatula or wooden spoon, then stir in the chocolate chips. 4) Form cookies with a cookie scoop and place them on the baking sheet. Bake the cookies until the centers are just set - about 10-12 minutes & ENJOY!😘

ЖЁЛТАЯ ОВСЯНКА? Нет, это не нечто из молекулярной кухни, не из-за желтков, манго или даже красителя. Это - всего лишь куркума 🤯 О таком лайфхаке я когда-то узнала на просторах интернета и он тоже меня загнал в ступор, как молекулярная кухня в своё время. Оказалось, эту специю можно добавлять куда угодно! Между прочим, то самое жёлтое латте, которое сейчас практикуют многие хипстер-кафе сделано на основе куркумы. Зачем она вообще нужна? Помимо вкусовых качеств, куркума является своего рода природным лекарством. Она владеет противовоспалительным действием, а так же повышает иммунитет и снижает риск развития таких болезней, как альцгеймер и рак. Стоит отметить, что вкус у неё довольно специфический (как сами знаете у кого 😂), поэтому я кладу 1,5 чайной ложки мёда в жёлтую кашу. Также можно добавить сладкие фрукты и сухофрукты. Не благодарите 😼
