Hello 👋🏻 you lovely lot! The face behind the brummy accent ⬆️ Thought I’d do a quick intro as I’ve gained lots more followers since i last said hi! This is me and my boy 💙 I’m Vicki, 27, first time mummy to Toby, I’m also a neonatal nurse currently on mat leave (not for much longer though), we stumbled across baby led weaning around 6months ago and actually really loved it, I used to post photos on my main account @tobyandmama_x but was encouraged by my lovely followers to set up a separate BLW account which is what I did eventually! Dinner yesterday. Had some friends over and since I’m the only one being plantbased I wanted to cook something recognizable but without the meat 🥩 and fish 🐟 ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ These summer spring rolls are from the #vegan100 Book 📖 from @avantgardevegan. It was not the only thing I made and everybody loved the vegan dishes. ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ When I started eating only plants most of the times I cooked something with meat for my friends and something else for me. Since I think it it easier to understand my choices and to see how easy and delicious plantbased meals🌱 can be, I decided to not do that anymore. It’s also a good reason to talk about a little more... and maybe I can inspire some to cut back a little on the animal products as well.

happy wednesday friends!! still working on better sleep for the whole family over here, but until then, i’m so happy i have overnight oats prepped 😴☺️ i only prep the base (3/4 c oats + 1c hot water + 1/4c @ripplefoods milk) and then add flavors and extras like flax and chia seeds in the morning! perfect to do with ellington in one hand!

BANANA DATE DROPS are here, and they so good, the whole batch is coming with me on the plane to missouri today! ✈️ made with @elmburst1925 unsweetened hazelnut milk and a handful of ingredients that you probably already have in the house, these banana date drops are going to be your new "go to" (and my picky af toddler likes them too, so it’s a win win!)—here you go: 3 super ripe bananas 1/4 cup avocado oil (or melted coconut oil) 1/8 cup @elmhurst1925 unsweetened hazelnut milk (or any non-dairy milk) 2 tsp vanilla extract 1/2 tsp salt 2 cups gluten free rolled oats 1 cup finely chopped medjool dates pecans for topping! instructions: preheat oven to 350. in a medium bowl, mash bananas well. remove pits from the dates and chop them into small pieces. place the dates in the bowl with the bananas, and add the rest of the ingredients. on a parchment paper lined baking sheet, use a cookie scoop to pack in a scoop of dough, and place onto the baking sheet. place a pecan on top. bake for 20 minutes. make them and lmk what you think! #kalejunkie

Support 🖤 Mumlife, housework, cooking, working, constant build up of washing? I am grateful to have the support from these little babies to get me through. Supporting my body by flooding it with the extra support it needs after being depleted throughout my pregnancy and breastfeeding journey. Inspired by VEGANUARY here’s a moo free cheese sauce to try! 🐮🚫 Think broccoli and cauliflower cheese, vegetarian moussaka, dips, zucchini pasta and dressings! Method: steam or boil cauliflower until tender. Blend with remaining ingredients until smooth. Season to taste. Mix it up Tips: 👉Add flavours to your tastes 👉Add garlic and onion powder 👉Add fresh herbs, spices or chilli 👉Squeeze of lemon to bring out flavours 👉White miso can substitute nutritional yeast 👉works well with soaked cashews in place of cauliflower - just add water to desired consistency when blending

✨Celebrating the Wins! ✨ Have learnt SO much this week about the importance of celebrating every single win! In the words of Dr Barbara Cohen "If you are waiting for something big to happen to celebrate..then you may be waiting a really long time!" Its amazing how little we really celebrate doing the everyday things ..when we could be celebrating ourselves anytime we do anything! Did you get up and get the kids off to kindy or school? WIN! Did you show someone kindness or compassion? WIN!! Did you clean the house? Do the groceries or just be there for some one you love?? WIN! WIN! WIN! Depending on where you are at and what you are going through, your wins will be different..but I have found it is so important to celebrate ourselves for doing the little things because it reminds us how amazing we really are and how well we are doing and keeps us in a positive mindset! Regularly celebrating our little wins is a beautiful way to love our selves and boost our self worth & self esteem so that we want to create more magic in our lives! 🥂

10 things about me.... 1⚡️ I am 34 in June 🎂 2⚡️ I have 2 little boys Axel and Oscar aged almost 3 and 1. They are my world 🌏 3⚡️Ive been married to Matt for 4 years, he is my best friend, lover and biggest support. He drives me nuts some days but I know I drive him nuts too❤️ 4⚡️ I am an Occupational Therapist! I work 2 days a week doing this. I love helping people reach their goals and maintain safe, happy and healthy lives. The other days I work from home on my online biz and do this around my boys and lifestyle. ☀️🧘🏼‍♀️🛍📱 5⚡️ my passion is heath and wellness and keeping fit and healthy. I love eating clean and have the occasional treat/cheat to keep the balance and not deprive myself ☺️ I love sharing what I learn and inspire others to be healthier happier versions of themselves 💖 6⚡️I love making macrame wall hangings. I did a workshop a couple of years ago and became addicted. 7⚡️I have a new found interest in crystals. I believe in their healing powers and have just started my collection with amethyst, citrine and fluorite ✨🙌🏻🔮 8⚡️I have a 4 year old black groodle dog called Lulu. She has epilepsy so needs extra love and attention. She is beautiful 🐾 9 ⚡️I haven’t travelled too far yet however my fav places are the San Fran, Vegas, NYC and Hawaii. Been to Hawaii 3 times 🏝 10⚡️I used to play the piano and did it as a subject for I the HSC many years ago. Back in high school me and my friends has a garage band and I played bass guitar. Our biggest hit was “you’re nothing to me unless your 18+” 🤣🎸
