Hi everyone 👋🏻 So I’ve not been a good slimmer the last couple of months which has led to weight being put back on and a lot of insecurities creeping back in 😳 But I’ve only got myself to blame 😒 But things are going to change this week. We move into our new house on Tuesday 🏡 and I will try to be good Monday/Tuesday (depending on stress levels 🤯) but come Wednesday that’s it, I’m focused, determined and motivated to shift this weight and more 🤗 I’ve been getting some meal ideas from everyone and seeing so many of your progress pictures has made me even more determined. When the outside temperatures drop, it’s homemade Thai curry for dinner. We absolutely love them and I have to make sure that I cook a huge pot full because we also have it for lunch the day. Another bonus of making a Thai curry is that it takes next to no time to make. A quick google search will give you a massive array of paleo Thai curries. I use the recipe from Sarah Fragoso’s Paleo Thai Cuisine book 👌🏼 perfection every single time.

Today I made my own chicken nuggets I was craving them so badly! Ingredients: 1/2 cup of chopped bacon (I cook it first) 2 cups of chicken mince 1 Tblsp Cajun spice 1 egg 1/2 cup of grated cheese 3 Tblsp Almond meal I heated my oven at 180 degrees while I mixed all ingredients together in a bowl, rolled them into little balls and then placed them onto a oven tray.
