It’s kind of like a chicken salad wrap, but it uses mashed sweet potato as a binder instead of mayo, which takes it to a whole new level of flavor! #tastytuesday #healthyeats #onthego Sweet Potato & Chicken Wraps Serves: 4 (2 Wraps each) 1/4 cup extra-virgin olive oil 3 Tbsp white wine vinegar 1-1/2tsp Dijon mustard 1 tsp. raw honey 1/4 cup fresh basil leaves 1/2 tsp + dash sea salt (or Himalayan salt), divided use 1/2 tsp + dash ground black pepper, divided use 8 large collard green leaves 2 cups mashed cooked sweet potato (approx. 2 small) 1 Tbsp + 1 tsp melted ghee (organic grass-fed, if possible) 3 cups chopped cooked chicken breast, boneless, skinless 1/2 cup chopped bell peppers (approx. 11⁄3 medium) 1/2 cup chopped tomato (approx. 1 medium) sliced green onions 1. Place oil, vinegar, mustard, honey, basil, 1 dash salt, and 1 dash pepper in blender; cover. Blend until smooth. Set aside. 2. Remove stem from each collard green leaf where it touches base of leaf. Pare down remaining stem with a vegetable peeler until it is flush with rest of leaf. Set aside. 3. Combine sweet potatoes, ghee, remaining 1⁄2 tsp. salt and remaining 1⁄2 tsp. pepper in a large bowl; mix well. 4. Add chicken, bell peppers, tomato, and green onions; mix well. 5. Lay out prepared collard leaves, dark green side down. Evenly top with (approx. 2⁄3 cup) sweet potato mixture. You may add 1 Tbsp. of dressing to each leaf, or reserve it to dip in later. 6. Roll up each leaf like a burrito, then wrap it tightly in plastic wrap. 7. When ready to serve, slice each wrap in half while still in plastic wrap; peel back plastic wrap and enjoy! RECIPE NOTES: • To prepare sweet potatoes, pierce whole sweet potatoes multiple times with a fork and bake at 425o F for 40 minutes, or until soft to the center. • Leftover wraps will keep in refrigerator, wrapped in plastic, for up to 5 days.

Channa dal with kale topped with roasted potatoes by @rebelrecipes 💛Recipe⠀ 2 cups channa dal - washed ⠀ 6 cups water ⠀ 1 tsp turmeric ⠀ 1 tsp sea salt ⠀ 2 tbsp coconut oil ⠀ 1 large onion - roughly chopped ⠀ 1/4 tsp asafoetida ⠀ 2 tsp mustard seeds ⠀ 2 tsp cumin seeds ⠀ 1 tsp ground coriander ⠀ 1 tsp chilli flakes ⠀ 4 cloves garlic ⠀ 1 knob ginger - grated ⠀ 3 tomatoes chopped ⠀ 3 handfuls kale ⠀ Black pepper ⠀ ⠀ ⠀ Wash the channa dal thoroughly. ⠀ Add the chana dal to a saucepan with 6 cups of water. Bring to the boil and skim off the froth. Add in the turmeric. ⠀ Turn down to a low heat and let it simmer for 1 1/4 hrs then add in the salt. ⠀ Add the coconut oil to a large frying pan and heat to a medium heat. Add in the asafoetida and mustard seeds. When they start to pop add in the cumin seeds and chilli flakes. Stir for a few seconds then add in the onion. Fry for aprox 8-10 minutes until soft and browning. ⠀ Add in the garlic and ginger and stir for another few minutes, then add in the chopped tomatoes. ⠀ Cook for a further 5-6 minutes then add the kale and 120ml of water. Simmer for 5 minutes. ⠀ ⠀ When the dal is cooked, add the kale & tomato mix to the dal and stir well. ⠀ Season with salt, pepper & garam masala to finish. ⠀ ⠀ Roast potato ingredients ⠀ 500g Organic new potatoes⠀ 1 tbsp olive oil⠀ 1 tsp garlic powder⠀ Sea salt – 1/2 tsp⠀ 1/2 tsp cumin seeds ⠀ Twist black pepper ⠀ Directions ⠀ Pre heat your oven to gas mark 5 (190c).⠀ Add the potatoes to a roasting tray (I cut some of the larger ones in half) then toss coat them on olive oil, garlic powder, salt and cumin. I really love #transformationtiesday 💕🙌💕 These two pictures were taken two years apart, and there is at least a 50 pound difference. But the biggest differences are the ones you can't see. The girl on the left was busy taking care of her family of 8, putting everyone ahead of herself, wasn't active, hated her body and was generally unhappy most days. The girls on the right has learned the importance of taking care of herself, really enjoys being active, has come to love her body and all that it is capable of and is happier than she has ever been! . . For me, what started as a journey to simply lose weight quickly became a journey to find myself, and become the best possible me I could possibly be. I haven't had coffee in 2 weeks, maybe 3 now... not really for any reason in particular. But today my boss offered to get me some, so I'm counting it as 2sp for some cream and some sugar. I didn't finish it. I have Cheerios on the side for 3sp!

My desire is to see people take back their power and to recognize that illnesses are NOT normal and are NOT inevitable. Just because our parents had a particular illness, doesn’t mean that it’s inevitable in our lives. So when we have a migraine or allergies or diabetes we need to recognize that these things are NOT normal. It is a signal our body is providing to tell us SOMETHING IS WRONG, PLEASE HELP! But most of the time we ignore these signals and we opt for a bandaid solution, a topical cream for eczema, a painkiller for a migraine, ant-histamines for allergies. But what we need to do is to identify the root cause and deal with it once and for all so our body can begin to heal. We don’t need to live 120+ years, but whatever lifespan we’ve been allotted, should be a healthy one.
