Ingredients: 25 uncooked jumbo pasta shells 1 (14 ounce) package of firm tofu 1 cup raw almonds 1/2 tsp salt 4 tbsp nutritional yeast 1/2 tbsp garlic powder 1/2 tbsp onion powder 1/4 tsp pepper 3 cups chopped spinach 1/2 cup unsweetened almond milk CREAMY PUMPKIN SAUCE 1 small sugar pie pumpkin 1/4 cup raw cashews 1 cup unsweetened almond milk 1/2 cup filtered watered 1 tsp salt 1/2 tsp pepper 1/4 cup nutritional yeast 1 1/2 tbsp tomato paste 1 tsp garlic powder 1.Preheat oven to 400 degrees F. 2. Cook the pasta according to the package directions, drain and set aside. 3.Cut the pumpkin in half, de-seed and carefully cut skin off. Cut into chunks, place the pumpkin on a baking sheet lined with parchment paper and bake for 25 minutes. RICOTTA: 1. Mean while bring a small pot of water to a boil. Place your raw almonds into the boiling water. Let boil for 2 minutes. 2. Drain the almonds immediately in a colander or strainer and rinse them with cold water to cool them. Blot the almonds dry with a paper towel. 3. Use your fingers to gently squeeze the almonds and loosen the skin from them. Set skinless almonds in a bowl and set aside. 4. Remove tofu from package and wrap in a clean kitchen towel or paper towel and squeeze for 20 seconds to allow for excess water to strain. 5. In a food processor or high speed blender combine tofu, blanched almonds, nutritional yeast, unsweetened almond milk, garlic powder, onion powder, salt & pepper. Blend for 1-2 minutes or until there is no chunks. Mixture will look lumpy and that is okay! Add more almond milk if needed. 6. In a small pan cook chopped spinach with 1 tbsp on water for 1 minute or until spinach is wilted down. 7.Once ricotta mixture is made and spinach is ready, combine the two in a medium size bowl and mix well. Are you getting enough fiber? Most Americans do not get enough fiber. The daily recommended intake is 30-38 grams for men and 25 grams for women. On average, adults in the US are only getting 15 grams a day! On a whole food plant-based diet it is easy to get more than enough fiber. These are just a few examples, but every whole plant food has fiber. These calculations are per cup, except for almonds which are per ounce. Beans, nuts, and seeds have some of the highest concentrations of fiber, but fruits, vegetables, and whole grains have a good amount of fiber too. Why do we need fiber? The most well-known reason is that fiber is necessary for proper functioning of the digestive tract. However, it also reduces the risk of heart disease and diabetes. It decreases the risk of colon cancer, as well as lowers the risk of ulcerative colitis, Crohn’s disease, appendicitis, constipation, and diverticulitis. Fiber also essentially flushes excess estrogen and cholesterol out of the system which may be why it's associated with reduced breast cancer risk. Previously, it was thought that fiber just passed through us and had no effect other than providing bulk. However, we now know that metabolites are actively produced by our gut bacteria that eat fiber. These molecules may have anti-inflammatory, anti-cancer, anti-obesity and blood sugar control effects. So as you can see, fiber has more benefits that just reducing constipation 😉 Have you tracked your fiber intake? What's your daily intake in grams? Vegan pesto pasta! The thing I love about this is that it provides a ton of volume for a relatively low amount of calories. For example the vegan chicken worked out to be 66 calories and the red lentil pasta was 190. Then adding the cauliflower gives you even more bulk and the