Soup season is in full swing, and I’m all about it! Whipped up this soup made from mirepoix, shiitake mushrooms, bok choy, 1/2 of a small habanero pepper, fresh parsley, scallions, pink salt, black pepper, adobo, red pepper flakes, organic chicken broth and a scoop of @vitalproteins collagen peptides. I added the soup to a small bowl of rice, added some avocado and yummmm!✨

What's your family's go-to 🌮 protein? I realized today that we rotate between 5 things... Tempeh, black beans, refried beans, shrimp and fish. Beef only when Papa is visiting 😉 . Dying to try jackfruit in my tacos? Anyone try this? . Tonight it was organic tempeh + flax (fermented soybeans). We don't eat much soy, but when we do we try to eat it in it's fermented form as it's easier to digest, less processed and has the added benefit of probiotics. | POLENTA w/ ROSTED BEET & MUSHROOMS | Another easy and nutritious comfort food. Polenta is a classic, I like to add lots of herbs like rosemary, nutritional yeast, lots of salt, pepper and olive oil. Cooking it using broth or stock also helps get great flavour. If you eat dairy then use a good amount of Parmesan. . For the roast veg, I just chopped up the beet quite small and the mushrroms a little chunky as they cook quicker, I also added some whole crushed garlic cloves, I use smoked garlic from @scoopwholefoods. Toss in oil, I use olive, macadamia or ghee. Season with salt and pepper and lots of fresh thyme. When you remove the veg from the oven once ready, drizzle with balsamic vinegar to create a nice glaze. Then serve with your polenta. . A trick for vegans is to grate a macadamia on top to resemble Parmesan. Or season with nutritional yeast or real Parmesan. . Tip - you can add tumeric to the polenta along with lots of black pepper for that extra #antiinflammatory effect. . Enjoy this one before summer hits!! . Black sesame crusted loaf Some things I'll never tire of when I bake bread are: when the yeasty bubbles when you just finish bulk fermentation; when you do the final shaping of your dough when it's finally good for the yeast to finish up its work on the loaf; when you sling the dough into your Dutch oven and you hear the sizzle because it's been preheating for a while; when you score the dough in one clean cut; when you open the Dutch oven to see how the dough has risen; and when the crust caramelizes and you pull the final loaf out of the oven And as I write this I realized I've listed nearly every step of the bread making process 🙊
