On the banks of the Huon River in Tasmania filming with this lovely chef Masaaki Koyama I must say I had house envy .. what a superb spot to set up a special grill to cook eel which were fished from the same river... eels some of the most extraordinary creatures in the world spawning out to sea and then swimming up freshwater rivers to live out their lives. Masaaki (also known as Tasmania’s surfing chef) grew up in Wakayama Prefecture in Japan and remembers catching eels with his father.. he moved to Tasmania when he met the gorgeous Lucy... his restaurant in Geeveston @masaakisushi a place of pilgrimage for food lovers. Loving the work of our friend BJ Plummer and team at Tasmania’s Woodbridge Smokehouse ( who we filmed way back in Food Lovers Guide days .. and they still use local apple wood to smoke the fish) My favourites are the slicing ladies who hand-cut each beautiful rosy fish .. One of the maddest quirkiest people in my food world is Ben Nguyen.. man of fire, his family owns Hai Au Restaurant in Canley Vale.. we met years ago through my friend and guide to Cabramatta and Vietnam @peterdiepnguyen (who always knows the best places to find authentic Vietnamese food) ... my kids were small and Ben made sure they were treated like royalty ... and that started a lifelong link. As a teenager, my son Conor visited as his last meal before a year away in France and first meal back .. we visit on our Fire Safaris as everything is cooked over charcoal so hot you feel your face melting.. it’s intense (note the fan in first pic aimed to make fire hotter) but cooks food perfectly. Seafood hall at Athens market .. sardines plentiful right now... maybe filming #foodsafariwater has sharpened my eye for fish and the bounty of the sea but this pumping market is still a joy to visit. You just don’t get the same buzz from a supermarket visit.. mother and son Jaya and Ankit Chopra at a cooking class @carriageworksfarmersmarket sharing the secrets of their delicious chutneys served with onion bhajis .. stars of #foodsafariearth .. plus the charming men of meat @moobivalley, great chat with charming @suzyspoonsvegetarianbutcher, some elegant mushrooms from Paul who grows in a railway tunnel in the Blue Mountains; Jean Marc Amar fresh from his visit to Lyon where the French loved his kangaroo saucisson @saucissons_australia and the chef who never sleeps.. that lovely @saintpeterpaddo who starred on #foodsafariwater this week (watch on @ https://www.sbs.com.au/ondemand/video/1280398915515) brought his @fishbutchery to the markets and some impressive crab and gurnard soup. What would my last meal on Earth be? After filming #foodsafariwater I’d have to say a rich Malaysian fish head curry would be close to top choice.. this is Chef Tan from Malacca Straits who kindly shared his version with a blue eye cod. Wednesday means #foodsafariwater on @sbs_australia in all its heart pumping glory.. and access to the behind the scenes of wonderful institutions like Golden Century which specialises in seafood.. at least 100 whole fish are served each week ..steamed and finished with ginger and shallots.