pesto (get the type without oil) adds delicious taste and removes the need for oil to cook the meal in. Have you ever indulged on a Friday night dinner? Of course you have, we all have! After a slice (or 2) of my favorite NY pizza and a glass of wine last night, I needed to treat my digestive system this morning. Here’s my go-to breakfast for digestion: Simple Digestive Smoothie: 1 banana (frozen preferred) 1 cup papaya 1/2 cup water 1 inch slice ginger Juice of 1/2 small lemon Small handful of ice as desired Blend and drink right away. ✨Pro tip: Remember to swish around your smoothie to wake up your digestive enzymes (chewing normally does this but you can’t chew a smoothie!). If you have a sweet tooth, but dont want to resort to that box of Chips A'hoy chemical sugar bomb, these are worth a try! Gooey and cakey, these healthy blondes are protein-dense and low in sugar. I mixed them all in my food processor, but a blender would work well, too. #glutenfree and vegan, too. I have my kids convinced they are a great dessert, but Im eating them for breakfast, too. 🤷‍♀️👌 ✖ Makes 12 blondies 2 TBSP flaxseed meal (or 1 egg) 6 Tbsp warm water 1 cup old fashioned oats (blended into flour consistency) 15 oz chickpeas, drained and rinsed 1/3 c honey/maple syrup 1/2 c nondairy milk 1/4 c nut butter 1/4 unsweetened applesauce 1 tsp baking powder 1/4 tsp sea salt 1/2 c dark chocolate chips (i use non dairy) ✖ Combine flaxmeal and water to make "flax egg" and set aside. Blend oats until flour consistency. Add flax egg, or egg, and all ingredients except choc chips into food processor and blend until batter is smooth. Add chocolate and pulse briefly. Pour batter into an 8x8 pan lined with parchment. Bake 30 minutes or until edges are slightly browned and center is set. Allow to cool completely before slicing and removing from pan. As you saw in some of my holiday posts, I ate A LOT of tamales and cookies in December, and spent the entire month just chillin’ with my friends and family. Time to get back to my regular routine! I’ve been trying to go to the gym a few times a week, and after my workout (yesterday was a leg day -- ouch!) I’ve been doing a breakfast smoothie to pack in the fruits and veggies. I’ve been keeping it really simple: 1 cup frozen berries, 1 cup spinach or kale, 1 frozen banana, and 1 to 1 ½ cups of @Silk (ad) unsweetened Almondmilk. Tastes great! Raw Vegan Sushi! Haven’t had sushi since I stopped eating rice months ago and it’s been on my mind lately. Since I’ve been eating strictly raw foods I had to find a way to pull off raw vegan sushi. Since I found that the nori used in your typical sushi isn’t all so vegan, it made this a little difficult but never impossible! Thanks to @wrawp.foods Raw Organic Turmeric and Oregano veggie wrap I made this happen. I used that wrap in place of the nori and cauliflower rice in place of the normal rice. I used the leftover filling I had from the zucchini wraps I made last night. Avocado in one sushi roll and cucumber in the other. Chia Pretzels with Beer ‘Cheese’ Dip 🍺🥨 Hey guys. I am so overwhelmed with the amount of you jumping on board to follow my page! This is already shaping up into a beautiful plant based community and I can not be more excited to share my recipes with you all.❤️❤️❤️ Leading into the weekend, I thought some of you might be having company over so I am sharing a fun appetizer today. Happy Friday All!