Broccoli is a true #superfood . 🥦. Its loaded with fiber, protein, antioxidants to fight cancer, and vitamin C to aid in iron absorption. 💚💚 While broccoli doesn't provide as much calcium as a glass of milk, it is a great source of calcium to help control blood pressure and build strong bones. Aside from this it’s bloody delicious 😋. And way more versatile than most give it credit for. Today I had a friend for lunch. So I mixed some free from pesto with extra virgin oil and brushed onto the broccoli, before lightly roasting. I served with beetroot and spinach salad, walnuts, red pepper hummus sprinkled with mixed seeds. ~~~LeNtiL lOaF~~~ Lentils are one of my favorite plant based proteins. These little guys are a serious nutrient powerhouse! A 1-cup serving of cooked lentils provides 230 calories, 18 grams of protein, and 16 grams of fiber. Not to mention they’re a great source of many micronutrients, such as iron, vitamin B6, potassium, and magnesium, as well! ~~~ My favorite way to include lentils in my diet is with loaves like this one. They’re super easy to make ahead and reheat during the week. I also like to freeze slices for the hectic days when cooking is last on the to-do list. It’s great on top of salads, with roasted vegetables, or in a wrap! I packed mine up to for dinner today because I’ll be in rotations all day and then straight to class till 8:30 🙄. LUNCHBOX MONDAY #nutritioncureeats Yes, every MONDAY I am going to post my work lunch box! I will hashtag it with #nutritioncure eats so you can always go back to them easily if you need ideas. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ TODAY: 1. Sandwich: I sautéd some mushrooms + onions yesterday on some vegan butter. The onion caramelized to perfection! (not to toot my own horn 😝) I added the left over mushrooms onions and added a bunch of avocado. I prevent avocado from browning by adding a bunch of lemon to it! 2. 60% dark chocolate and cashews. Everyone needs chocolate to get through Monday, right? 3. Banana 4. Master Brew Kombucha to sip on during the day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ If you like this new idea! Please let me know. Purslane (Arabic: baqleh or rijleh) olive oil stew in tomato sauce ( palestinian cuisine) بقلة بزيت الزيتون والبندورة من المطبخ الفلسطيني Purslane, (baqleh in Arabic ) is a clover-like herb that bears small, paddle-shaped, dark green leaves on its red, smooth stems. Annual succulent in the family Portulacaceae. It is a wonderful green that is extremely popular  in the Levant. It grows in any vegetable garden like a ground cover. It is according to Paula Wolfert, “incredibly nutritious” and “rich in Omega-3 fatty acids” (more than some fish oils). Purslane is a versatile green, which can be used in salads, soups, stews, even as a topping for pizzas. Ingredients: 1 large chopped onion 1/2 cup olive oil a bunch of purslane tomato juice or tomato sauce or even tomato paste Salt Recipe: -Wash purslane plants very well -Finely chop purslane -Sauté chopped onions in olive oil. - Add the  chopped purslane and sauté so they become soft ... - Add the tomato juice and leave on low heat for about 15 min .. - Add a little  salt -Serve cold with pita bread and spicy green peppers .) 16 months ago I embarked on what I thought was a restrictive way of eating. Not to lose weight ( i was 50lbs overweight) but to naturally turn a hormone imbalance around. . Little did I know that all my physical issues were related: ✔sharkweek ✔acne ✔💩 issues ✔eczema ✔psoriasis ✔hair in manly places ✔bloat ✔pms ✔over weight ✔arthritus These last 16 months have been a steep learning curve for me. One that has taught that food is either killing us slowly or giving me life. What i thought was carbs being bad is really lectins. Sticky little buggers found in carbs, night shades & legumes that attach to my healthy cells & stop communications between hormones & cells. When this happens my body begins to break down & stop working. . So no I did not cheat my weight lose, I am not on a restrictive eating plan. I choose carefully what life or toxins I want in my body. When I choose life my body works the way it should. And that makes for a happy Heather. 😁💖 . . I do encourage you to pick up this book & have a read. It is confirming all my research over the last 16 months. . So yes eating clean is easy, simple & brings life. And I can help you with that. But you gotta be willing to invest in yourself. Your health depends on it.

Rice cakes can be boring by themselves, but I like them because they are versatile, , low in calories, fairly inexpensive, and crunchy. More over they are gluten free and can be eaten as a snack, for lunch or anytime of the day. ... You can bring them back to life by adding extra flavor. All you do is take a rice cake, spread some cream cheese , nut butter spreads , avocado, jam .... on it, and top it with whichever sandwich toppings you prefer.... countless options🤔🤔 I used avocado mash as a base  then topped it  with fresh salad garnished with sesame seeds, oregano and crushed red peppers with a drizzle of lemon juice and evoo. Let’s talk NUTS! There are all these precautions on the amount of nuts and seeds intake (and rightfully so, there are a lot of great fats and oils in nuts - and any fats, good or bad, can contribute to the weight gain). However, if you ask my humble opinion - I will suggest copious amounts of nuts over the bag of chips any day!! What are your thought on nuts? PS: if you have yet to find out about this trick - keep your nuts in the refrigerator! It will help to keep them fresh longer and keep from going bitter. AND be very weary of moldy nuts!
