This tasty white fish warms up well, staying super moist. • • Looking for a trick to fulfill your weekly fish quota of 2-3 servings per week? Look no further than the whole fish to keep it juicy! If you’re intimidated by the whole fish, you’re not alone, but allow my 4 yo to hold your hand through it. • • Your fish monger will clean the fish, de-scaling him and making him oven ready. Your job is easy peasy, lemon squeezy. Prepare a roasting pan with parchment paper or tin foil and stuff ‘em with lots of that said lemon, some garlic cloves, and parsley, and rub with generous olive oil, salt and pepper. Were traveling up to london again for 1 day and im determined to be on plan!! Staying in a Travelodge with no restaurant so no way of getting food.. im gonna buy some fruit from a local sainsburys and I think there is a Kebab shop near us so I will probably get grilled chicken shish with salad for dinner.. SeSaME JaCKfRuiT 🤪🤤 I made these delicious bowls last night using up all of the veggies in our fridge since the stores were closed for Anzac Day, and they turned out pretty darn good in my humble opinion 😏😂! 🥗 🥗 Bowl deets: the base was some ice berg lettuce 🥬 and brown rice 🍚- I realized I haven’t had rice in a while since brown was all we had in the cupboard and I am such a fiend for white rice 😂! But alas, rice is rice!🎉 then I cooked up lots of veggies- red kale 🥬, red peppers, carrot 🥕, sweet potato 🍠, and zucchini 🥒 all in @pickldit sesame seasoning. And finally I sautéed some @naturescharm_au jackfruit in olive oil and @pickldit sesame seasoning! I topped this bowl off with some @kewpieusa roasted sesame dressing which is probably the best thing in the whole world! 🥗 🥗 For those of you who haven’t had the pleasure of trying jackfruit I will tell you a bit about it: it is the largest tree borne fruit in the world and the inside of the fruit can be eaten cooked or raw. When you eat it ripe it is a very sweet fruit (I haven’t tried it ripe yet), however young jackfruit/ unripe jackfruit has a neutral flavour that works perfect for savoury dishes! Jackfruit is also high in so many nutrients and magnesium and protein. It is good for your immune system, improves digestion, boosts energy levels with its high levels of vitamin B, maintains blood pressure and healthy vision👁, and supports skin and bone 🦴 health with antioxidants and calcium! Looking for a lunch or dinner idea...try this Grilled Chicken Salad & Sweet Onion Dressing by @cleanfoodcrush . Makes 4 servings Ingredients: 4 boneless skinless chicken fillets, about 5 oz each 1 Tbsp avocado oil, or olive oil 8 packed cups mixed lettuce leaves 1 cup cooked fresh or thawed frozen organic corn kernels 1.5 cups halved cherry tomatoes 1/3 cup chopped pecans 4 hard-boiled eggs, peeled and chopped 1 ripe avocado, diced . Instructions: Heat a grill pan or an outside grill on medium-high heat. Rub chicken with sea salt, pepper and a bit of oil, then add it to the grill. Cook for about 5 minutes per side, or until cooked through and no longer pink in the inside. Set aside on a chopping board, cover and rest for a couple of minutes, then slice thin. Heat 1 Tbsp oil in a skillet over medium-high heat; saute garlic and onions for 6 minutes, or until soft and golden brown. Place caramelized garlic & onions in a small blender together with remaining extra virgin olive oil, cider vinegar and lemon juice; puree until smooth. Season to your taste with sea salt & pepper, then refrigerate dressing until ready to serve. In a large salad bowl, add lettuce, then cooked chicken, tomatoes, corn, eggs, pecans, and diced avocado as shown. Once ready to serve drizzle the dressing on top, and gently toss to combine.

Black pepper stir fried udon noodles with capsicums, and mushrooms. And sliced beef pre marinated and cooked. (I’m not sure how it’s made as it was brought back from China). Ecco gli ingredienti: 300 grammi di ceci lessati, un po’ di mollica (anche 2 fette di pane bianco vanno bene), mezzo scalogno, pangrattato, semi di sesamo, paprika, curry, acqua, sale e pepe quanto basta Una volta che i ceci sono pronti, prendi il bicchiere del mixer o del frullatore a immersione e metti i ceci (dopo averli sgocciolati), la mollica (bagnata in acqua e un po’ strizzata), e mezzo scalogno. Frulla il tutto finché non diventa una purea. Aggiungi poi un pizzico di sale, un pizzico di pepe, paprika e curry (queste ultime due sono opzionali, ma danno molto sapore a queste polpette di ceci vegan). Adesso prendi il composto e forma delle polpette, lavorandolo tra i palmi delle mani. Poi prepara una panatura mettendo assieme il pangrattato e i semi di sesamo. Ripassaci dentro le polpette, pressando leggermente così da far aderire bene la panatura. Metti le polpette di ceci vegan appena preparate in frigo per circa mezz’ora per farle rassodare. È il momento della cottura: le polpette di ceci vegane si possono cuocere sia in forno che in padella con un filo di olio. Se preferisci la cottura al forno disponile su una teglia coperta con carta forno, irrorale con poco olio e infornale a 180° C per circa 15 minuti. Puoi servirle con un contorno a tua scelta!

My favourite part of race prep - carbs! I probably don’t really need to overly prepare for my 10 K race on Sunday, but I’m taking full advantage of the opportunity to rest my legs and eat some delicious pasta, potato and sourdough garlic bread. Without my kids realising, I also sneak a heap of veggies into most pasta meals.
