O abacate é uma fruta riquíssima, composta por carboidratos, proteínas, micronutrientes (vitaminas, minerais) e lipídeos de excelente qualidade, predominantemente de ácido oleico, um sitosterol (esteróis de origem vegetal). Este composto bioativo (éster de fitosterol) possuí um papel interessante para o metabolismo de frações lipídicas. . Segundo alguns estudos seu mecanismo de ação envolve a inibição intestinal de absorção do colesterol e diminuição da síntese de colesterol hepático. Quando os fitosteróis estão presentes na dieta, são quebrados em esteróis livres e ácidos graxos, sendo assim introduzidos nas micelas, impedindo a entrada ou o deslocamento do colesterol para elas. Devido à baixa absorção intestinal, os fitosteróis deslocam o colesterol para fora da micela na luz intestinal, bloqueando parcialmente sua absorção, ou seja, reduzem a capacidade de transporte de colesterol pela micela. We have been eating bread since the invention of the mill, yet it has been inaccurately demonised in recent years. For coeliacs a gluten free diet is compulsory but for the rest of us there are no long-term health benefits to removing wheat or gluten. In its wholegrain form bread is full of fibre, vitamins and minerals, especially B vitamins which are crucial for energy, glucose metabolism, good mood, hormones and healthy skin. The issue is that many breads on the market are made from over refined grains lacking in fibre and nutrients, together with additives and preservatives. The answer is to opt for bread in its most natural form. I prefer to make my own. It takes 5 minutes to throw ingredients in my bread machine for a 100% wholemeal loaf. That way I get to opt for organic flour and control the salt. Alternatively, I choose fresh, locally made options. @thedeliaroundthecorner.co.uk or @purekneadwhitleybay both sell nutritious, wholegrain loaves. I often hear: “Bread makes me bloated”: Here the issue is with digestion and not the bread itself. Rather than removing bread long-term, it is better to address the underlying issue of digestion. “It makes me put weight on”. Again, the issue is not bread itself but potentially an issue of carbohydrate sensitivity or blood sugar balancing, both of which can be addressed, or perhaps the overall diet that needs to be modified. “Gluten is bad for the gut”: There is an argument that gluten causes the break down of the delicate lining of the digestive tract. The cells lining the digestive tract are the most rapidly dividing cells in the whole body. Their formation depends upon a good supply of particular vitamins and minerals. Coeliacs aside, in a body that is replete in vitamins and minerals there should be no issue with gluten. I prefer to address nutrient deficiencies rather than unnecessarily restricting the diet.
