it feels like ages since I’ve posted on here🤷🏻‍♀️ this semester is my most stressful yet, so I haven’t had time to cook my favorite meals & create new recipes! I’m soo happy to have a week off from school, so I can relax and spend time with my family & friends. This is not a new recipe, but it’s been a staple in my kitchen for years now! Stuffed chicken is so versatile, and super easy. I tend to stick to the same filling every time I make it- spinach & feta cheese🤤 From time to time I’ll switch up the cheese I use, or even add some sun-dried tomatoes in. Monday night #familydinner...STICKY COATED CHICKEN WITH ROAST SPUDS & ASIAN SLAW...was definitely delicious!!! I used honey, Chinese 5 spice powder, Tamari sauce, black bean sauce & extra-virgin olive oil to make the sticky coating over the chicken, which I had butterflied & removed the skin from whole hormone-free chickens. I baked the chicken on 180 degrees Celsius for an hour as they cook quicker when butterflied. Try these ingredients next time you roast a chicken 🍗🍯 . The only boat I want to be on is a spaghetti squash boat. Last night for dinner I had spaghetti squash with @gardein meatballs, @raoshomemade marinara sauce, and nutritional yeast! It was super easy to make and delicious too. Today has been such a Monday, but it’s okay because I only have 1.5 more days left of school this week, then time to feast!! I bet you all can’t wait until Thanksgiving is over so I’ll stop posting pumpkin recipes 😂 I have one more to share! I adjusted the recipe for my vegan oatmeal pumpkin muffins and I wanted to share the recipe with you all now in case anyone needs a recipe for Thanksgiving 😋 these muffins are very moist and dense (they have an entire can of pumpkin!) but I like them that way! If you want them to be a little less moist, feel free to add a bit more flour 😋Please let me know if you make these muffins! * * 1/2 cup all purpose flour 1/2 cup whole wheat flour 1 tsp baking soda 1 cup old fashioned oatmeal 1 15oz can of pumpkin 1/4 cup unsweetened applesauce 1/2 cup brown sugar 1/4 cup granulated sugar 1 tsp vanilla extract 1 1/2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp ginger * * Combine the pumpkin, applesauce, and sugars and mix until combined. Add in the vanilla and mix. Grind the oats in a food processor or blender until a flour is formed (or else just use a 3/4 cup of store bought oat flour). Combine all three flours, the baking soda, and spices and mix. Gradually mix the flour mixture into the pumpkin mixture. Divide evenly amongst a 12 muffin tin.