🤗🥨Pretzel Ingredients: 1 tbsp yeast 1 cup warm water + 6 cups warm water 2 cups all purpose flour + a little extra for working with dough 3 tbsp chia seeds 1 tbsp olive or avocado oil 1 tbsp sugar A pinch of salt 1/4 cup baking soda 1/2 tsp course salt Instructions: Dissolve yeast in 1 cup of the warm water and let sit for 10 minutes until a layer of foam forms on top. Add flour, chia seeds, oil, sugar and salt. Mix together until a ball forms and knead dough until stretchy, about 5 mins. Place dough in a large bowl and sprinkle with a pinch of flour. Cover with a tea towel and let rest for at least 1 hour. After dough has risen, flatten onto a floured surface creating a large rectangle. Cut lengthwise into 1-1 1/2 inch strips. In a large bowl, mix together 6 cups of warm water with baking soda. With each strip of dough, create a pretzel shape, dunk into baking soda water and carefully place onto two parchment lined baking sheets. Sprinkle with course salt and bake in a preheated oven for 15-17 minutes at 450 degrees F. 🍺Beer ‘Cheese’ Dip Ingredients: 1 tbsp vegan margarine 1 + 1/2 tbsp flour 1/3 cup non dairy milk (coconut works best) 1/3 cup ale or lager beer 3 tbsp nutritional yeast 1/2 tsp dijon or grainy mustard 1/2 tsp paprika A pinch of salt Instructions: In a small pot over medium heat, melt margins and whisk in flour. Continue to whisk for 1 minutes. Whisk in milk and beer and bring to a soft boil. Conitinueig to whisk, take off heat, add all other ingredients and season with salt to taste. * This dip is comes together extremely fast so work quick! Tonight I tried smth totally new- KITCHARI. It was my first time tasting it and first time making it. It is a cleansing and healing Ayurvedic dish, balancing to all doshas (constitutions). I loved it. Got even 3y old approved!🤩👍🏻😊 Recipe said coconut yogurt for serving- I did not like that. But avocado 🥑 was perfect replacement for me. Lime juice on top made it even better. I also saw online that it could be nice and green using broccoli, zucchini and baby spinach. Will be trying that next time. Recipe: INGREDIENTS: ½ cup split yellow mung beans ½ cup white basmati rice 2 tablespoons coconut oil 1 inch stick of kombu 4 cups homemade vegetable stock or water - (I used water) 2 tablespoons coconut cream SPICES: 1½ teaspoons cumin seeds 1½ teaspoons fennel seeds 1½ teaspoons coriander powder 1 tablespoon ginger root freshly minced ½ teaspoon turmeric powder ½ teaspoon fenugreek seeds ¼ teaspoon black mustard seeds Pinch of asafoetida VEGETABLES: 3 cups of any mixed vegetables (I used sweet potato, green beans and cauliflower) TO SERVE: Fresh lime Fresh coriander Coconut yoghurt (I used avocado slices) Sea salt to taste Instructions The night before (24 hours earlier), soak mung beans. When you’re ready to cook, drain the mung beans and rinse under running water. Rinse the rice till the water runs clear. Prepare vegetables by peeling and chopping them up, then set all of this aside. Heat coconut oil over medium heat, in a heavy-bottomed pot. Add cumin, fennel, fenugreek and black mustard seeds and cook for a few minutes to release aromatics, and until the mustard seeds have popped. Add the rest of the spices and stir to combine. Add a cup of vegetable stock/water, followed by mung beans, kombu, coconut cream, rice and vegetables, then add the rest of the stock (or water). Cover and bring to a boil, then reduce to a low heat. Simmer for about 40 minutes. Check the pot periodically as the rice swells and may stick to the bottom. Add more water if you want a soupier consistency, and simmer longer to get a thicker stew. Serve with fresh coriander,a drizzle of fresh lime juice, spoon of coconut yoghurt and sea salt to taste.

