Thank you, @ali_mill for introducing me to my new favorite pie in San Francisco. The number one rule about #guanciale is ALWAYS order the guanciale. Yes, this includes situations where your server kindly reminds you that your pie already has prosciutto. 🐖 Shout out to him for bringing a cereal bowl full of Parmesan and not throwing me out of the restaurant when I said it probably wasn’t enough. Good thing I had to climb to the top of a ridiculously steep hill to get to my car afterward. 🏃‍♂️

So this is one of those dishes that just never gets old for my family and I. Carbonara! Not reinventing anything here just using the best ingredients. I know I sound like a broken record but that's the key to great food. I never met a bad chef in any of the places I worked at when as I was young. I did however meet some owners who bought questionable ingredients. Basically you can't make a good carbonara with spam😅. Alright I'm done with the rant, the short recipe is down below. I'll have the long one up in a couple of weeks on my website. Bye! . . Ingredients: 1/2 pound spaghetti 1 cup pasta water 2 -3 eggs 1/2 cup pecorino plus more for serving 1/4 pound guanciale Method: ▪Boil pasta and reserve 1 cup pasta water ▪Cube guanciale and fry on medium-low until rendered...about 15 minutes ▪Remove all guanciale pieces and set aside ▪Mix 2 eggs and pecorino in bowl to combine ▪Cook drained spaghetti in guanciale fat and 1/2 cup pasta water for 1 minute ▪Pull pasta pan off heat and wait 1 minute ▪Add egg/cheese to spaghetti pan and stir to combine. ▪Add guanciale and black pepper to pan and stir it all together. If too thick, thin with a little pasta water. If too thin thicken with pecorino cheese. ▪Serve...enjoy!
