- Today’s Recipe: Thai Basil Chicken! I’m currently running Thai food month on my Youtube channel and I’m cooking up a storm! From all the Thai recipes I’ve done I think this one is my favourite and that’s why I am sharing it with you. I don’t think there is an easier dish to cook than this one and it packs in so much flavour it’s incredible. An absolute cracker if you ask me! (Part of the @headbangerskitchen IG takeover this week!) ⬅️ - Nutrition Info (per serving) Calories: 291 Net Carbs: 4g Carbs: 4g Fat: 21g Protein: 23g Fiber: 0g - Ingredients (4 servings) 500g Ground Chicken 15g garlic 30g Shallots/Pearl Onions/Onion 3 Thai Bird's Eye Chilly 3 Tbsp Chicken Oil (from chicken fat!) 25g Thai Holy Basil 1 Tbsp Fish Sauce 1 Tbsp Soya Sauce 1/2 Tsp White Pepper 1 Tsp Erythritol or Keto Sweetener Salt to Taste - Instructions - In a mortar and pestle grind together the garlic, shallots and red chillies. - Pluck the basil leaves from the stems and set them aside. - Heat the chicken fat in a wok and once it's nice and hot fry up the ground garlic, shallots and chillies. - Once the garlic starts to brown then add in the ground chicken and cook. Keep stirring the mixture and break up the chicken so that it doesn't clump up together. - Add in the soya sauce, fish sauce and sweetener. Also season with white pepper and salt. - Once the chicken starts releasing it's liquid cook till the sauce is almost dried out. - Turn off the heat and add in the fresh basil and mix well till the basil wilts down. - Serve in lettuce cups with a deep fried egg. - For the fried egg just cook it in a wok on a high heat till the edges turn nice and crispy. PEA & ZUCCHINI FRITTERS The fluffiest, easiest and most delicious fritters I’ve ever had (not to toot my own horn or anything 🙊). I randomly chucked grated zucchini, frozen peas, garlic, Parmesan, baking powder, an egg, self raising flour & milk into a bowl and came out with these beauties! I topped mine with a boiled egg, nut free pesto (!!!!) and some Persian feta 🤤 the best! Botha peas and zucchini get their green colour from a phytochemical called chlorophyll 💚 phytochemicals act as antioxidants which prevent oxidative damage from free radicals and can prevent some cancers!

Cottage Cheese Power Bowl . A lightly sweetened greek yogurt and cottage cheese base with plenty of fresh fruit and just enough almonds and chocolate to fuel your morning! . . INGREDIENTS - 3/4 cups (150 grams) cottage cheese (fat free if you watch that- but full fat yum.) - 1/2 cup Greek yogurt sweetened with vanilla stevia drops - 1/2 tbs (7 g) Trader Joe’s slivered unsalted toasted almonds (best kept in freezer- extra crunchy) - 1/2 tbs (7 g) mini chocolate chips (they make everything indulgent and you only need a little! - a tiny drizzle (2 g)  of honey (use a honey bear because it’s cleaner but then lay out a cute honey wand because #cute.) . (I do 20 grams of each of the following fruits): - mango - peaches - strawberries - blueberries - blackberries - bananas . . INSTRUCTIONS 1) Sweeten greek yogurt with a dropper or two of liquid stevia and mix with cottage cheese. . 2) Top with chopped mangos, peaches, bananas, berries and any other fruit you want. . 3) Finish with toasted almonds, mini chocolate chips, and a drizzle of honey. Overnight Oat, el desayuno perfecto para llevar! Hazlo en casa y cómelo en el trabajo. Necesitarás para dos porciones: 1 taza de leche de coco o la que prefieras 1 paquete de Overnight Oats de Coco & Cranberries 1/2 taza de yogurt de vainilla Puré de 1 plátano Frutos rojos a gusto Granola Triple Coco a gusto para el topping. En un bowl mezclas la leche con el yogurt, el Overnight Oat de Coco & Cranberries y el puré de plátano. Separa la mezcla en partes iguales en dos envases de vidrio con tapa, tipo Mason Jar o conservero y déjalo reposar al menos 1 hora. WARNING: I’m about to be dramatic. These ICE CREAM SAMMIES are legit my favorite dessert I’ve ever made. Whoever invented the idea to put ice cream in between giant cookies is an absolute genius. 🙌🏼 Now I can alreadyyy feeel the skeptics out there saying, “Mariah what kinda ice cream is that?!” This is what the *Instagram world* likes to call nice cream - nice cream is basically blended frozen bananas. ~ Instead of blending them, I took a few frozen *green* bananas from my stash and used my DESSERT BULLET from @nutribullet !! If you’ve never seen this amazing device, prepare for your mind to be blown. I’ll share an IGTV video next week with all the details, so stay tuned! You can throw any frozen fruit + toppings inside and it comes out just like soft serve. 🤯 ~ I used a few green bananas and a generous amount of cacao nibs. As for the cookies.. you might recognize my BEET COOKIES from a few weeks ago. Originally I made them a little more bite sized, but for these I made them about 2x2 inches. (More surface area for my ice cream.😏) The batter made 9 cookies which was enough for 4 ice cream sandwiches and 1 for me to eat. (Duh.) Once I added the soft serve, I smooshed my cookie on top and popped them in the freezer for about an hour. BATABOOM BATABING - Ice Cream Sammies!!! 🤩 What’s your favorite frozen treat?! So many of you asked for the recipe for my YUMMY Sweet Potato Hash I made for breakfast yesterday. So here it is! *I added two eggs over easy on top of the hash* . I got this from the Fixate Vol. 2 cookbook that comes with my delish nutrition program. 102 delicious recipes to fix your portions for a healthier life! . Sweet Potato Hash Serves: 4 (approx 3/4 cup each) Prep Time: 15 mins Cooking Time: 20 mins Containers: 1/2💚, 1💛, 🥄 Vegan Containers: 1/2💚 1B💛, 🥄 . Hot Water 1/2 tsp. sea salt, divided use 2 C. 1-inch cubes sweet potatoes 1 TBSP + 1sp. olive oil, divided use 1 C. chopped onion 1 C. chopped bell pepper 2 cloves garlic, finely chopped 2 Tbsp finely chopped chives 1 tsp ground smoked paprika 1/2 tsp. ground black pepper . 1. Heat water to a boil in large saucepan. Add 1/2 tsp. salt. 2. Add sweet potatoes: cook 7-8 mins until tender. Drain and set aside on paper towels. 3. While sweet potatoes are cooking, heat 2 tsp oil in large nonstick skillet over medium-high heat until fragrant. 4. Add onion and bell pepper, cook for 3-4 mins. 5. Add garlic, cook for 1 min, stirring frequently. Place onion mixture in a medium bowl: set aside. 6. Heat remaining 2 tsp oil in same skillet over high heat. 7. Add sweet potatoes, stirring frequently for 5-7 mins. Remove from heat. Add onion mixture to skillet. 8. Add chives, paprika, remaining 1/4 tsp salt, and pepper. Mix well. .
