Week 2: Day 5 - Lunch Healthy Chicken Sandwich Ingredients 1 Cooked chicken breast, cubed 1/2 red onion, finely diced A handful of chopped fresh coriander 30g of raw pecan nuts 120ml fat free plain yogurt 2 teaspoons Dijon Mustard 1/2 lemon, fresh juice squeezed Salt & Pepper to taste 1 slice of multiseed bread 1 handful of baby spinash Spring onion for garnish Method 1. In a medium bowl, add raw pecans, chicken, coriander, onion, parsley, yogurt, mustard, lemon juice, salt and pepper. Stir gently to mix and salt to taste if necessary. 2. Serve as achicken salad sandwich with whole wheat bread. Or as I used a multiseed bread. My kind of small lunch! Grab a pan, put some cooking coconut oil in it, add two pieces of minced garlic and cook for 2 min, meanwhile take 3,4 pieces of pleurotus mushrooms, wash them, cut them and add them in to the pan. Let the mushroom cook for about 5-7 min at a medium-high temperature. Tak tohle jsou vůbec ty nejlepší proteinové guličky, které jsem doposud dělala 😍 a kéžby jsem se mohla pyšnit na to, že je to můj recept, ale není ... vlastně mi ho dala máma 👩‍👧 a těžko říct kde na něj byla, ale co je důležité!! Musím se o něj podělit i sváma, protože takovou topku je třeba rozhlásit do 🌎. ☝🏻takžé 60g whey protein (původně má být bílá čokoláda, ale já šla do pistácie ❤️), 25 g mandlí, 25 g slunečnicového semínka, 20 g kokosové mouky, 2 lžíce másla (dala jsem 30g @luckyalvincz), původní recept uvádí 2 lžíce zakysané smetany nebo tuhou část kokosového mléka (dala jsem 45g tvarohu), původní recept uvádí lžíci erytritolu, ale upřímně?! Mám těch sladidel plné kecky! Člověk je z nich jen nafouklý 😂 všude náhražky, sladila ... proto jsem zvolila přírodní pro mě vůbec nejlepší sladidlo, teda až po medu a javorovém sirupu - sušené datle ❤️ přesněji 40 g. ... Rozmichujeme datle, přidáme semínka, oříšky - mix, protein, mouku - opět mix, máslo, tvaroh - mix, spojíme v lepkavou hmotu a tvoříme guličky, které obalíme v proteinu. Necháme v lednici ztuhnout ... HOMEMADE VEGAN RASPBERRY CHEESECAKE: 🍰😋⁣ This vegan cheesecake is the perfect summer dessert; creamy, refreshing and perfectly balanced due to the slight tartness of the raspberries.🍰😋⁣ ⁣ INGREDIENTS:⁣ FOR CRUST⁣ * 2/3 cup pecans⁣ * 1/3 cup walnuts⁣ * 6 Medjool dates pitted⁣ * 1/4 cup unsweetened coconut flakes⁣ * pinch sea salt⁣ FOR FILLING⁣ * 2 cups raw cashews soaked in boiling water for 1 1/2 hours⁣ * 1/3 cup pure maple syrup or honey⁣ * 1/2 cup canned coconut milk full fat⁣ * 1/4 teaspoon sea salt⁣ * 2 1/2 tablespoons coconut oil⁣ * 2 tablespoons lemon juice⁣ FOR TOPPING⁣ * 1 cup raspberries⁣ * 3 tablespoons maple syrup or honey⁣ ⁣ INSTRUCTIONS:⁣ 1. Add cashews to a bowl and cover with boiling hot water for 1 1/2 hours. Rinse and drain thoroughly.⁣ 2. Line the bottom of a 6" or 7" springform pan with parchment paper and lightly oil the sides to make it easier to remove once the cheesecake has set.⁣ 3. Combine the nuts in a food processor and pulse until you get a coarse mixture. Add the rest of the crust ingredients and pulse until it starts clumping up and forming together.⁣ 4. Transfer the crust mixture into the pan. Press down with your fingers to pack it evenly into the bottom of the pan to create an even base.Set aside.⁣ 5. Add drained cashews and the rest of the filling ingredients to the bowl of your food processor. Process or blend until creamy and smooth throughout.⁣ 6. Pour the filling over the crust.⁣ 7. Combine the raspberries and honey in the bowl of a food processor until pulverized. Add this mixture on top of the filling.⁣ 8. Cover lightly with plastic wrap and seal the top with aluminum foil. Let it set in the freezer for 4-6 hours.⁣ 9. When ready to serve, pull out the cheesecake and allow it to sit at room temperature for about 10-15 minutes before slicing and serving.Enjoy!🍰😋

