Ma boisson du matin: Tous les matins (ou presque 🙈), à jeun, je mélange de l’eau chaude, du jus de citron, des copeaux de gingembre et j’obtiens une boisson santé énergisante mais également anti-inflammatoire et antioxydante. Le gingembre et le citron aliments sont réputés pour leurs nombreux bienfaits pour le corps : antioxydant, anti-inflammatoire, detoxifiant. Sometimes you can’t work from a recipe and you just gotta work with what you got. On this night, I had leftover lasagna sheets, tomato purée, a bag of carrots, 2 bunches of spinach and very little time. To my surprise, this open faced lasagna cooked up so well- sans my favorite cashew tofu “ricotta.” Why do I keep carrots on standby and try to add them to every dish? Because they are so nutrient dense and I struggle eating them raw in salads. Carrots are rich in vitamin A, vitamin K, various B vitamins and potassium. (I also swear by carrot juice as a cure-all elixir from hangovers to fatigue.) Thankfully, shaving the carrots helped them roast dreamily atop an enormous bed of spinach and made this quick dinner a bountiful meal. Topping with a handful of oregano and basil was just the icing on the cake and the fragrance was simply heaven. First run of the month. 💪 This year I've gone from running 150km in a month to not running at all in a month. It's been a year of ups and downs with lots of struggles along the way. I have big goals lined up for 2019, one of which is to be more consistent throughout the year, regardless of what else is going on in my life. 🤸
