Hot Damn!! 5.2 pounds in a week. That is what happens when I drink enough water and get strict about keto. Also shark week ended 😂😂 Whatever the reason, I’m happy. My pants are loose and after I lose 6.8 more pounds, I’ll be at my mini goal of 275 and plan to dig out my old pair of jeans that stopped fitting but that I also held on to just in case. I’m feeling great and starting to gain more confidence in my body. I'll admit it. I'm a buns man. I love big buns. The bigger the better. This steamed buns recipe is from my cookbook friend and guru @andreanguyen88. Filled with cabbage, mushrooms, carrots, ginger, garlic, onions, and crumbled tofu. The key I've found is to make a blend of cooked and raw ingredients to give it that deeply complex umami and fresh taste. Little seasoning is needed beyond some soy sauce and sesame oil. Don’t listen to the scale! I gained weight the last two days in a row with only eating healthy foods and exercising. Yesterday I did fast in the morning but went to the farmers market n had samples of things, ate pasta for dinner, made margaritas and had a couple tequila shots, had some popcorn late at night and then lost what I gained and an extra pound overnight. Let your body do what it’s made to do. Give it time to heal itself. What I’ve learned from this journey is patience that’s for sure. Ugly set but just excited about 50kg! 🤷‍♀️ Had a glorious week at maintenance calories and have maintained to the decimal point 😂 time to get back into a nice deficit tomorrow! Approx 1,228 calorie day! Mushroom and spinach omelette - 320 cals, full cream milk Milo - 121 cals, griffins chocolate chip biscuits - 89 cals, vegan black bean and kumara spanakopita, mango rocket salad, lemon pesto cauliflower and carrot, couscous salad and Moroccan lamb tagine - 382 cals, piece of pear tarte tatin - 302 cals, and a tea with light milk to end the day for 14 cals. ☺️

Delish meal at home with the family! Forgot to take a pic of the main course because I dug in too quick haha so here’s a pic of the leftovers. Mango and rocket salad, vegetables with pesto and lemon, couscous salad, Moroccan Lamb tagine and black bean and kumara spanakopita. All vegan except the tagine as well to accomodate my two vegan sisters! AND THEN swipe to see the lush dessert - pear tarte tatin. 🤤 with a cup of tea! It all was amazing and I’m really not sure on the counts, I had 600 left for the day but I probably went a little over. Estimating I’m ending on ~1,250-1,300 calories!

200g of mushrooms ( boiled in salt for 2-3 mins), 60g of cheese + salt pepper, chives, oregano and green chilly and 2 eggs baked for 15 mins. 370 calories, 30g of protein and 6g of net carbs. Can’t stress enough, incorporate eggs in your diet. Don’t be scared of eating the yolk. To make your vegetables taste better, boil them in salt till they’re tender. Your meals should be a mix of protein, carbs from green vegetables and healthy fats. Vegetables add volume to your food without adding too many calories. Protein takes longer to digest and keeps you full. Fat satiates you and makes you very very happy 😃 mmmmmm that 🧀

Sorry I haven’t been posting much, but I have been tracking! I’ve been using points plus as well as the Lose It app to track calories. I’ve found the two to line up almost perfectly. I try to stick to my daily PP goal of 32 without using roll overs unless I have to, and I am trying to eat around 1400 calories a day! So far I’ve lost 1.4 pounds of the 4 I gained 😫 this dinner was 12 points and worth every single one. For 1 cup of the bob Evans Mac and cheese it was 9 points. And I counted the potatoes as 3 since they were just seasoned.
