New recipe! Crispy balsamic Brussel sprouts! The key to making them crispy is the right amount of fat and the right amount of cook time. I used coconut oil in this recipe and found the perfect time is 20-25 minutes. The balsamic and honey add a little sweetness and the pecans add some extra crunch! . One thing they don't tell you about working from home is that it'll be really easy to eat hummus and crackers for lunch every day instead of real food 😬 in an effort to stop smashing half a tub of hummus at noon every day, I meal prepped this easy roasted broccoli & chickpea orzo salad! 🥦 Recipe below 👇🏼 . . ROASTED BROCCOLI & CHICKPEA ORZO SALAD . Preheat oven to 400°F. Toss one head of broccoli (chopped, of course) and one rinsed, drained can of chickpeas with salt, pepper and olive oil. Spread evenly across two lined baking sheets, and roast for 20-25 minutes. . While that's happening, cook 1 cup of dry orzo according to package directions. Drain and set aside. . In a large bowl, combine cooked orzo, roasted broccoli and chickpeas, a few tablespoons of pesto, the juice of half a lemon, some red pepper flakes, and about 1/4 cup of shredded parmesan cheese. Toss in some capers too if ur feelin fancy. (Or feelin whisky. DRUNKEN PORK TACOS . Cubed #pork loin drowned in #beer and #tequila makes for a heady, succulent, flavorfully rich filling to this deliciously simple #recipe for #tacotuesday. How you serve it is entirely up to you. I prefer warm corn tortillas over flour and keep my garnish simple--some sliced #radish, chopped #scallion (any type of #onion, really), salty-crumbly queso fresco and a few sprigs of #cilantro. . PREP/COOK TIME: About an hour . Makes 6 – 8 Tacos . 1 ½ Lbs – Boneless Pork Loin Country-Style Ribs or Chops, Cut into 1” Cubes . 1 ½ Tbs – Goya Adobo All-Purpose Seasoning with Pepper . 1 Tsp – Course Ground Black Pepper 1 Tbs – Extra Virgin Olive Oil . One 24 Oz Can – Pacífico Beer . 2 Tbs – Patrón Reposado (Feel free to use whatever tequila you have on hand) . 2 Tbs – Fresh Lime Juice . 1 Pkg – 6" Corn or Flour Tortillas . 1 Bunch – Radishes, Cleaned, Chopped . 1 Bunch – Cilantro, Cleaned, Chopped . 2 Stalks – Scallions, Cleaned, Chopped . 10 Oz – Queso Fresco . THE NITTY GRITTY . In a medium bowl, season pork with Adobo and black pepper; combine evenly and set aside for 10 minutes. In a 10” non-stick pan, warm oil over medium-high heat. Add pork and brown pieces till golden (about 2 – 3 minutes). Add entire can of beer—completely immersing the pork—followed by tequila and lime juice. Increase heat and simmer on high, uncovered, for about 30 – 40 minutes, stirring occasionally, until liquid reduces, forming a glaze and coating the pork. During reduction, warm tortillas, chop cilantro, radishes and scallions; crumble cheese. . You can also double or triple the recipe. I recommend a heavy bottom pot for even distribution of heat for simmering. Also, brown pork in batches...very, very important. . It’s slow cooker szn and I couldn’t be happier. This salsa verde chicken was incredibly easy – just threw everything in the crockpot before work and it was ready by the time I got home🍴served with spinach, tomatoes, guac, and @beanfieldssnacks pico de gallo chips 🥑 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a crockpot, combine: 6 chicken tenderloins or 3 chicken breasts 1 jar of @traderjoes salsa verde (any 12oz jar will do) 2 bell peppers, chopped Cook on low for 8 hours or on high for 4.

So it’s Fall here on Cape Cod and I feel like I’ve got to get something off my chest...I don’t cook with pumpkin, I steer clear of pumpkin pie at Thanksgiving and I’ve never had a pumpkin spiced latte 😱 Phew, I feel better now! When it comes to orange vegetables, Butternut Squash is my go-to! I love everything about it, except what it does to my hands after I chop them, honestly it totally freaked me out and I had to call a friend for reassurance 🤣. It is delicious in pastas, salads and especially in this sweet, spicy, herby Chipotle Butternut Squash soup! @inagarten Curried Butternut Squash Soup is my all time favorite fall soup, it’s amazing, but what Ina recipe isn’t!?!? I wanted to add some heat so I adapted her recipe and came up with this. It’s got a great kick that is balanced by the tangy Agave Lime Crema and crispy, salty pan fried Brussels Sprouts. To start -Dice 1 onion and 1 butternut squash, coat in Olive Oil, S&P and bake at 450° till slightly browned and cooked through,25-35 minutes -Purée or blend the squash and onions. Use a 1/2 cup or so of stock from a 32 oz box to help the blending process. Add the puréed squash and onions to a large sauce pan. Add the remainder of the 32 ounce box of stock, stir and heat on low. Add 1/4 tsp Chipotle Chili powder, less if you’re not sure about the spice level. You can always add more, it’s tough to take it away. Add 1/2 tsp cumin, continue stirring. Add 2-3 tsp Pure Maple Syrup (depending upon taste) for a subtle smokey sweetness. Add one sprig of Rosemary, don’t worry if it falls apart, it’ll be delicious! Season with S&P to your taste. Continue simmering until all of the flavors have melded together. Serve with a dollop of Agave Lime Crema - plain Greek yogurt mixed with Agave Syrup and Fresh Squeezed Lime to taste and a delicious crunchy topping of salty fried Brussel Sprouts - pour olive oil into a small skillet, just enough to cover the bottom, heat oil, add a few Brussel Sprouts that have been finely diced into thin strips and cook til browned and crunchy. Drain on paper towel and salt to taste. It’s a killer combo of flavors, give it a whirl and let me know what you think. Enjoy!

NEW ✨ Sweet Potato Chocolate Chip Muffins !!! ✨ . y’all, i legit went to sleep SO excited to share this recipe with you all because they turned out too. darn. perfect! 🙌🏻 . normally i wait until a recipe is on the blog before sharing… but the world needs this goodness so here ya go! 😍 . P.S. you’re gonna wanna save this one + make them ASAP ❗️ . be sure to tag me if/when you do! 💜 . . WHAT YOU NEED: ⁃1 ½ cups mashed sweet potato ⁃2 eggs ⁃¼ cup pure maple syrup ⁃2 tablespoons avocado oil ⁃1 teaspoon vanilla extract ⁃½ cup unsweetened apple sauce ⁃1/2 cup unsweetened vanilla almond milk ⁃1 ½ C + 2 tbsp flour ⁃2 Tsp cinnamon ⁃1 Tsp baking soda ⁃1/2 Tsp salt ⁃½ C + 2 Tbsp dark chocolate chips . DIRECTIONS: ⁃Roast 4 medium sized sweet potatoes at 375 degrees F for 45 mins. (Poke holes in sweet potatoes with a fork and place sweet potatoes on baking sheet.) Allow to cool for 10 minutes then remove skin and mash out exactly 1 ½ cups of the sweet potato. ⁃Reduce heat in oven to 350 degrees F. Line a 12 cup muffin tin with liners and spray the inside of them with nonstick cooking spray. ⁃In a ;arge bowl mix together mashed sweet potato, eggs, maple syrup, oil, vanilla, applesauce and almond milk. ⁃Add in flour, cinnamon, baking soda and salt while batter is mixing on low. ⁃Fold in ½ cup chocolate chips. ⁃Divide batter evenly into muffin liners, top each with a few chocolate chips, and bake for 25-30 mins.
