It was cloudy all week here. There were no skies or sun at all and suddenly, so suddenly, almost instantly... the clouds parted just as the sun had set. It was as if god, the divine, a higher power, whatever you want to call it... reached out and kissed the earth and with it a message of peace. And just like that it was gone. Lasted maybe 20 seconds it seemed. . . This was one of the most magical moments of my entire life (as you can see on my facial expression). I was looking at a double rainbow. Maybe I’ll show you a video so you experience it. . . I will never forget this. Fiji left its mark on my soul. I hope that I did the same for Fiji, I did. P.S. Monday I worked hard to try and shave off time on the two miles. Tonight - I was feeling good and said you can push yourself a little more. HOLY MOLY - I shaved off 1.43 seconds! My new personal time for two miles on the Arc Trainer 8x16 is 33.06! Thought my legs would catch fire 🔥 ————————————————————————————————Try something new before the weekend is over! Maybe a new workout you haven’t tried before? When I first started and saw people on the arc trainer, I thought no way can I do that. If you don’t try, you will never know. When I discuss barriers to eating more vegetables with my patients some consistent themes come up: they forget to BUY them, there is no PLAN to use them and end up getting tossed, they don’t have TIME to make them, or they feel as though they don’t have the cooking SKILLS to make them tasty. 🤷‍♀️😳 . Look, I TOTALLY get it. We are all workin’ and just trying to do our best, but I know that you all want to FEEL your best and most fabulous, and eating veggies every day can be a huge part of that💃 So, I always say that we have to make the healthy choice the easy choice, which is why I recommend leaning on a FROZEN veggie stash when you need to. Frozen vegetables are just as healthy and nutritious as their fresh counterpart and can be kept around for much longer than fresh produce you picked up that week 🙌They are literally picked from the field and flash frozen to preserve their nutrients and flavor. Fresh is my preference, but when life gets busy and I need a veggie option that is always there for me, I don’t hesitate to incorporate frozen varieties 🤗 . So here’s an easyyy yet tasty transitioning meals it literally takes at 5 minutes or less depending on how you like your mushrooms. This is a spelt bread from @berlinnaturalbakery (my go to spot) you can find this bread in Whole Foods as well. Be sure to get the one with only spelt flour and water. Next up is our avocado mash. This is flavored with a few drops of lime juice, onions powder and a dash of seasalt. Then it’s topped with our crispy Bella mushrooms. (Sounds complex but the trick is pan frying them with a little grapeseed oil, thinking slicing them, then letting it completely cook before flipping them. But, the macros aren’t great. 🤷🏼‍♀️ . So... I made a “healthier” option! Slide for ingredients ➡️➡️➡️ . 1️⃣ browned lean ground turkey 2️⃣ added queso, American cheese slices and Laughing Cow cheese wedge and stirred until melted adding just a tiny bit of water to help it combine. 3️⃣ added cooked pasta with about 1/4 cup reserved pasta water to help it all come together 4️⃣ sprinkled with cheddar seasoning and pepper to finish off. 🍽 . Better than Tuna Salad! I know I have not been posting recipes lately or anything that I have made, for that matter. I have been eating pretty simply and also experimenting with different things, and saving them for my blog. I got a new raw recipe book, found some beautiful fresh dill, so I started with this Mock Tuna recipe. This is very similar to my own recipe, because there aren't too many variations of #mocktuna but this dressing, using coconut water is amazing! I used half pine nuts and half hemp seeds and cut both in half and added a huge zucchini to cut down on fat. Mix the dressing with the sunflower seed mixture until moistened to your satisfaction and use the rest as extra dressing on your salad, if you need it, or just use lemon juice. I also used dried mustard powder instead of prepared mustard and added some turmeric powder. Voila! Tuna goodness minus the mercury and tin as well as other unmentionables! 😝 If you hate the idea of plant based tuna and still eat fish, reach for the salmon cans instead of tuna. Calorie Comparison! 💡⁣ ⁣ Let’s just preface and say I am not saying one option is better than the other here. 😜⁣ ⁣ Now that that’s out of the way...⁣ ⁣ My point here is comparing a meal that would generally be labeled as ‘healthy’ and a meal that’s labeled ‘bad for you’. ⁣ ⁣ If you are trying to lose weight and the progress just won’t budge, I suggest taking a look at every detail with ever decision you’re making.