How amazingly delicious does this salmon look?! I don’t usually cook my salmon with fresh garlic, but I think I’ll be trying it. I love when it just melts in my mouth because so soft and flaky. I don’t cook it with oil because it’s also a fatty protein, but it still comes out just as moist. This delish dinner was a combination of meal prep this week. A vegan curry with garbanzos and coconut milk paired with tri colored quinoa, crock pot whole chicken, and sauteed spinach. Polished with a dollop of plain Greek yogurt. So yummy, filling and healthy...perfect for a throw together dinner. Curry: Sauteed onion in olive oil. Add 1 tsp cumin, 1 tsp paprika and stir until fragrant. Add a can of organic diced tomatoes, and as full can of drained garbanzo beans along with 2 cups veggie broth. Let simmer. Add can of full fat coconut milk and keep simmering. Add salt and curry spices to taste. It's Friday!! Who wants to try this for lunch 🥙 ⁉️ . . Vegan Spicy Thai Peanut Ramen . . Ingredients: 2 Teaspoons Olive oil 3 Cloves Garlic, chopped 1 Teaspoon Ginger, grated 1 Teaspoon Green curry paste 4 Cups Vegetable broth, divided 1 Can(13oz.-14oz.) Coconut milk, full fat 1/2 Cup Peanut butter, natural 2 Tablespoons Soy sauce 2 Tablespoons Agave syrup Juice of 2 Limes 12 Ounces Ramen noodles . . Instructions: In a large pot, heat the olive oil on medium high. Then add the chopped garlic and grated ginger. Saute, reducing heat as needed for a minute or 2 to cook the garlic. Now, add the curry paste, and stir it into the garlic and ginger. Cook for another minute. Then add 3 cups of veggie broth and the coconut milk. Stir to combine everything. Reduce heat to low and simmer. Next, in a medium sized bowl, whisk together the remaining cup of broth and the peanut butter. Now, add the peanut butter and broth to the pot and whisk to combine. Then add the soy sauce, agave and lime juice. Simmer on low for 5-10 minutes to develop the flavors. Taste and adjust seasonings. Add a pinch of salt if needed or more lime juice or agave if needed. Right before serving, add the ramen noodles into the pot. Simmer them, cooking according to package directions. They usually only take a minute or two. Serve immediately as is, or add veggies or tofu or whatever you want. Ingredients: 🍬400g low-fat cottage cheese/ ricotta 🍬2 eggs 🍬250g egg whites 🍬140g rice flour 🍬a handful of fresh or frozen raspberries 🍬1/2 tsp. baking powder 🍬sweetener . METHOD: . 1.Mix all ingredients (except raspberries) well with the mixer. 2. Add raspberries (I put them only on the surface, but you can mix them also in the batter). 3.Pour the batter in silicon trays and bake in the oven in 180C for about 40 minutes (while lighly brown). . PORK CHOPS! In my last post, you learned you should never skimp on a brine! Here’s a super simple way to cook ‘em up perfectly with a super browned, crisp exterior and a juicy interior. The idea is the cook them most of the way on the stovetop, so you get the deepest sear possible on one side. Transfer the whole pan directly to the oven for even cooking throughout the rest of the way. If you don’t already have one, an instant read meat thermometer is LIFE CHANGING I tell ya. After 5 minutes in the oven, I begin checking them every 2 minutes thereafter to ensure they don’t overcook. You could even let them come to 140 degrees and leave them in the pan, outside of the oven, for another few minutes as they’ll continue to cook a bit. And NEVER slice into your precious chops without giving them a good rest. I was never any good at cooking meat, and I realized it’s the simplest tips (the ones you think, eh do I really need to wait 10 mins while they just sit there?!) that make all the difference! 🐽🐽🐽
