The evolution of the dunk 🍗 Tbh nothing is more classic than chicken fingers + fries. Now, minus the fries and the grease, and then we’re looking at these delicious baked chicken fingers. A little healthier twist on a classic. Next time I make these (which will most definitely be soon considering how amazing they are) I’ll give ya the how-to all up close + personal on my story. But for now I’ll give you the quick + easy step by step below so you too can enjoy these crunchy, heavenly tenders. 😛 Let’s get itttttttt: 1️⃣ preheat oven 400 2️⃣ cut up your chicken into ~tender~ form 3️⃣ in one bowl add 2 eggs. In another bowl add bread crumbs, coconut flour, seasonings of your choice (honestly I usually just add whatever seasonings I can pronounce and everything I make usually comes out pretty good so I’m going to keep using that method *cue chili powder*) 4️⃣ add a splash of milk to both bowls + mix. The eggs will look like you’re making scrambled eggs + the bread crumb mixture will look more crumbly. PS I think this is the trick to extra crispy chicken fingers. 5️⃣ dip chicken in bread crumb mixture, then egg mixture, then bread crumb mixture again + make sure its fulllllly coated. 6️⃣ bake for like 20-25 mins + then devour. Now that we talked about chicken fingers, let talk about me ha ha ha :) Update: i am still unbelievably sore from leg day on Monday and I can’t put my hair up in a ponytail because of arm day yesterday. Also, I did record bbg week 13 arms for you guys yesterday (thanks to those 11 people who voted yes on my story hahahah u the real ones) BUT the recording was so bad because it was dark + positioned horribly. So I did promise I’ll post the exercises, but I’ve been so busy today so it’s not happening yet. I’ll get them to ya don’t worry. Until then enjoy looking at these chicken fingers and drooling. It’s starting to feel like fall here with a rainy and gray day in Michigan. This is the perfect healthy comfort meal. It can be made in 40 minutes and keeps well for leftovers! Protein Packed and Veggie Loaded Chili: Feeds 6. Ingredients: 1. 2 bell peppers chopped 2. 1 large onion diced 3. 2 tablespoons olive oil 4. 1 pound extra lean ground beef 5. 2 cloves garlic 6. 2 tablespoons chili powder 7. 1 tsp smoked paprika 8. 1 tsp cumin 9. 1/2 tsp oregano 10. 2 14.5 oz cans diced tomato no salt added 11. 1 can kidney beans, you can add an additional can of black beans too. Rinsed and drained 12. 1 large zucchini chopped Method: Heat olive oil in large pan over medium heat, sauté onion until translucent, add peppers and cook a few more minutes. Then add ground beef, breaking up large chunks and browning meat until no longer pink. Then add all the spices and the garlic to the mixture. Turn heat to low and add cans of tomatoes, zucchini and beans. Add salt and pepper to taste. Cook about 30 min over low to simmer heat. Serve with fresh cilantro or avocado on top. Fall is a great time to crank up the oven and test out those baking skills! Pumpkin Cookies anyone? Ingredients: 1 Cup Butter (softened) 1 Cup Brown Sugar 1 Cup Pumpkin Puree 1 1/2 tsp Vanilla 1 Egg 1 1/2 Cups Quinoa Flour 1/2 Cup + 2 Tbl Oat Flour 1 tsp Baking Powder 1 tsp Baking Soda 1/4 tsp Salt 1 Tbl Tapioca Flour 1 1/2 tsp Cinnamon Instructions: 1. Preheat oven to 350 degrees. 2. Add butter and brown sugar into a mixing bowl. Beat together until the mixture is fluffly. 3. Beat in the pumpkin puree, vanilla, and egg. Set aside. 4. In another bowl, whisk together the quinoa flour, oat flour, baking powder, baking soda, salt, tapioca starch, and cinnamon. 5. Add this to the pumpkin mixture. Combine well. 6. Line two baking sheets with parchment paper. 7. Scoop about 2 tbsp worth of the batter per cookie onto the baking sheet. Make sure that each cookie is about 1 1/2″ apart. 8. Bake in the preheated oven for 10 minutes. 9. For breakfast this morning I made chocolate chip pancakes and added birthday cake protein powder from @uniconutrition . This was hands down my favorite mixture of batter and protein, so smooth and full of sweet deliciousness. For those who've been asking what pancakes I use, they now sell the @kodiakcakes at Walmart too!i usually snag a box of every flavor at target. What I love the most, is you can literally see colorful chips from the protein powder I used. Their powders are easy to dissolve and dont chunk up, have BCAAS, and are a whole new world of creaminess. RECIPE: -2 cups rolled oats (blended into a flour) -1 tsp baking soda -1 tsp baking powder -dash of salt -1 tsp cinnamon -1 tsp pumpkin pie spice -3 ripe bananas, mashed -1/2 cup pumpkin puree -1/2 cup greek yogurt -1/2 cup liquid sweetener (I used @dvashorganics date nectar) -1/3 cup nut milk (I used cashew) -2 tsp vanilla extract -1/2 cup @lilys_sweets_chocolate chocolate chips 1) Combine dry ingredients in a bowl, and wet ingredients in a separate once.
