Tried this recipe while meal prepping and shared in my bootcamp. Thought I would share with everyone also. . . They are good with 1 tsp Almond Butter for a snack or breakfast . Carrot Zucchini Muffins 1 1/2 Cup Shredded Zucchini 1 1/2 Cup Shredded Carrots 2 tsp Vanilla 1 tsp Nutmeg I tsp Cinnamon 1 tsp Ground Ginger 1 tsp Baking Powder 1 tsp Baking Soda 3/4 Cup unsalted melted butter 2 Eggs 2 Cups Whole Wheat Flour 1 Cup Unsweetened Almond Milk 2 tsp Unsalted Peanuts 1/4 Cup Dry Cranberry 1/4 Cup Raisins 2 tbsp Honey 2 tbsp Maple Syrup . . Mix dry ingredients and Wet Ingredients separate . Then combine and Bake for 20-30 mins at 350 degrees

With training injuries fully healed (finally!), I鈥檓 easing back into exercise today with a class fave - Les Mills鈥 BODYCOMBAT (major props here to instructors everywhere who incorporate modifications into their classes! I鈥檓 there to become stronger, not to impress or compete with those around me). Much as I鈥檝e missed the gym, being sidelined from exercise has been empowering in its own way. Two years ago I would鈥檝e said 鈥淪crew it鈥, eaten like every single day was vacation and completely sabotaged all prior progress. But thanks to a lifestyle truly changed, with much help from keto friendly recipes and my measuring cups, I鈥檝e held steady. Taco salads made from leftovers...so good! Practicing portion control also, my portion sizes have been WAYY out of control lately! Tracked as 7fsp, lettuce and tomato are free! I havent had thousand island dressing in ages and those who know me know that I HATE lowfat or fat free anything...I use full fat, but way less. I believe in real foods having real taste! This is where portion control comes in! In order to eat this way its a MUST to stay within my points. I measured 1 Tbs dressing and it was perfect! Just enough to flavor the salad. I remember what Sunday鈥檚 used to look like for me. 鉅 I鈥檇 wake up feeling extremely guilty for the food I had on Friday and Saturday. I鈥檇 spend the morning beating myself up, obsessing over what I should eat the next week to make up for the bingeing I did over the weekend, and I鈥檇 adjust my calorie tracking app to show I was allowed less calories the next week. I鈥檇 also try on all my pants to see if they still fit. 鉅 Not a great way to spend a Sunday. 鉅 These days Sunday鈥檚 look a lot different. I get up and get some tea, meditate, possibly do some yoga or go for a hike. At some point during the day I usually do some beauty #selfcare and do some reading. 鉅 Every Sunday is a little different but the one thing that is constant is I don鈥檛 waste my time worrying about what I had to eat over the weekend. 鉅 In another life my weekday breakfast was nothing more than a single-serving yogurt cup. I spent years of my life focusing on just making it through the hunger until my next planned super low-calorie meal. 鉅 You deserve more than that.
