I know we dont need ANOTHER picture of eggs and bacon but my husband makes the eggs so good with seasonings and shredded cheese paired with crispy bacon and a half of an avocado. Super quick and easy turkey meatballs for the win! So many possibilities for these lean, flavorful little guys: snacks, salads, pastas, breakfast, etc. Make them in less than an hour with this simple recipe: 1 pound lean ground turkey 1 egg, beaten 1/2 cup dry bread crumbs 4 cloves garlic, minced 1/4 cup onion, finely chopped 1/4 cup parsley, chopped 1/2 teaspoon oregano 1/2 teaspoon sea salt 1/2 teaspoon black pepper . Preheat oven to 350F. Mix all ingredients together and shape into meatballs (about 1 inch in diameter). Place on cooking sheet lined with parchment paper and bake for 30 minutes. Makes 20-30 meatballs.

Date night last night and us and friends went to an amusement park. I haven’t been in forever and had so much fun! I was able to avoid my 3 favorite carb heavy foods French fries 🍟, fried dough, and dipping dots! It’s not even like dipping dots are delicious, but for some reason I used to always have to have some when I saw them! I really forgot that amusement parks are pretty much a 60% food stands and 40% rides. Also I am super impatient and hate lines 🤷🏼‍♀️We were kid free(date night) and I just need to say experiencing an amusement park without kids is sooo much less stressful. We saw a kid breaking down in a complete tantrum. I have the mom the nod of solidarity, The I am not judging you I feel for you nod✊ ———— So while are friends aren’t keto they are super supportive and not the type to keep saying “Just do it, have some fries” not that I can’t resist peer pressure, but it does stink when people are constantly pointing out things you can’t have and trying to talk you into them. I don’t know about you but we have some other friends that aren’t keto, and when we hang out it’s as if they are trying to eat as many carbs as possible and with each bite mention, “oh yeah you can’t have this right?”😒 ————— I think one of the biggest take aways we have learned the last year being keto is how much we used to rely on food for fun. A night out used to consist of dinner, then dessert, then going somewhere else for apps and drinks. Just eating. We not only have more energy now to do more, but we are breaking out of our routine and trying new things, bowling, hiking, biking, mini golf, I am hoping to white water raft, and more! It’s not all about the next meal or planning my day around food. Don’t get me wrong, I am still a foodie 😝 but it is a nice little change! ————- What’s a date night look like for you?