Breakfast Buddha Bowl 🥥 . Some mornings my love for staying in pjs all day outweighs my love of delicious cafe breakfasts out. This morning I was determined to have the best of both worlds and all it took was a bit of focused #fridgeforaging . I often order Buddha bowls at cafes because they are fresh and satisfying but they can also be quite pricy. Ingredients: 1 can chickpeas, rinsed & drained 2 ripe tomatoes, cubed 1 small cucumber, cubed 2 tbsp chives, ciseled 3 tbsp soy yoghurt 1/4 tsp salt 1 tsp dijon mustard 1 tsp paprika 1 tbsp nutritional yeast pepper 👉🏼Method : 1. rinse & drained the chickpeas (if you want a better digestion, you can peel off the skin but that’s an extra 10 minutes!) 2. flake them with a fork (or clean hands) 3. add veggies and mix. 4. add spices and yoghurt and mix again 5. set in fridge about 15 minutes so flavour gets together ✨ WRAP RECIPE 🌯 1 cup all purpose flour 1 tbsp olive oil 1/4 tsp salt 1/4 cup water Method : simply mix & kneed with one hand until a dough super elastic forms. Adjust flour/water. Set 10 minutes. Then divide in 2 and roll out in very thin wrap (use flour to prevent sticking). Cook 2 minutes each side on hot pan. Keep in clean dishtowel. Use right away or damp the towel with water and microwave 20 sec to make soft again! Nuts. So delicious, and so easy to over consume. Most servings of nuts are a small handful, and we often times go to town and WAY more than one handful. If you find yourself wanting to control your calories without weighing out portions, use this guide to help! Each of these above is 100 calories, making it super easy to count and track. I’ve actually seen guides like this pop up before, and a lot of the numbers differ slightly. Rest-assured, I did thorough research here, and based these numbers on quite a few nutrition labels (Planters being a major contributor here) Knowing how to eyeball portions and estimate calories is SO important. Never a bad time for tacos!!🌮🌮🌮 made these cheesy cauliflower tacos & instantly regretted my decision to only make 3😂.. . . roasted tri colored cauliflower in oven on 400 for 20 min and topped with homemade cheese sauce.. - sauce was made from steamed russet potatoes, carrots + cauliflower and blended with water in vitamix until I reached a good consistency👌🏻served in romaine boats!

Here are some healthy tips: . 1. Choose soft taco shells (we ♥️ @latortillafactory ) over hard shells - they have less added fat and more protein. Despite this, we often often use hard shells for practical reasons: they are easier for the kids to handle. . 2. Load up on beans for extra protein and fiber. Choose simple low-sodium black beans over refried beans for less salt and less fat. . Serving Tip: If you opt to add cheese, try microwaving shredded cheese mixed with beans for less mess and faster serving! . ✨Friday night dinner tonight using my favorite spice, Turmeric✨ Big fan of this earthy spice both for taste and especially for all the loaded health & medicinal benefits that come along with the “super food.” What I didn’t know until pretty recently are some of the ways to help increase our body’s absorption of Turmeric (so we can actually reap the benefits): 1. Add black pepper (piperine a compound in black pepper increases bioavailability of thermos by 2000%!) 2. Add fat 3. Add heat 4. Add onions or other foods with Quercetin (capers, Serrano peppers). While pretty flavorless on its own, Cauliflower is the perfect sponge absorbing any Spice combo or sauce. This crunchy, crispy and very tastey Roasted Turmeric Cauliflower recipe includes all of the above for ⤴️Turmeric absorption plus makes for a very delicious side dish, or inside any salad or grain bowl! .... Whisk together in a bowl: 3 TBS Virgin Olive Oil or Coconut Oil (I prefer the olive oil but both are great!) 2 Tsp Turmeric 1/2 tsp Cumin 1/2 tsp Real Salt 1/2 tsp black pepper 2 minced garlic cloves .... Add 1 cauliflower head (cut into small florets) into the bowl to soak up the turmeric marinade coating each piece. Transfer to a baking sheet. Roast in oven at 425 for about 20 minutes (ranges from 15-25) until you see browning, stirring once. .... While your florets are roasting, caramelize 1/2 white onion on skillet and set aside .... Once cauliflower is roasted mix caramelized onions in and sprinkle some more black pepper .... Enjoy! Definitely add it to your list if you love creamy, savory pasta dishes. 