Ranchero braised beef, chipotle maple mashed squash and roasted asparagus is what’s for dinner. Sooo freaking good!!! One of my favorite combos are sweet and spicy and this hit the spot 💯. The mashed squash was delicious, super easy to make and relatively low in carbs when eaten in moderation. I sliced the acorn squash in half, scoop out seeds, rub with olive oil and roast it face down at 425 for about 30 minutes or until tender. Its seasoned with dried chipotle pepper, @lakantosweetener maple syrup and lots of butter. Hope everyone had a great weekend!! You’ll never know what you can achieve if you never try. 🌟 • I’m really proud of myself for how I handled this weekend. I ate all the foods, I had all the drinks, and I have zero guilt. I know that Paleo food is good for my body, but sometimes I like to eat food that’s good for my soul. I also know my body well enough to know the consequences of eating certain foods: I’m tired and a little achy today, but I don’t regret it. To be able to eat the food and move on to the next thing is a huge victory for me. After my weekend of fun treats, my body was truly craving the nutrient dense goodness that fuels it and this hit the spot! 😋

For those that wanted the shrimp cake recipe, here you go!: One bag of precooked medium size bag of frozen shrimp (16 oz) 4 green onions thinly sliced 1 tsp of garlic powder 1 tbsp Zatarans crab boil seasoning 1/4 and 2 tbsp cup of coconut flour. 1/4 cup of egg whites 1 tsp of lemon pepper seasoning 1 whole egg 1 tbsp of fresh dill EVOO for the skillet Defrost the shrimp then roughly chop them up and add to a large mixing bowl Add the whole egg, green onions, garlic powder, lemon pepper, Zatarans seasoning and egg whites Next add the egg whites Mix all ingredients together, it should be pretty wet. Make small patties and gently rest them in hot oil. Fry each side for about 6 minutes. They need to be brown before flipping. Be gentle but they’ll hold. I made about 15 out of two bags of shrimp. Day 28. It was a good one. Good eats, even better people. I had my first voice lesson in an eon or so, with my very first voice teacher. Hard to believe I’ve known this lady for 26 years...and she still supports and believes in me. Plus a lovely one-on-one with my grandma, and even a quick visit with my mama. 🦌 Every winter I somehow end up with an abundance of deer meat (I know alot of wild game hunters apparently). As I was foraging through my freezer for a protein to make for dinner tonight, I stumbled upon the last of last winter's venison hoard -which was a chunk of deer roast. • I'm not usually a fan of roasts (venison or beef), but with a little help from @popular_paleo 's recipe for slow cooker Italian beef, I made my last venison meal until next winter a memorable one! Aside from using venison instead of beef and adding celery, I followed the recipe exactly and it turned out perfect!
