Simple, Clean, & Delicious Tuna Steak. Beautiful Food Tastes Better Don’t You Think? 🌺 Let your raw Tuna Steak come to room temperature. Get your pan very hot (no oil in the pan). Coat each side of your Tuna Steak with Salt, Pepper and Oil. Pan Sear 45-60 seconds per side. Arrange sliced Cucumber in a circle on the plate and place the Tuna on it. Top the Tuna with Shredded Red Cabbage, Shaved Carrots, and Chopped Pickled Red Onions (see my post on how to make Pickled Red Onions). Thinly slice 1/2 an Avocado, fan/spread it out long ways, curl it around into a spiral flower and place on top the Tuna. Garnish the plate with more of your Red Cabbage, Carrots, Pickled Red Onion and Microgreens. 🍋Lemon Chicken🍋Wow this was tasty! 🍋Pan Cook Chicken Breasts in a little Ghee or Butter with Salt and Pepper. Remove the Chicken and place it on a bed of Arugula. Next, place Lemon Slices in that same pan to brown them on each side. Set them aside when done. Then, add a little more Ghee, Butter, or Oil to the same pan and add 1/4 CUP Broth of your choice (I used Homemade Chicken Bone Broth...I have a post coming on making Bone Broth from scratch that you can freeze), 2 Fresh Cloves Minced Garlic, the Juice of 1/2 a large Lemon and 1 TBS Honey. Cook it down on medium heat for about 3 minutes stirring often. Generously spoon the Sauce over the Chicken and then place the Lemon Slices on top. For the Asparagus, I just cooked it in a pan with a little oil, salt and pepper. Garnish your dish with Parsley and Microgreens. Cilantro Lime Chicken Salad. You could easily do this recipe with Shrimp. 🥗Marinate Chicken Breasts in 1/4 CUP Chopped Cilantro, 1/4 CUP Lime Juice, 1/2 TBS Honey, little dash of Cumin, Salt and Pepper for 30 mins or longer. Pan Cook the Chicken and thinly slice it. Arrange Chicken, Mixed Greens, Red Cabbage, Red Onion, Red Pepper, Avocado and Jalapeño on a Large Plate. For the Cilantro Lime Dressing, Blend 1/4 CUP Lime Juice, 1/4 CUP Orange Juice, 1/8 CUP Lemon Juice, 1/4 CUP Cilantro, 1/2 TBS Honey, 1 TBS EVOO, Salt and Pepper. Oh, Summer Please Don’t Ever End! Peaches, Tomatoes and Chicken with a Honey Balsamic Reduction. 🍑🍅Pan Sear your Chicken in Coconut Oil with Salt and Pepper. Combine 1/3 CUP Balsamic Vinegar and 1/2 TBS Honey in a small sauce pan. Bring to a boil and then Simmer 10-15 MINS to reduce the mixture by half. Slice your peaches and tomatoes (use multi colored tomatoes) and arrange on plates. Place Chicken in the middle and drizzle with the Balsamic Honey Reduction. Finish with Salt, Pepper, and garnish with Basil. This dish is also yummy if you toss the Peaches and Tomatoes in freshly chopped Mint before plating them. A mish-mash of salad bowl ingredients but yummy just the same. Middle-eastern flavoured chickpeas (canned chickpeas that were drained and rinsed before being sautéed in ground cumin and coriander), soft boiled egg (boiled about 6 of these at same time for use during the week), grape tomatoes, avocado and baby spinach. This mix brings together a combination of protein, healthy fats, carbs and fibre as well as approx 3 serves of vegetable!! All up this took 10 minutes to make from ingredients that I have in my pantry and fridge at all times. A large part of maintaining a healthy dietary pattern is having a well stocked fridge and pantry week-to-week. 💥DAILY FASTING 💥 - Time restricted eating is a concept I’ve been interested in for a while now. I’ve certainly felt the benefits both cognitively and physically! Here’s a summary of what I’ve discovered via research 👇🏻 - The concept of time restricted eating coincides with the body’s circadian rhythms. The absence of a fasted period (>12 hours) leads to an elevated fed state physiology; disturbing normal counter-regulatory metabolic states. - 💥So, what are the benefits of fasting?💥 - Fat loss is enhanced due to the mobilisation and use of stored fatty acids and sugars as fuel. - Insulin sensitivity is improved, allowing the body to effectively use glucose as fuel. - Increased levels of growth hormone which prevents the loss of lean muscle. A common concern is that fasting will lead to muscle loss, in fact the last thing the body wants is to loose muscle! It will burn glycogen and fat first. - The fasting process activates survival genes which trigger pathways involved in antioxidant activity, protecting cells from potential damage. - Inflammation is reduced due to the body’s waste disposal system (Autophagy). This process removes pro-inflammatory debris from the body. - Improved cardiovascular health due to cholesterol recycling. When fasted, excess cholesterol is broken down into bile acids. - Closing notes 📝 - Fasting is super effective! It’s likely you’ll find normal foods taste more vibrant as well as being more satiated after meals. This is due to receptors responsible for hyper-palatable foods (i.e. refined foods) being reset! It is important to remember that fasting should be preformed for longevity, and not for the sole purpose of weight loss. - Personally, I’ve found that I am more energetic, I can concentrate for longer as well as think clearly.