⁣ ⁣ At the end of the day, to lose weight you need to be in a caloric deficit. Even though you may think you are, a lot of sneaky calories can add up and put you closer to your calorie maintenance or even pushing you into a surplus. ⁣ ⁣ A lot of times when you think you’re getting a healthy salad, the dressing has more calories than you think and more calories than you’re accounting for. ⁣ ⁣ Also, you think smoothie and you think healthy! Before I even start this post I just want to say how come no one told me spaghetti squash isn’t single woman friendly? 😂 once I scraped all the squash out I had enough noodles to feed a party of 30 lmao. Nonetheless, this was SO good and I dont think I did to bad for my first time making it. Cooking the squash is probably what takes the longest cause it takes about 30-45 minutes. I used meatless chicken again which cut down on my cooking time even more! I just grilled the chicken on the stove a little bit then I added spinach, cheese,and the sauce and let that simmer for about 5 minutes- really just to cook my spinach and warm the sauce. I brought it for lunch today and since I had a small breakfast today this was so filling!! Also, I know my chicken bag says teriyaki (I grabbed the wrong bag lol) but the chicken itself is plain and seasonless the bag just comes with a teriyaki mixture on the side. This definitely came into play today! 😭💪🏻 Every summer holidays my nana throws a teddy bears picnic for all of her grandchildren. They absolutely love it and she goes all out making palm trees, flamingos and dinosaurs (this years theme!) FOOD DIARY! 🐷 This was yesterday’s food! Forgot to post it 😂 So breakfast was a two egg omelette! It was super tasty! I’m not really a fan of omelette, but jack made this the other day and I really fancied it! 2 eggs whisked with a dash of milk and salt and pepper. I sliced up two pieces of ham, and three cocktail sausages and mixed them in. I sprayed my pan with frylight and added the mixture in spreading the meat around before it sets. I sliced two cherry tomatoes up and popped them on top, then added 30g of cheese! I let that cook for a few minutes on the bottom and then popped it under the grill. Nice and cheesy, easy peasy, breakfast omelette! - 377cals! Lunch was spent at my brother and sister in laws. We had a ham salad sandwich and a handful of grapes. Oh, and a cube of cheese. I LOVE cheese! 🧀 this was 298cals! Dinner was lovely! A cheese and bacon quiche with new potatoes, cheese coleslaw, ham and salad! I added most of it into my @myfitnesspal app and totalled 423cals (excluding the ham slices and salad.) I also had a penguin bar mid afternoon as the sugar cravings set in! I always keep handy little treats around so that I can have a little treat without overindulging! I probably had way too much cheese yesterday. Getting back into cooking my own lunches now that I will have the time to! Cooking used to be one of my(Lucas) favorite things to do. This sandwich isn’t anything special, but the reason I made it was because I was craving a chicken sandwich, and being in a college town there are a ton of fast food places that sell them. So our golden retriever, Hank, has always had problematic skin- Always itching, red, and irritated. We’ve been through lots of trial and error trying to figure it out. It’s still a work in progress, but we’ve found a few things this year that have helped him DRASTICALLY! His itching/redness has improved a lot and we’ve noticed his coat is much more shiny and full. I wanted to share because I know it seems like dogs with skin issues is pretty common thing. . • Switched to grain-free dog food. We use Diamond Naturals Skin & Coat Formula and order through chewy.com which is SO convenient!. . • Added a salmon oil supplement to his diet. We use American Journey Wild Alaskan Salmon Oil. We add a heaping tablespoon to his regular food and mix it together (he seems to really like this stuff- he devours his food lol). . • We use Young Living’s Animal Scents Ointment on any dry/irritated areas to soothe his skin. Honey Cinnamon Baked Peaches 2 TBSPs of butter or ghee 2 TBSPs of raw unpasteurized honey Cinnamon to taste 2 ripe peaches Preheat the oven to 350 degrees. Line a 8x8 pan with parchment paper and set aside. Gently wash the peaches, cut in half and remove the stone (pit). Place the peach halves in the pan and sprinkle with cinnamon to your taste. In a small sauce pan over low heat add the butter and honey and stir until melted and combined. when that’s done drizzle the mixture over the peaches and bake for 20-30 minutes or until the peaches are tender and bubbling.
