Safiha / lahm bi ajin/sfiha سفيحه /لحم بعجين This is a Palestinian recipe, with pomgranate molasses that adds a syrian -lebanese touch. The filling is made with spiced lamb, pine nuts, onions, spices, tomatoes , tahini and lemon juice. The dough is a basic pizza dough ( mine is made with whole wheat flour) . The name safiha means to flatten. Ingredients Basic pizza dough 3 tablespoons extra-virgin olive oil 1/3 cup pine nuts 1 pound ground  lamb 1 ripe tomato, peeled, seeded and chopped 1 large onion, chopped Juice of one lemon 1/2 cup tahini 1/3 cup pomegranate molasses 1 tsp  allspice 2 tsp salt Freshly ground black pepper to taste 1/4 tsp cayenne pepper  Pomegranate arils to garnish 1. Prepare the pizza dough. After the first rise, divide into small balls.  Arrange the balls on a lightly floured surface, cover with a kitchen towel, and let rest . 2. In a skillet, heat 1 tablespoon olive oil over medium heat and toast the pine nuts until golden. Topping 3. In a large bowl, mix together the lamb and  onion and cook till all liquid evaporates.  Add tomato, pomegranate molasses, allspice, salt, black pepper, and cayenne and cook for 2 min. Add tahini and lemon , mix well and turn off the heat. 4. Preheat the oven to 450 F/ 270C 5. Grease two baking sheets with  olive oil. 6. Roll the balls of dough into small disks Place 1 to 2 tablespoons of the meat mixture in the center of each disk ,sprea it over the surface of the disk, but leaving a border. Arrange on the baking sheets and bake until crispy on the edges. 7. English follows↓ ・ 息子の晩ごはん -スパナコピタカップ -野菜スティックとザズィーキ ・ 主人は会社のイベントで帰宅が遅いと予想されたので、大人用には別途ハムとキャベツのスープだけ作り、息子は別メニュー。 ・ かれこれ12年くらい前から大好きなスパナコピタ(ほうれん草のパイ)とザズィーキ(ヨーグルトときゅうりのソース)は息子も大好き。今日もあまり食欲がなかったのだけれど、パイ2個とソースのみしっかり食べた。 ・ スパナコピタに入るフェタチーズは塩気が強いので、今まではリコッタチーズのみで作っていたけれど、1歳半になったし…と、初めて少しフェタも混ぜてみた。やはりスパナコピタはあのフェタチーズの独特な味があってこそ!と再確認。 ・ 一緒に食べようと多めに盛った野菜スティックは、食べないどころか触りもしなかった。。 ・ ちなみに主人、まさかの19時過ぎ帰宅!去年同じイベントの時は、日々22時を優に過ぎての帰宅だったのだけれど…なんか拍子抜け😅 ・ 🥧 ・ K's dinner: -Spanakopita cups -Tzatziki and veggie sticks ・ Hubs was expected to work late today due to the company's event so I just prepared cabbage and ham soup for us adults and made a separate dinner for K. ・ My first encounter with spanakopita and tzatziki was about 13 years ago, when I was a student in Canada, and they've always been on my favourite food list ever since. K loves them too and ate 2 spanakopita cups and most of the tzatziki despite lack of appetite. I'd been using only ricotta as feta is quite salty, but today, for the first time, I decided to add a bit of feta. Spanakopita tastes 1000x better with feta. ・ I intentionally put a lot more veggie sticks than he'd need because I thought he'd be more interested if we share the same food (he recently learned "cheers"). However, he took a glance of them and acted as if they were not even there🤣 I'll keep offerring though! ・ By the way, hubs came home unexpectedly early... at just past 7pm. Last year, during and around the same event, I remember he came home way past 10 or 11. A pleasant surprise, I guess...😅

Mashed potatoes!!! Quick tip: make these today for Thanksgiving! 🙌 🦃 YES you heard me right, I always make my mashed potatoes ahead and they are perfect come dinner time. Here’s my recipe! Don’t stress about the oven temp too much, if you have other things going in there just stick these in too and take them out when they are warmed through. MAKE AHEAD MASHED POTATOES INGREDIENTS 2 pounds potatoes, russet or any starchy potato 2/3 cup half and half 2 ounces cream cheese 3 tablespoons butter 1/2 teaspoon salt 1/2 teaspoon season salt 1/4 teaspoon pepper INSTRUCTIONS Peel (optional) and dice potatoes. Boil until fork tender, drain. Mash over low heat, this allows the moisture to escape and creates fluffy mashed potatoes. Add half and half, cream cheese, butter, salt, season salt, and pepper. Mash until combined and smooth. Pour into buttered 8x8 pan. Dot top with additional butter, if desired. Cover with foil. When ready to eat, place covered pan in 350 degree F oven for about 20 minutes or until warmed through.

