Happy Monday! Featuring some NO BAKE coconut energy bites. I discovered @emmysorganics coconut cookies last year and LOVE them but they donโ€™t exactly fit into my grad school budget when I can finish a bag in less than a week! ๐Ÿ˜•Thankfully, I found this super EASY 7 ingredients recipe from @gimmesomeoven ๐Ÿ˜ . . 1 cup of oats 1/2 cup of peanut butter 1/2 cup of chocolate chips 1 tsp of vanilla extract 1/3 cup of honey (I only used 1/2) 1/2 cup of flax seeds 2/3 cup of coconut flakes . Each ball: 151 calories, 16g C, 3g P, 8 g F . . I made 20 energy balls from that recipe. For those who count macros, these are slightly higher in calories than the Emmy cookies, but contain 3x more protein, 2g less in carbs, and the same amount of fat! Both are GREAT options- just depends what youโ€™re going for! But these homemade ones are really such a simple snack to make, contains good amount of protein and much better alternative than candy or other sugary snacks you may be craving for! I love chickpeas, but they are one of the hardest legumes for me to digest. Since I'm not willing to give them up I sprouted some to see if that helps. I made this hummus with sprouted chickpeas, tahini, lemon juice, celery, cumin, salt/pepper, water and a little of my favorite rosemary olive oil. It definitely has a different taste and texture than your normal hummus made with cooked chickpeas, but I like it. I'm curious to see how it makes me feel. My kids require a lot of โ€˜snacksโ€™, especially after school! A particularly popular one was fruit bars/ cereal bar type things...but they all come in individually wrapped film plastic then wrapped again in another non-recyclable material, so I had to make a change. I found a very simple recipe for homemade fruit bars which are cold pressed, so it takes minutes to make up a batch! 1 cup dates, 1 cup raisins and 1 cup almonds. (Iโ€™ve also been adding cranberries for an extra treat) Blend them up and press them flat, wrap in something (I re-use the same sheet of grease proof paper each time) and chill in the fridge. None of these are sponsored, they are just things I like. . โ€ข Mixed raw nuts, I have some almost and cashews here. โ€ข Apples. โ€ข Cereal bars, for easy carbs. โ€ข Dried fruit, I have physalis here. โ€ข Almond butter, this ones more for in the suitcase to take away and dip things in. โ€ข Tea sachets, I like English breakfast, peppermint and camomile. โ€ข Dark chocolate. โ€ข Nut based bars for extra fats. โ€ข Jerky for easy protein. . Other good bits are protein bars or protein powder sachets if you have them to take away in case you get in a protein dilemma abroad.

one of my favorite snacks lately are ROASTED CHICKPEAS! i usually eat mine kind of spicy ๐ŸŒถ (although you can put whatever spices you please in them this is just how I make them) . . ๐Ÿ”ฅthis makes a big bulk of them: preheat to 425, 4 cans of chickpeas rinsed, dried and peeled off all the shells (this part may take a while! me personally I donโ€™t like the shells so itโ€™s all up to you) + 2 Tbsp olive oil + cayenne + chili powder + paprika + cumin + salt (I usually just eyeball the spices) mix all together and spread on a baking sheet for 25-30 mins + after its over, mix around and put back in oven for another 25-30 mins and then wallla! ๐Ÿ”ฅ a perfect midday work/school snack! . . . . . . . . . . #roastedchickpeas #chickpeas #garbanzobeans #garbanzos #snack #healthysnack #healthysnacking #middayworksnack #workflow #mealprep #roastedchickpeasforthewin #chickpeasnacks #healthyeating #healthylifestyle #healthylunch #healthysnackideas #amidoingthisright #lol #why
