La dolce vita - the sweet life Italian style on a warm evening with some fabulously inventive dishes from our friend @giuseppe_fuzio at @chioscobyormeggio right on the water.. the first pic is snapper crudo with inspired tastes of strawberry with touch of chilli (wow!) mint oil and buttermilk .. it works superbly.. In a unique bit of television programming, our final episode of Food Safari Water airs tonight on @sbs_australia at 8.30pm featuring so many beautiful recipes centring on seafood. After a week of sensational Tasmanian food, great to be back in Sydney to enjoy an incredibly delicious meal featuring this showstopper - spaghetti alla chitarra with scampi and prawns and the deep deliciousness of prawn oil tossed with cherry tomatoes and broccoli - a dish created by chef Giuseppe Fuzio .. we met him when we filmed #foodsafariwater, sharing his recipe for Vitello Tonnato. The pasta is made every day, the seafood is generous and I hope they keep this on the menu at charming waterfront @chioscobyormeggio forever! On the banks of the Huon River in Tasmania filming with this lovely chef Masaaki Koyama I must say I had house envy .. what a superb spot to set up a special grill to cook eel which were fished from the same river... eels some of the most extraordinary creatures in the world spawning out to sea and then swimming up freshwater rivers to live out their lives. Masaaki (also known as Tasmania’s surfing chef) grew up in Wakayama Prefecture in Japan and remembers catching eels with his father.. he moved to Tasmania when he met the gorgeous Lucy... his restaurant in Geeveston @masaakisushi a place of pilgrimage for food lovers. Loving the work of our friend BJ Plummer and team at Tasmania’s Woodbridge Smokehouse ( who we filmed way back in Food Lovers Guide days .. and they still use local apple wood to smoke the fish) My favourites are the slicing ladies who hand-cut each beautiful rosy fish .. One of the maddest quirkiest people in my food world is Ben Nguyen.. man of fire, his family owns Hai Au Restaurant in Canley Vale.. we met years ago through my friend and guide to Cabramatta and Vietnam @peterdiepnguyen (who always knows the best places to find authentic Vietnamese food) ... my kids were small and Ben made sure they were treated like royalty ... and that started a lifelong link. As a teenager, my son Conor visited as his last meal before a year away in France and first meal back .. we visit on our Fire Safaris as everything is cooked over charcoal so hot you feel your face melting.. it’s intense (note the fan in first pic aimed to make fire hotter) but cooks food perfectly. Such a brilliant day filming with this legend @chef_andrewmcconnell the culinary genius behind some of Melbourne’s top restaurants @cumulusinc @cutlerandco @supernormal_180 and many more.. this is the beach on the Mornington Peninsula where he spent summers with his brothers .. as s chef he’s now tuned in to sea vegetables and succulents growing in the dunes .. some of which garnish a cracking recipe for calamari .. lightly scored and seared over charcoal and served with a homemade oyster sauce (less sweet and cloying and easy to make) .. learned so much .. thanks Andrew. #foodsafariwater tonight at 8pm. #calamari #seafoodrecipes #cookingonfire

Poised on a cliff edge... opening of #foodsafariwater on the cliffs of beautiful Kangaroo Island .. our local friend Mick brought us to this place.. 3kms carrying gear and drone... and then 23 takes to get the angle right on the drone.. the best take from the drone included the hilarious sight of the camera crew hiding in some bushes. We travelled to some wild landscapes for #foodsafariwater which airs tonight @sbs_australia at 8pm.. this is not snow but a magnificent salt mountain with pure salt from Spencer Gulf harvested and created by wind and sun.. the beta carotene in the intensely salty water is such a vibrant shade of pink.. Loved spending time with Salt Princess Alex Olsson who I’d met as a teenager when I visited to do a story with her dad long ago fir The Food Lovers Guide to Australia. Remarkable how the next generation continues to nurture this beautiful natural resource. See what our friend chef Lino Sauro does with salt - a showstopping salt baked snapper Sicilian style.. so delicious what a technique.. ! And of course cameraman Peter Clarke capturing the moment..
