English follows↓ Swipe for 👶🍽️ ・ 晩ごはん -豆腐入り豚の角煮 -人参のバター炒め -セロリの梅和え -こんにゃくの麺つゆ炒め -乾燥ゴボウとエノキのお味噌汁 ・ 冷蔵庫がほぼ空っぽだったので、寄せ集めてどうにかした夕食。角煮に豆腐、初めてやってみたけどなかなかいい感じ。 ・ 息子の晩ごはん -オムライス -ブロッコリー、カリフラワー、ミニトマト、セロリ ・ 昨日の残りのミートソースを使ったオムライス。ケチャップは不使用。気に入ったらしく、よく食べた。最後は眠気と戦いながらトマトを口に運んでいました。 ・ 🥚 ・ Dinner: -Kakuni (simmered pork belly) with tofu -Sauteed carrots -Konnyaku with soy sauce -Celery with pickled sour plums -Miso soup ・ Use-everything-left-in-the-fridge Japanese dinner. After cooking this dinner, there's literally nothing other than a carrot and seasonings in our fridge!! It was my first time adding tofu in kakuni and it was a hit! For those who don't like tofu, try simmering in strong flavoured soups or marinating in sauce. Tofu will never be blunt because it aborbs the flavour of whatever being cooked in like a sponge!! ・ K's dinner -Omurice (fried rice omelette) -Broccoli, cauliflower, cherry tomatoes, celery ・ For K, I made omurice using the leftover veggie-packed Bolognese sauce. Normally, ketchup is used to season the rice but I used the Bolognese sauce + tomato paste as ketchup is loaded with sugar and salt. K loved it!! He probably ate more than 90% of it (he rest ended up either in his apron or on the floor). He didn't eat the veggies other than the cherry tomatoes but it's okay because loads of veggies are hidden in the Bolognese sauce!! The sleepy lil man who decided to ditch naps altogether today almost fell asleep while eating the tomatoes towards the end though, which was just adorable❤

It seems like life never slows down! Busy week this week, and I am so grateful I spent all afternoon in the kitchen Monday preparing my meals for on-the-go. I reheated this lovely dish in the microwave, and my lunch was ready in 3 minutes! Can’t beat that. 🤗 Chicken thighs, mushrooms, onions, and kale, roasted carrots, and 1/2 an avocado. I cooked all the veggies and chicken in @fourthandheart grass-fed ghee.

Spicy Garbanzo Creole 🌶 Yummy vegetarian option for meatless dinners! 1. Sauté 3 diced tomatoes, 1 diced onion, and 4 crushed garlic cloves in a skillet (I used a wok) for about 5 mins. 2. Add 1 can garbanzo beans to the pot along with 1 sliced green bell pepper, 3 tbsp tomato paste, 1-2 cups chicken broth (depending how thick you would like your sauce to be) or vegetable broth, 2 bay leaves, salt, pepper, 2 tsp crushed red pepper flakes (or a couple tsp hot sauce), 1 tbsp cumin, 1 tbsp paprika, and 1 tbsp chili powder. 3. Bring to a simmer for about 15 mins. 4. Serve with fluffy rice, avocado slices, and fresh cilantro.

Quick homemade chimichurri sauce: Blend 1/2 cup parsley, 1/2 cup cilantro, 4 cloves crushed garlic, 2 tbsp lemon juice, red pepper flakes, salt, and pepper. . Baked plantain recipe: 1. Preheat oven to 375F. 2. Slice ripe plantain (skin should be black) into 1/2 in slices and toss in olive oil and salt. 3. Bake for 15 mins flipping halfway.

Cheesy Fried Plantain Quesadillas 💃🏻 . Quesadillas filled with ground beef, crispy fried plantains, veggies and cheesy goodness! The crunchy fried plantains give these quesadillas the most delicious flavor. . 1. In a skillet over medium heat, sauté 1 chopped onion, 1 chopped red bell pepper, 1 chopped green pepper, 1/2 lb ground beef, 4 crushed garlic cloves, 1 can drained black beans, 1/3 cup tomato paste, salt, pepper, 1tbsp chili powder, 1/2 tbsp cumin, 1/2 tbsp paprika and 2 bay leaves. 2. Sautee for about 15-20 mins or until ground beef is cooked through. 3. Remove from heat. 4. Layer a regular taco sized flour tortilla with cheese, then meat mixture, then chopped fried plantains, and then cheese again. Place another flour tortilla on top of layers. 5. Place the quesadilla in a lightly greased skillet and cook on each side for about 2-3 mins over medium high heat. Be careful flipping quesadilla over. Make sure to use a large spatula when flipping and then hold the cool side of the quesadilla with your hand and lay it in the skillet gently. 6. Slice quesadillas into triangles and serve with desired toppings (lime, guacamole, sour cream).

French Toast Stack 🍓 . Easy French toast that’s soft on the inside and slightly crispy on the outside 😛 . 1. In a mixing bowl, combine 1 cup milk, 1/2 cup brown sugar, 2 eggs, 1tsbp cinnamon powder and 1 tsp vanilla extract. 2. Pour mixture over bread slices (I used about 10 slices of white bread) and refrigerate for about 15 mins. 3. Add 1tbsp butter to a skillet over medium high heat, and add a couple of toast slices to the skillet. 4. Cook for about 2-3 mins each side. 5. Continue to add butter and toast slices to the skillet until all slices are cooked. Top with desired toppings. I added chopped strawberries, maple syrup, and chocolate chips.

Gourmet Salad Meal Prep 🥗🙌🏽 . . . Anyone else crave amazing salads from your favorite cafe or restaurant, but your wallet has other plans? (Like not paying $10-$15 dollars for a bowl of vegetables) 😳🙋🏽‍♀️ I love to grab pre-packaged greens (my favorites are arugula and sweet baby greens 😋) from my local grocery store and just throw together a salad using whatever I have in my fridge and pantry. For this week’s meal prep, I used Organic Gala Apples 🍎 (I squeeze lemon juice over the slices before adding them so that they don’t go brown), Gorgonzola crumbles 🧀, Red Onion, Craisins 🍒 and Slivered Almonds 🥜 I added some grilled chicken (I like to pack this separately to warm it up before adding it to the salad) and my 3-ingredient raspberry vinaigrette, which is just equal parts lemon juice, olive oil, and my favorite raspberry jam. Mix it all together and voila ✨ You have a delicious gourmet salad at half the price 😊 Enjoy!

Baked Spaghetti and Meatballs 🍝 . Possibly one of the most comforting meals that exists.... super cheesy spaghetti and meatballs 🧀 . 1. Make meatballs: combine 1/2lb ground beef, 1 cup panko, 2 eggs, 1 chopped small yellow onion, 4 crushed garlic cloves, salt, pepper, cumin, and red pepper flakes. Form into 1 inch sized meatballs. 2. Heat 2tbsp oil in a skillet over medium heat. 3. Add meatballs to skillet and cook about 3-4 mins each side. 4. Cook pasta according to directions, drain, and set aside. 5. Add cooked pasta and 4 cups pasta sauce to the meatballs in the skillet and mix around. 6. Set oven to broil on high. 7. Place 2-3 cups shredded mozzarella cheese and chopped basil on top of pasta. 8. Broil in oven for about 2 mins or until cheese is totally melted and bubbly.