🍝 Vegan Carbonara Pasta (modified from @deliciouslyella‘s genius recipe) - 2 generous tbsp cashew butter - 1 cup frozen butternut squash - 2 tsp nutritional yeast - 1 tbsp tamari - 1/2 tbsp apple cider vinegar - 1/2 tsp cayenne pepper (less if you don’t like spice) - 3/4 cup water - lots of salt + pepper to taste. 🌱 Blend ingredients until smooth, pour over cooked pasta in the same pot and add veggies like sautéed mushrooms, peas, spinach, or broccoli. 🌱 Cook for another minute or two and finish with a generous sprinkle of nutritional yeast or vegan Parmesan. Lets talk skin food! I know a lot of us currently, or in the past, suffer with skin issues. People are so quick to jump on spending tons of money on skincare products that, in reality, typically cause us more harm than good. I can’t express enough, that the cheapest, most effective form of skincare, is our diet. You are what you eat - therefore, we have to nourish from the inside out. There are a couple micro/macronutrients that are incredibly important to skin health including omega-3 fatty acids, protein, antioxidants such as caretonoids, and vitamins E & C (to name a few). One way I like to get in all of these important nutrients is in a super yummy smoothie! Quick, painless, & you can take it on the go! Here’s one of my favorite skin nourishing smoothie recipes! Also! Happy hump day! This freezing weather here in Seattle is just getting me more & more excited for the warm weather to come in Puerto Rico in February! Does anyone else suffer with a hindered relationship with food? I feel like this is something SO many people, girls in particular, suffer with, yet it isn’t talked about as much as it should be. Talking about it helps me personally, as someone who has been there. My biggest struggle was sweets. The guilt around them, not being able to stop at just one , etc. Since working on my relationship with food and through my love of healthifying my fave sweet treats, I’m able to treat myself & not feel a sense of guilt afterwards which comes with a great sense of relief! Just remember, life is too short to let food control you. 💕 . . . Lets ignore my lack of cutting skills, but These peanut butter crunch brownies are next on the list! You guys know how I feel about fermented foods.. I think they’re essential to optimal health. Especially when our health starts in our gut! Do you guys have any health/wellness essentials you pack with you while traveling!? I leave for Puerto Rico in a couple weeks & usually like to make sure I’m prepared with some healthier plane/road snacks! I plan on doing a whole post about it, because I find it to be so helpful to stay on track while away, but I typically bring activated nuts, individual protein powder packs, individual nut butters, & some sort of jerky to keep my protein up (salmon or tofu jerky). By the way, I’ve been looking at some restaraurnt around our air bnb over there and YOU GUYS. The food looks insane! Anyone ever been!? . . . On another note, to no surprise, on Sunday I whipped up a little meal prepped treat for the work week, cause you know, ya girls gotta have her treats. 💁‍♀️ these little Elvis ice cream bombs were SO good. Peanut butter & banana will forever be a favorite combination of mine. The top layer is chocolate avocado mousse, the bottom layer is a banana ice cream, & they’re topped with @lilys_sweets_chocolate salted & caramelized chocolate & @yumbutter drizzle! Protein is our most satiating macronutrient. So my favorite tip to curbing sweet tooth cravings & hitting protein requirements is to include it in every meal & snack. You don’t have to go overboard, but make sure there’s a little protein hiding in there! . . I always crave something sweet after my meals & particularly at the end of the night. One of my favorite ways to satisfy those cravings is to prep a high-protein treat at the beginning of the week to have throughout. I always find myself making variations of these because they taste like candy & the crunch factor is 🔥. You can totally sub any ingredients & make them to your liking as well! They’re just 5 ingredients too! So why not 🤷‍♀️ . . Just melt together until smooth: 1/2 cup @yumbutter sunflower butter (also amazing with Pb!) 1 scoop protein of choice 1/2 cup @lakantosweetener (maple syrup, brown rice syrup, honey all work!) Then stir in 2 cups puffed cereal. I used @arrowheadmills , press into loaf pan. If low carb, can always sub chopped nuts! Then melt chocolate of choice (I used @lilys_sweets_chocolate caramelized & salted flavor) & drizzle or dip each bar & place in fridge to set! This smoothie bowl has oats blended in it to thicken it up and topped with some low sugar granola, berries and nuts.
