Vegetable haters pasta Our friends’ little girl Alia is a very fussy eater. She tells me that she hates vegetables. However, she also tells me that she loves helping me cook. So, when she was here this weekend we cooked together. We made this pasta and she loved it so much that she had two servings. She was even talking about it constantly the next day! I think her reaction is the highest praise I’ve ever been given, or certainly the most rewarding! Serves 4-5 depending on portion size Ingredients 1/2 the pizza soup recipe from Friday 9/11/18 1 Aubergine cut into 1cm chunks 1 tablespoon of olive oil 1/2 a bulb of garlic peeled and roughly chopped 1 handful of basil 1 tin of chopped tomatoes 400g of your choice of pasta Preheat the oven to 200 degrees Place the aubergine on a baking tray with the Himalayan rock salt and drizzle the olive oil over Place in the oven for 30mins. Stir and return to the oven for a further 20mins. Once it is cooked put the aubergine in a pan with the, garlic, basil, chopped tomatoes and half the pizza soup and put on a low heat Whilst it warms through, cook your chosen pasta as per the recipe. When it is cooked drain in a colander and put to one side Blitz the pizza soup mix with a hand whizzer, stir the pasta in and serve I served mine with a little bit of chopped basil. It is so delicious! It would also be lovely with chunks of roasted aubergine and red pepper in. Thai green curry with veggies and tofu served over jasmine sauce 🌱 I looove green curry. This version is a little lighter and lime-ier (is that a word?) 🍋 in taste than restaurant curries. You'll not have leftovers -guaranteed ave leftovers - guaranteed 🙃 Here’s the written recipe! Lime Green Curry (serves 4): 1 tbsp avocado oil 1 small onion, chopped 1 tsp salt 4 tbsp green curry paste 1 tbsp fresh ginger, grated or thinly sliced 1 tsp lime zest 1 cup green bell pepper, chopped 1 cup cut eggplant, roasted or sautéed 1 8oz can of bamboo shoots, drained 1 cup fresh sugar snap peas 1 cup vegetable stock 2 cans full fat coconut milk 1/4 cup Thai basil leaves (regular works too if you can’t find the Thai variety!) 2 tbsp fresh lime juice 1 cup tofu cut into cubes (either as is or fried in oil for 5 minutes), or half of a 12 oz package Steps: 1. Warm oil in a pot over medium heat. Add onion and salt, and stir for 2 minutes. 2. Add the curry paste, ginger and lime zest. Cook while stirring for a minute. 3. Add vegetable stock, stir and bring to a boil. Immediately reduce to low heat. Add bell pepper and coconut milk. Simmer for 2 minutes, stirring occasionally. 4. Add roasted eggplant, tofu, drained bamboo shoots and peas. You can add other veggies such as broccoli if you want! 5. Increase heat to medium and cook for 6 minutes - do not let it boil! Stir occasionally. 6. Add basil and lime juice, and cook for a minute. Then serve over jasmine rice, and enjoy! . Follow @well.ne33 for more... A Juicing Momma still has to cook for the family! Many people have asked me how I manage to cook while juicing for an extended amount of time. I have found the Instant Pot to be a big help, especially while I’m on this Juice Feast. Here, I have made a quick and easy, yet yummy Plant Based Chili Mac for the kids. They all loved it! Dry Lentils 1 can Kidney Beans 3 cans vegetarian chili beans 1 package elbow pasta 2 boxes Vegetable Broth Chili powder Garlic powder Onion powder Celery seed Salt Pepper Tobasco Sauce Stir together. Set on Pressure Cooker setting for 25 minutes and enjoy!😋 Note: Diced Tomatoes would be a great addition. I didn’t have any here.🤷🏼‍♀️ Day 79 of my 100 Day Juice Feast! Bringing it back for my lunch between classes today, using my favorite @califiafarms almond milk for ultimate creaminess of course. Recipe is below and always on the blog! • Creamy Vegan Avocado Pasta Sauce (serves 2) 🥑🍶: - 1 whole avocado, mashed well - 2-3 tbsp (depending how creamy you want) @califiafarms unsweetened almond milk - 2 tsp olive oil - 1 tsp dried basil - 1 tsp dried oregano - 1/2 tsp garlic salt/powder - lots of black pepper Combine all ingredients in a small mixing bowl and mash until creamy and free of chunks. Muffins made from a base of oats + dates. Vegan, gluten-free, and oil-free. Original recipe from @maddielymburner I doubled the recipe. 2 cups oat flour 2 tsp baking powder 10 medjool dates 1 1/4 cup plant milk 1 tsp vanilla 1/2 cup apple sauce pinch of pink Himalayan salt or sea salt For blueberry muffins: 1 cup blueberries lemon zest lemon juice or lemon extract splash of orange juice (optional) For double chocolate chip muffins: 1 cup dairy-free chocolate chips (enjoy life brand from Walmart and everywhere) 1/4 cup cocoa powder + a little extra Dash of cinnamon Blend dates with plant milk and vanilla and other extracts. Combine with dry ingredients. Add apple sauce. Bake at 350 F for 30 minutes. You eat high calorie foods at work. You over do it on the weekends and gain the weight. You’re not preparing so you’re eating what ever you want. THE REAL REASON you are gaining fat is not because of these choices. It’s because you’re having too many calories. . . Let me say that again… The food and beer is not making you fat. It is the fact that those foods are making you go over your calories. . . So let’s go back to the tracking calories part. Wouldn’t you want to be able to look at something and say “Yup, I can afford to eat that!”? . . If you want to get better with your finances, you need to know what your spending and what you’re earning, right?
