Raise your hand if you love tofu 🙋‍♀️ . I’ve been craving curry lately and this tofu chickpea curry has hit the SPOT. I prepped this over the weekend and I’ve been eating it all week 👏 . If you’ve never tried tofu before, you need to get on the bandwagon. Not only is it delicious, it’s also a great source of protein (8g per 3 oz serving), it’s low in fat, and it’s CHEAP - about 50 cents per serving. Studies show that plant-based, primarily vegetarian diets are associated with longer life expectancy and lower risk of heart disease and diabetes. You don’t need to cut out meat completely to see those benefits- start by just having one vegetarian meal per week. Try a few #meatlessmonday recipes and see how you do! . This curry is a great beginner recipe for anyone trying tofu for the first time. It’s super easy: everything cooks together in one skillet and it only takes about 15 minutes start to finish. . #recipe: -16 oz extra firm tofu -1/2 c diced carrot -1/2 c diced onion -1 tbsp minced garlic -1 tbsp grated ginger (or 1/2 tsp dry) -1 can chickpeas, drained -1 can diced fire roasted tomatoes -1 can coconut milk -2 tbsp garam masala (found in the spice aisle) -2 tbsp curry powder -2 tbsp canola oil ...Slice tofu into 1/2 inch thick slices and press to remove extra water (check YouTube for how to do this!). Heat canola oil in a large skillet over medium heat. Add tofu, onion, and carrot, and sauté for 6-8 minutes until onions get soft and tofu starts to brown. Don’t stir too much or the tofu will crumble! Meanwhile, whisk spices into coconut milk in a small bowl. Add this and other ingredients to skillet and simmer for 10-15 minutes until sauce has thickened. Want to put a twist on your Thanksgiving menu? How about sweet, mouthwatering Maduros, aka sweet fried plantains. You want to use blackest plantains you can find. You want to use the plantains that look like you forgot to throw them out a week ago. I added a pic to show you how ripe they should be. Use the top 2 plantains from the photo. Preferably the top one. You want all the sugar ripeness from the plantains to be present. All you need is a pan with 1/4 in of neutral oil, warmed to medium heat. Peel the plantains and slice on the angular, at least 1 inch thick. Place a couple of sliced plantains in the oil, and gently fry for 2 minutes each side. Use a slotted spoon to remove them. Place on a paper towel to drain. You can eat them as is. While still warm, I rolled mine in light brown sugar and hit it with salt for a sweet and salty flavor. You can drizzle them in honey and cinnamon. Sky is the limit. Give it a try. Tofu lettuce wraps estilo “P.F Chang’s”. No les puedo explicar lo BIEN que está este platillo. Un platillo súper healthy, y fácil de hacer. Especial para un meatless Monday o cualquier día si eres vengan. ✨Aquí les dejo la receta: ingredientes: *3 Cdas de puré de ciruela pasa ( hierve un poco de agua y agrega ciruela pasa, ya que esté suave, retira del fuego y licua hasta obtener un puré) *3Cdas de aminos o salsa tamari *1 1/2 cdta de vinagre de arroz * 1 cda de aceite de coco o ajonjolí * 1 diente de ajo * 1 paquete de tofu firme o extra firme (exprimir el exceso de agua con una servilleta de cocina) * 3 cm de jengibre fresco rallado * 1/4 cebolla blanca ( yo use morada por qué eso tenía) * 1 cdita de red pepper flakes * 1 puño de cacahuates. Para servir : *hojas de lechuga mantequilla, o francesa,cebollín finamente picado *siracha * Limón *ajonjoli negro ✨ modo de preparación: 🍚 en un bowl, mezcla el puré de ciruela, aminos o tamari, aceite de coco y vinagre de arroz, reserva. En un sartén calienta una cucharada de aceite de coco y una vez que esté caliente agrega el tofu desmenuzado, que quede bien molido, cocina por 4 min o hasta que se elimine el agua que tiene el tofu. Agrega la cebolla finamente picada y el ajo, ya que la cebolla cambie de color agrega el cacahuate previamente triturado , cocina a fuego medio hasta que el tofu empiece a dorar, agrega la salsa de ciruela, el jengibre rallado y los red pepper flakes, en este momento agrega 3 cucharadas de agua. Cocina hasta que se reduzca la salsa. Empieza a oler delicioso a este punto, bueno la verdad todo el tiempo. Retira del fuego y sirve en un plato, agrega cebollín, ajonjolí, siracha y poco de Limón. Cómelos como taquitos con las hojas de lechuga. Found these mini pie dishes last weekend at @marshalls and had to get them! First up: lentil pot pies 🥧 . . . || Add one cup dry lentils to saucepan and cover with water, cook over medium-high heat until water begins to boil. As soon as the water boils, remove from heat, drain and set lentils to the side. Chop one medium onion, one celery stalk, and one large carrot (peeled). Add vegetables to same saucepan with butter and sauté for 5 or so minutes until everything is cooked down. Add lentils back to saucepan with two cups vegetable broth, one bay leaf, and salt & pepper. Cook until all broth is absorbed, about 30-35 mins. While lentils are cooking, in a separate pan, sauté one chopped red pepper and 1/2 of a red onion until cooked through. Add one clove of minced garlic and sauté for another minute or two. Remove from heat and add lentil mixture to the pan with the pepper and onion. Stir to combine and then add 1/2 cup feta and two tablespoons fresh parsley. Rub a small amount of olive oil into each pie dish and fill each with lentil mixture. In a small bowl, whisk 3 eggs with 1/4 cup heavy whipping cream and pour over each pie. For the topping, combine two tablespoons of melted butter with 1.5 cups of gluten free panko bread crumbs, 1/2 cup feta cheese, and 1 tablespoon chopped fresh parsley. This may look super bland but let me tell you this is my favorite go to for those sore throat days. My mom has been making this since we were really little whenever we got sick. A buttload of garlic (I used 10 cloves for 3 servings and prefer crushed not minced), jasmine rice and enough vegetable broth that it will still be a little stewy when the rice is cooked. Its so easy to make but helps kick that cold, open your senses and it tastes so delicious.

My name is Bill Starmans. I am a husband and father of two son's and a princess. Our family has been passionate about plant based living for 10 years. If it wasn't for a life- altering disease my wife was diagnosed with 10 plus years ago, we may have never really taken the time to understand what more 'meatless meals' could do for the sake of our beautiful planet and the only ONE body we get to live in. VEGAN CREAMY TANGY PASTA🍝 By fivesechealth . ~~~ INGREDIENTS~~~ . ● 1 CUP SOAKED CASHEWS ● 1.5 CUP WATER ● 3 GARLIC CLOVES ● 1.5 TSP SEA SALT ● 1.5 TSP BLACK PEPPER ● 2 TBSP NUTRITIONAL YEAST ● 2 TBSP LEMON JUICE ● 0.5 YELLOW ONION ● 300G MUSHROOMS ● 300G PASTA OF CHOICE . ~~~ STEPS ~~~ . 1. Start making the pasta according to the package instructions 2. When the pasta is boiling, add all the sauce ingredients into a high speed blender and mix until smooth and set aside 3. Slice the mushrooms and chop the onion, add to a non-stick pan and sauté with some water until the mushrooms are cooked trough, add more water if they stuck to the pan to get things moving 4. When the mushrooms and onion are done, add the sauce into the pan and heat up the sauce (if it's too dry, add some plant milk) 5. Lastly, add the pasta into the pan and combine it with the sauce 6.
