This week is all about Ayesha’s 5 minute vegan pesto. It couldn’t be simpler! Check out our video and the recipe below to make your own. . . . 150g @superfoodieseu Organic Cashew Nuts 50g Marigold Engevita Yeast Flakes ​ 2 tbsp @meridianfoods Organic Extra Virgin Oil Pinch of @avogeluk_health Herbamare Herb Seasoning Salt 150ml Hot Water 120g Fresh Basil 6 cloves of garlic . . . Soak your cashew nuts in water for at least 4 hours. Once they’re soaked, pop them into your blended and blitz until they become fine. Then add your hot water a little at a time and keep blending. Keep going until your mixture forms a creamy paste. Now you can add the rest of your ingredients. Add in your basil, nutritional yeast, garlic and olive oil. Blend again. Then add a pinch of Herbamare salt for seasoning and blend one last time until all the ingredients are thoroughly combined. We're a very happy bunch here at the Jan de Vries kitchen today... Since it's #foodiefriday, Ayesha is sharing her delicious recipe for cranberry and pecan cookies! Ingredients . 150g Coconut Merchant Organic Coconut Oil 175g Coconut Merchant Organic Coconut Sugar 1 tsp Doves Farm Gluten Free Baking Powder 100g Doves Farm Buckwheat Flour 100g Green City Ground Almonds 75g Dried Cranberries Pinch of Salt 1tsp Vanilla Extract 75g Pecans 1 Egg . . Preheat the oven to 160° and line 2 baking trays with parchment paper. Cream together the coconut oil and coconut sugar in a food processor. Add in your beaten egg and vanilla extract then blend again. Now, add the buckwheat flour, ground almonds, baking powder and a pinch of salt. Blend again until fully combined. Add your dried cranberries and roughly chopped pecans. Blend again until they are broken down and evenly distributed through the dough. Roll your dough into walnut-sized balls and place on a baking tray. This week’s #foodiefriday is the perfect dish for this time of year – it’s Ayesha’s comforting lentil dhal! Check out the ingredients and recipe below to find out how make it for yourself… . . . . . 400g @greencitywholefoods Puy Lentils 1 tsp @lucybeecoconut Organic Turmeric Powder 1 Tbsp @coconutmerchant Coconut Oil 2 tsp @greencitywholefoods Cumin Seeds 1/2 tsp @greencitywholefoods Chilli Powder Pinch of @avogeluk_health Herbamare Herb Seasoning Salt 1 Small Onion 3 Garlic Cloves 2 tsp Cumin Powder 1 tsp Coriander Powder Fresh Coriander . . . . Place the lentils in a pan and cover with enough water to come to around two inches above their surface. Stir in the turmeric, cumin powder, chilli powder, salt and coriander powder. Bring to the boil and reduce to a simmer. Once cooked, give the lentils a good stir. They should have the consistency of porridge – thicker than soup and looser than houmous. Add more water as necessary. Next, add the coconut oil to a frying pan and sauté your onion and garlic until they are brown. Once brown, add in the cumin seeds. Once the mixture has heated through, add it to the cooked lentils. Now you can add some fresh coriander, as much or as little as you’d like!
