Meal prep ~ is a Sunday ritual for me! 🌱 . I know there’s better ways to spend your Sunday but honestly those couple of hours prepping save so much time through the week, reduces snacking on crappy foods & means I know exactly what I’m eating 😋💪🏽🌱 . Plus, I get really hangry, so saves me wanting to chin someone 🤣🙈🤷‍♀️ . Here I’ve got baked gigantes beans, rice & green beans. Then black beans, scrambled tofu & avocado 🥑

@drpraegers California Veggie Patty is 100% vegan and so tasty. It’s got peas, carrots, broccoli, and spinach and tastes so fresh and yummy. For only 120 calories it’s nice and healthy and doesn’t have that processed taste that some veggie patties have. Hand cut noodles (刀削麵) with extremely hot and spicy soup.😆😈 I brought a package of Taiwanese hand cut noodles with me from Taiwan to Belgium. Imagine, how good it is. 😉These hand cut noodles are thicker and very chewy.😊 Also my family in Taiwan gave me a lot of vegan bouillon to bring to Belgium. 🍄🍅🍆🍀One of our Taiwanese’ favourites is extremely hot and spicy flavour. 😆😈So today I use one package of this bouillon and make this bowl of extremely hot and spicy noodles soup.😙 If we can give the spicy level from 1 to 14, for me personally this is only level 7. But my husband said it’s too spicy for him to finish the soup.😂😂😂 Glad that he at least finished the noodles and vegetables. 🗣🗣 Here’s a few things that I’ve decided about my juicing journey: 1. I do not enjoy cleaning mason jars and their lids. So I will use them only when I feel like it. 2. Peeling my ginger and cucumbers is time consuming. So I will not do it. 3. Citrus fruits are a pain in the ass to prep to go in the juicer. So I will not place them in the juicer. In fact, I just bought a nifty little lemon/lime juicer for $5 from Kroger. #swipe This has already made my life so much easier! If you are anything like me, you may over-complicate things by trying to perfect the details. I’m here today today to remind you that getting things done is way better than letting the small details hold you hostage. Creamy, cheesy, hummus pasta (might’ve tasted even more mac & cheese-y if I’d added some lemon juice) Couldn’t bring myself to get out of bed yesterday, let alone go buy some veg so I just used anything I could find to make a creamy hummus pasta Recipe: 1 pot caramelised onion hummus, 1.5-2 cups water, 1 veg stock cube, 7 sundried tomatoes, 1 cup peas, 1 cup sweetcorn, 1 tsp onion granules, 1 tsp garlic granules, 4 tbsp nutritional yeast

Alle Zutaten in den Zerkleinerer geben und auf höchster Stufe 3–4 Minuten mixen. Southwestern quinoa salad! This lunch took me less than twenty minutes to prep AND cook. Super simple and delicious. And totally vegan! Today I used what I had in the fridge and pantry: red bell pepper, onion, jalapeño, cilantro, trio quinoa, black beans, frozen corn. I sautéed all the peppers and onions first. Then added in black beans and corn after about 7 minutes. Then I sautéed everything until beans and corn were thoroughly cooked. I seasoned with lime juice, chili pepper, cumin, garlic powder, Himalayan sea salt, and cracked pepper. Tossed with quinoa (cooked separately) and then topped with some fresh cilantro. For extra flavor you could add avocado, salsa, cheese, sour cream. He didn’t know how to fill his time after my Grammy, his wife of 64 years, went to a care facility for late-stage dementia. He started knitting hats.... he is a #cancersurvivor and the activity kept his hands, and more importantly his mind, busy. He’s made over 150 hats in about 9 months. He donates them to various hospitals and medical offices for patients who’ve lost their hair. My #granddaddy.... he has a good heart. ❤️