Pasta alfredo! Ingredienser: 2 kycklingbröst 5 dl grädde 2 vitlöksklyftor 1 bit parmesan 1/2 dl vitt vin 1/2 dl kycklingfond 2 msk olivolja Valfri pasta 1 krm salt 1/2 krm vitpeppar ------------------------------- •Skär kyckligen i bitar och bryn i en panna med lite olja •Slå på vinet och vitlök, låt det koka någon minut •Tillsätt grädde och låt allt småputtra 10-15 minuter •Koka pastan men inte helg färdig •Sila av och rör ner i såsen tillsammans med parmesanen salt och peppar •Låt allt koka ytterligare 5 minuter •Smaka efter eventuellt mer vin salt eller peppar. Lycka till! Smaklig måltid.

Ingredienser: 2 kycklingbröst 2 dl teriyakisås 2 msk honung 1 msk soja 1 vitlöksklyfta 1 msk ingefära 1 morot 1 paprika 2 vårlökar 1 scharlottenlök 1 paket sockerärtor 1 kruka koriander Vildris 2 msk sesamfrö ------------------------------ •Skär alla grönsaker i julienne (Fint skurna stavar) •Blanda teriyaki,honung,soja med riven vitlök & ingefära •Bryn kycklingen i en panna •Pensla på rikligt med såsen och toppa med sesamfrö •Baka i ugn 170° ca 15 •Fräs grönsakerna i lite olja på hög värme (dem ska fortfarande ha lite textur) •Koka riset enligt anvisningar och blanda sedan med finhackad koriander Lycka till! Ingredienser: 500g blandfärs 2 gulalökar 2 vitlöksklyftor 2 ägg 1 dl ströbröd 1 dl mjölk 1 msk tomatpuré 2 tsk dijonsenap 1 tsk oxfond 1 kruka kruspersilja 2 krm salt 1/4 krm cayennepeppar 1/4 krm svartpeppar 1/2 tsk sambalolek 5 dl grädde 1 gurka 1/2 dl ättika 1 dl socker 2 dl vatten 250 g smör 8 mjöliga potatisar ------------------------------ •Blanda ättika,socker & vatten kallt •Skiva ner gurkan tunt och blanda med lagen och låt i kylen •Riv lök och vitlök och blanda med ströbröd och mjölk och låt det sedan svälla i ca 5 minuter •Tillsätt färs och resterande ingredienser och rör tills allt gått ihop •Forma till järpar med hjälp av en sked och din handflata •Bryn i olja och smör och avsluta i ugn 160° 10 minuter •Skala och koka potatisen •Sila av och vispa ihop fluffigt med smör och ca 1 dl grädde och mjölk •Koka upp resterande grädde med ca 3 msk oxfond och 1/2 msk tomatpuré Lycka till! Hösten är här, och vad passar inte in bättre än en härlig lövbiffsgryta på färska tomater! Ingredienser: 1 paket lövbiff 1 ask cocktailtomater 1 palsternacka 2 gula lökar 2 vitlöksklyftor 4 msk tomatpuré 1 tsk sambalolek 2 msk oxfond 4 dl vatten 1 krm rosmarin 1 krm timjan 1/2 krm cayennepeppar 1 1/2 krm salt 1 krm paprikapulver 1 tsk dijonsenap 2 msk cremefraiche 4 dl grädde --------------------------------- •Dela och bryn köttet i en kastrull •Hacka ner grönsakerna och fräs med köttet tills allt mjuknat •Tillsätt tomatpure och sambal och stek ytterligare någon minut •Häll på vatten,oxfond och kryddor låt allt småputtra ca 40-60 minuter tills det mesta av vattnet har kokat bort •Slå på grädde och låt det koka upp •Rör ner senap och cremefraiche och smaka efter mer salt och peppar. Lycka till! Smaklig måltid.

One of the best things that happened in 2018 for me was the opening of a (finally!) #farmtotable #vietnameserestaurant in the area. Before coming, I read the reviews and most people complain about it being TOO EXPENSIVE FOR #vietnamesefood. Come on people! I try not to judge others for their opinions but it’s 2018! Do you REALLY think dirt-cheap Vietnamese restaurants feed you remotely decent quality ingredients?!? Why does #ethnicfood have to be cheap?! It takes the same amount of effort, if not more, to make Vietnamese food compared to other cuisines like French or Japanese. If you ask me, I think these guys are not charging enough. Who else other than these pups are with me? 👋🏻
