“Wine improves with age—the older I get, the more I like it.” • Bethany and I are taking the day to explore places we’ve never been before in Asheville! First stop: wine, of course! @plebavl recently opened on September 1st. We’ve talked about visiting all month, and we finally got around to it today! We each ordered a flight of wine (3 - 2oz pours) for 10 bucks/flight, because why have one glass of wine when you can have six? So far our favorites are the Gruner Veltliner and the Pinot Noir. We love that we’re beer city USA, but it’s also cool that new wine bars are starting to pop up across the city! Is there a place in Asheville you haven’t tried yet but are wondering about? Hi friends 👋🏻 Had a wonderful day exploring the Amalfi Coast - started the day in Naples, and made it to Sorrento, Positano, Amalfi and Salerno! Lots of ferry rides ⛴, stunning coastline and delicious Italian food. Snapped this selfie in Positano after a delicious seafood meal looking out at the water ☺️ A few years ago, I would never have gone out to eat by myself. If I ever found myself solo dining, I would feel self-conscious and uncomfortable the entire meal. Over the years, I’ve pushed myself to go out and ask for a “table for one” and plan solo trips and now I genuinely enjoy it! Don’t get me wrong, I love traveling and dining with friends and family, but there’s something really peaceful and wonderful about spending time with yourself and being solely on your own schedule. 🙌 Would love to hear your thoughts in the comments about solo traveling/dining!

Raw Raspberry Cheesecake!🌿 Crust: -1/2c raw almonds -1/2c raw cashews -1c medjool dates Pulse in a blender! Shape on the bottom of individual tin pie crust shells. Filling: -1c raspberries -2c raw cashews soaked at least 2 hours -1/2c coconut milk -1/3c melted coconut oil -1/4c lemon juice Blend! Pour over the individual pie crusts. Freeze until set! Keep them frozen. They defrost nicely when it’s time to eat! ENJOY!🤗

Super yummy, healthy snack! A Pink Lady apple with peanut butter drizzled over the tops and dark chocolate pieces to top! 😍 I had to warm up a tablespoon of peanut butter to make it go farther. I am definitely the type of person that is able to just eat a tablespoon of peanut butter by itself. Silky smooth cacao and vanilla bean slice (recipe below!). This is such an easy slice to whip up, and tastes great straight out of the freezer (kinda like an ice cream bar). If vanilla isn’t your thing, add some pure peppermint essential oil (so good), or pure wild orange oil 😛. Off to play at the park, and then test a lot of recipes this weekend. What’s your plans? . RECIPE Base 1/2 cup pecans 1 Tbsp coconut flour 1/4 cup raw cacao Pinch good-quality salt 6+ Soft Medjool dates 1. Add everything except the dates to a food processor. Pulse until very small crumbs have formed. 2. Add dates (ensure you remove pips), and pulse until the mix starts to clump together (if this doesn't happen, add more dates). 3. Press into a small tin of choice (I used a 10cm square one) Creamy vanilla filling 1 cup raw cashews, soaked 4 hours 1/4 cup coconut cream 2-3 tsp pure vanilla extract (start with less, add more to your liking) 2 Tbsp rice malt syrup 2 Tbsp coconut oil 1. Melt coconut oil and set aside to cool 2. After 5 minutes, add all ingredients to a high-speed blender and blend until very smooth. Pour into your base and set in the freezer Chocolate topping 1 Tbsp raw cacao 2 tsp rice malt syrup 2 tsp coconut cream 2 tsp coconut oil 1/2 tsp vanilla extract 1. Set up a heatproof bowl over a pot of just simmering water. Heat bowl, then turn off water. 2. Add coconut oil and allow to melt. Once liquid, add remaining ingredients then whisk until smooth. Pour final later onto cake, and reset in freezer. For me, this made 9 squares. Store in an airtight container in the fridge (up to a week) or freezer (for 3 weeks). You can easily exchange rice malt syrup for your preferred liquid sweetener, cacao for carb, Medjool dates for Turkish dates (just soak them first) or pecans for wants. Enjoy- it's my new favourite 💜

Lunch a couple days ago - because today is just leftover english muffin pizzas with avocado and grilled zucchini ☺️ This bowl was spaghetti with @traderjoes organic tomato basil marinara sauce, 1 zucchini spiralized and cooked with a little avocado oil into zoodles 💚 1/2 of a very ripe avocado mashed 🥑 with EBTB seasoning, grape tomatoes 🍅, and sprinkled with shredded Parmesan 🔅
